Atukula Payasam

Itz very similar to semiya payasam..
Fry atukulu with ghee. I use thick poha. Keep it aside and boil milk with few saffron strands. Add poha and let it cook till done. Add sugar (3/4th). Fry cashews and raisin in ghee and add that to the payasam.

poha tho pulihora cheyachu...just like we make tamarind one..yekada poha tesukoni dhantlo tamarind pulp koncham thin to medium consistency lo squeeze chesi poha ki add cheyandi and put talimpu same like pulihora...idhi mrng prepare chesthe evening ki bavuntundhi...

Soya Bean Vada

soya bean vada(meal maker vada)
i tried this dish after watching in maa voori vanta...usually i try most of the receipes in maa voori vanta...this was awesome very tasty..
ingredients
1.soya beans 2 cups (big size,u can try small size also)
2.Atukulu(poha thick half cup)
3.corn flour 2 table spoons
4.sanaga pindi 3 table spoons
5.onions 2 small chopped
5. green chilli 5 or 6 chopped
6.ginger garlic paste
salt to taste
procedure:first boil soya beans in water until it becomes soft.then squeeze the water frm the soyaa beans and break into small pieces..keep aside.soak poha for 5 min in water then remove all water frm poha by squeezing with hands..mix poha and soya beans in a bowl.add ,sanaga pindi,corn flour to this mixture,then add ginger garlic paste,chopped onions green chilli,salt..add very little water to this mix.. mix this mixture u get like vada batter...then deep fry in oil in medium heat..very tasty high protien food is ready...u can eat with tomato ketchup

cilantro, onions
carrot turumu

method: biyyam minapappu mentulu oka 6 hrs nanapettali, separate ga vere bowl lo perugulo atukulu nanapettali oka 1 hr...ippudu veetini annintini mixi chesi, salt, vanta soda mix chesukovali..

ippudu penam meeda dosa la vesi carrot turumu, onions, cilantro, vesi oil add chesi dosa kalchukovali

Atukula Laddu

bellam turumu 1cup
dry fruits
milk--1/4 cup
sonti podi - 1tbs
ilachi podi - 1 tbs
ghee - 1/4 cup

method:
munduga dry fruits ni ghee lo veyinchi pakkana pettukovali , ippudu pan lo koddiga ghee vesukuni atukula podi vesukuni light ga fry chesukovali manchi smell feel ayyevaraku. Ippudu oka bowl lo atukula podi, ilachi podi, sonti podi , dry fruits, ghee, bellam turumu vesi baaga mix chesukovali.. koddiga milk add chesi laddu katte consistency vachhe varaku choosukuni laddu la kattukovali...

Spicy Poha

poha kuda water lo kadigesi drain chesi oka vessel lo vesi oil & salt vesi mix chesi 5mins vunchali.
next garlic (danchina garlic ayithe baguntundi) and chilli powder vesi mix cheyali.. anthe..
idhi andariki nachadu.. but parledu not bad..

Set Dosa

Set Dosa
1 cup -Pesarapappu
1 cup- minappappu
1cup- kandipappu
1cup- pachi senaga pappu
1 cup- atukulu
11/2 cup - biyyam
konchem vanta soda
salt
Konchem menthulu

Pappulu anni oka 2 hrs nanapettali.atukulu 30 min chalu. Biyyam kuda 2-3 hrs nanali.

Anni kalipi batter chesaka salt and vanta soda kalapali.

2 hrs agaka dosa vesthe chala baguntundi. deenimeeda carrot thurumu and onion vesthe inka baguntundi with coconut chutney....

atukula pulihora/poha pulihora

Beaten rice (hard variety) / Atukula / Poha (Jada) – 2 cups
Tamarind – small lime size ball
Salt – 1 ½ tsp
Turmeric powder – 1 pinch
Jaggery – 1 tsp
Chilli powder – 1 tsp
Cooking oil – 2 tbsps
Cumin seeds - 1/2 tsp
Mustard seeds – 1/2 tsp
Spilt Black gram dal /urad dal – 1 tsp
Bengal gram dal /chana dal – 1 tsp
Ground nuts - 2 tbsps
Dry Red chillies – 2
Hing a pinch
Curry leaves – a few

1. Wash the Beaten rice /Poha/ Atakulu 2 times and drain out the excess water.
2. Soak tamarind in enough warm water and extract the pulp to make 1.5 cups.
3. Add salt,turmeric, red chilli powder and powdered jaggery to tamarind juice.
4. Soak washed beaten rice in the prepared tamarind juice mixture for 15 minutes or until it absorbs all the liquid and the flakes become soft, fluffy and separate.
5. Heat oil in a pan, add mustard seeds and cumin seeds , when the mustard seeds splutter, add urad dhal ,chana dal and chopped green chillies fry for 1 minute.
6. Then add groundnuts when they fry add red chillies and curry leaves and hing.
7. Then Add the soaked beaten rice / atukulu, and well blend with the seasonings.
8. Cover and cook for 8 minutes on low heat.

1)first atukulu 1tsp oil lo baga veyinchali... veyinchi pakkana pettukovali
2)popu lo jeera/avalu/peanuts/oil/salt/putnalu/chilli powder/red chillies/pasupu/curry leaves anni vesi avi vegaka atukulu kalapali..and anni baga kalipaka dinchesi store chesukovali......

salt popu lo veste baga kalisipotundi......

Instant Rice Flour Dosa

Recipe:

nenu regular gaa instant dosa ante urad daal and rice flour tho chesthanu.chaala baaga dosalu vathai.
only thing u have to add is while soaking daal just add a hand full of poha(atukulu).
add 21/2 cups of rice flour to 1 cup of urad daal.
idi aithe nuvvu eve daal with atukule naana petti,just before u sleep ante 3to 4 hrs lateradd rice flour and grind.
ferment it till next day morning.i tell u dosas will be really yummy.infact tonight we had same dosas for dinner.

Atukula Dosa

Atukula Dosa ki ratio nenu ila postanu

rice - 3 cups
Poha - 11/2-2 cups
Buttermilk - 4/5 cups
salt

u can use sour curd also....

wash rice n poha nicely n soak in buttermilk/curd for 5hrsto 6hrs..

Kothimiru Poha

Ingredients:

atkullu
cinlantro
onion
mirchi
avalu
jeera
lemon juice

Method:
first grind cilantro n mirchi , take pan add oil,add avalu n jeera ,
then add onion fry for some time then add paste,
then add poha (that have been soked and removed)
off the stove add lemon juice

Atukula Upma

Preparation:

1. First talimpu : in this pallipu ,channa dal, ginger garlic past, jeera, karivepaku,kotimira,and finely chopped onion(1/2 big onion)
2. fry all these till onions get golden colour
3. now add little turmeric and salt according to ur tast...
4. now add atukulu and sprinkle some water on those...
5.mix all well and fry for 3-5mins and off the stove...
6. add lemon and serve it hot.....

Atukula Upma / Poha

This is same as normal upma except that:
1) Atukulu first kadigite, mostly anta water absorb chesukuntaye.
2) Normal upma ki water vesthamu kada deniki akkarledu.

Procedure:
1) Fry Talimpu
2) Fry vegetables, onions, etc.
3) Vegetables ki kavalisina uppu veyyali
4) anni fry ayyaka, Atukulu veyyali.
5) Taravata Atukulaki kavalisina uppu veyyali

Note:
General ga upma lo uppu kanna Atukula upma ki takkuva uppu padutundi.
tine mundu nimmakaaya pindukunte......Aha Naa Raja
