Cooking Rajma & Chole

Overnight soak chesaka.. nenu koncham salt vesii pressure cook chestha.. (2 is good, 3 is like maxx.. ) ... anthakanta ekuva mataram cheyakandi.

I make the gravy seperate.. and add the cooked chole/ rajma and boil it for a few minutes to get the masala's soaked into rajma/chole. Hope this helps

ya, Rajma enta overnight soak chesi cook chesina gattigane untundi. For getting the perfect tenderness u have to pressurecook it till u get atleast 7 whistles...nenu alane chestanu and it comes very well...idi nenu tv programme lo vinna tip :)

Rajma overnight soak chesaka(min 10 hrs)....oka chinna cloth lo whole masalas(cloves,dalchini,elaichi) oka mutalo katti andulo vesi,allam mukkaluga cut chesi vesi...5 whisltes ayyaka oka 20 mins sim lo unchi off cheyyandi...chaala mettaga udukutundi..remove the cloth befoe u start cooking in a pan for the gravy..........R u using dark coloured rajma BTW.....use light colored.instead.......dark colour ila chesina kuda palukuluga untundi......

Chole.......idi kuda soak chesi...oka mutalo tea pwd or leaves katti.andulo vesi above procedure laaga udikinchandi...u will get a nice colour and gravy kuda ruchiga untundi chole vesaka...

Sunundalu

Nenu ila chesta,

Urad dal, koncham rice dry roast chesta.. Dal koncham reddish ga ayi nice smell vastundi appatidaka.

Avi cool ayyaka mixi lo mari smooth powder la kaakunda grind chesta.

Kavalsinanta powder oka bowl lo ki teesukuni andulo sugar, cardomom powder, melted ghee vesi laddu chestanu.

Capsicum Carrot Pachadi

nenu capsicum and carrot kalipi mukkala pachadi laga chestanu...

Cut 2 capsicum and 2 carrots into pieces lengthwise, take them in a bowl and add 1 lemon juice to it and mix well. leave it for 10 mins...
In the mean time, fry fenugreek seeds 2tsps without oil, and powder it. Add this powder, salt and red chilli powder to the above pieces and mix well...Finally u can give tempering with mustard and hing orelse if u can avoid hing. Oka 10 mins set ayyaka u can have it with rice. Oka 3days varaku padavvadu eeven if u dont refregerate.

Stuffed Kakarkaya

- kakarkaya ni slit chesi salt water lo boil cheyali seeds tesesi.
- oka pan lo daniyalu, red chilly , ground nuts dry fry chesi grind cheyali.
- pan lo oil vesi chopped onions vesi light ga fry chesi grind chesina powder vesi kalapali.
- ee above stuffing kakarkaya lo pettali.
- maida pindi lo light ga water vesi paste chesi unchukovali.
- pan lo oil vesi stuffed kakarkaya vesi slit chesina side maida paste light ga veyali..
- baga fry cheste stuffed kakarkaya ready. ee stuffed kakarkaya besan+ biyampindi lo batter lo dip chesi bajjilu laga kuda veskovachu..

Nimmakaya Pappu Charu ~ Pappu Kattu

Nimmakaya Pappu Charu

Ingredients:
Toordal : 1/2 cup, Lemon : 1-2 ( as per ur taste), salt - to taste, green chilles - 2 /3 ( as per taste), Ginger - finely chopped ( a small piece), curry leaves, oil for tadka

Procedure:
1) Boil the toor dal and after it is cooled , add some water and blend it to a smooth paste in a blender.
2) in a vessel add the dal mixture , add some water ( conistency should be thin)
3) And then add finely chopped ginger, green chillies, salt
4) let it boil for 15-20 mins.....
5) add Tadka in it.
6) After turning the stove off, add the lemon juice.

Apple Cake

FRESH APPLE CAKE

1c. cooking oil
2 c. sugar
3 c. flour
2 eggs
1 c. chopped nuts
1 tsp. soda
2 tsp. vanilla flavoring
1/2 tsp. salt
3 c. chopped fresh apples, peeled


Combine cooking oil and sugar. Add well beaten eggs and vanilla. Measure and sift together flour, salt and soda. Add dry ingredients to first mixture. Stir in chopped fresh apples and nuts and combine thoroughly with above ingredients.
Pour into tube or oblong 13"x9" pan and bake in 325 degree oven until done, approximately 65 minutes

I've made an eggless version of the apple cake/bread...here's the recipe
Super moist eggless apple bread

All purpose flour- 3 cups
Light brown sugar- 1 cup
Baking soda- 2 tsp
Baking powder-1 tsp
Cinnamon powder- 1 1/2 tsp
Salt-1/4 tsp
Apple, 1- chopped (lightly floured, so they don't sink to the bottom)
Apple, 2 - Grind to paste
Water-1/4 cup
Vegetable oil-3/4 cup
Vanilla essence- 2 tsp
Vinegar-2 tbsp
Raisins, 1/4 cup, lightly floured

1. Preheat oven to 330F
2. Mix all dry ingredients together.
3. Mix all wet ingredients along with apple and pear paste
4. Add to dry mixture and combine.
5. Add raisins and chopped apples
6. Pour into 2 loaf pans or a cake mould.
7. Sprinkle 1tsp of sugar on top (optional)
7. Bake for 1hr. Check in between, as it depends on the oven
8. Let it cool before you cut.

Bringing mango juice or pulp from India

Contributor: Gayathri Sadhu this my Aunt does this for my SIL... this is what she told me they make thick juice and they freeze it till the day of travel in a ziplock bag and then bring it here, once they come here they again freeze it for a day and then start using it... HTH!!! ya they brought it like that almost 2-3 times and its been good all the time and she was telling my mom to do it when she came... ensure that mangoes are ripe and the juice is thick!!! 2. Couscous Kichidi ~ Upma

I tried this recipe yesterday and every one liked it anduke posting for you all : couscous kichidi or upma (nenu names petadam lo chala bad chala options anipisthunayyi) or u can even call biryani Take a pan ,add oil and popu/talimpu and then add onions,chilis,tomatos,carrot,peas,potato and fry until they are golden brown ,add lsalt according to your taste and then couscous (1 cup) and roast it for a few mins and then add water (1.5 cup) and keep the lid and let it cook for 10mins on medium flame. The couscous will pluff up (almost looks like cracked wheat when cooked) and then mix well and add little cilantro and you can even add lemon juice if u like. This almost tastes like upma(cracked wheat upma or goduma ravva upma) ..enjoy! You can also cook couscous separately in rice cooker or pot on stove with 1:1.5 ratio of couscous and water.
