Dondakaya Pachadi

Ingredients

Donkaya - 1/4th lb

Peanuts - half cup

Green chilies – 6-10 (depending on spice level)

Tamarind – Small lemon ball size

All tempering ingredients( Minapappu, Senaga pappu, avalu, jeera & curry leaves)

Procedure

1st pan lo palli fry chesukovali

Taruavta dondakaya pieces ga cut chesukuni pan lo koncham oil vesukuni fry chesukovali along with green chillies

Blender lo 1st palli grind chesukuni taruavat dondakaya pieces+ green chili pieces+tamarind+jeera+salt anni vesi grind cheyali

Last lo talimpu vesukuni pachadi baaga mix cheyali

1 cup urad dal:2 cups uppudu biyyam:1 cup normal rice veetini 6-7hrs soak chesi grind chesi oka 5-6hrs bayata vunchesi tharvaatha fridgelo store chesthaanu..

So ee batterki raagi flour kalipi idly chesthe chaalaa softgaa vasthaayi...

Netlo nenu konni recipeslo choosaanu, nuvvu cheppinattu 1 cup urad dal ki 2/3 cups raagi flour kalapadam...alaa try chesthe naaku softgaa raaledu..stickygaa vachaayi...

Ika one cup urad dal soak chesi grind chesthe thickgaa gaarela kosam chesinattu chesthe 1.5-2 cups batter vasthundi naakayithe..rotlo rubbuthaanu

Sagubiyyam Curd Dosa

sagubiyyam - 1/2 cup soak in 1 cup curd - 4 hrs soak cheyali
rice- 1 cup soak in 1 cup curd- 4 hrs soak cheyali

- grind all together into smooth paste with jeera powder,ginger+green chilly
- allow it sit outside for 4-6 hrs..then add salt..
- make dosa with this batter..

- heat pan add some oil(accordingly to coat cauliflower florets) .let mustard seeds splutter, add dry red mirchi fry it. garlic light ga crush chesi veyali.
- caulifower wash chesi dry cheyali florets.then coat them with tadka(made from above step) add salt,red karam. finally add lemon juice. koncham oil ekkuva use cheyali just like we use for avakay.
- keep it in fridge. allow it to sit for atleast 5-6 hrs before u serve..

Baked Asparagus ~ Roasted Asparagus

Preheat the oven to 400 degrees F.


Break off the tough ends of the asparagus and, if they're thick, peel them. Place the asparagus on a sheet pan, drizzle with olive oil, then toss to coat the asparagus completely. Spread the asparagus in a single layer and sprinkle liberally with salt and pepper. Roast the asparagus for 15 to 20 minutes, until tender, but still crisp.

I do the same thing as above on stove top generally asparagus ki ekkuva sepu cooking avasaram ledhu so, microwave lo boil chesi frying pan lo nuvvu cheppinate chesta...above koncham different unnayi kadha felt like trying them once..

hey one more thing if u get Zaatar spice u can use that for granish it goes well with it..

Asparagus Chutney

I make chutney with asparagus... it tastes similar to beerakai pachadi...

1. take little oil in a pan, fry channa dhal, redchillies, 1 pearl onion, dhaniya seeds, cumin till the dhal is golden brown

2. Cut the asparagus till u reach the hard part...and discard the hard part(U will know it as u cut it coz it will be difficult for u to cut it)

3.Fry the cut asparagus in little oil in the pan till it turns brown

4.Grind evrything with little bit of tamarind, salt

5. Put some oil in pan, put some mustard seeds let it splutter, add curry leaves and pour it on chutney..

Goes well with Idli, dosa, Chapathi, rice....

Cabbage Chana Dal

This is how mom prepares the curry

Soak required amount of channa dal an hour prior to the preparation.

Chop cabbage and tomatoes and keep them separately

in a pan or pressure cooker (your preference) add do seasoning and add cabbage, channa dal, ginger garlic paste and let this cook till cabbage is done or if its pressure cooker leave it until one whistle.

then add chopped tomatoes, red chilli powder, salt, a little bit of salt. mix it well and let the chilli and salt taste get incorporate with the rest.

you can also add dessicated coconut at the end.

Rose Milk

India lo unnappudu pinni rose petals and rose water tho chesedi...I use rose syrup here adi Indian store lo dorukutundi...
I make 2 versions of rose milk
Pinni's recipe :

1 cup milk(boiled and chilled)
10-12 blanched almonds (she doesnot use almonds but okasari Satish chepparu it'll be better with almonds ani)
1/2 cup rose petals
1 tbsp rose water
honey or sugar
ice

grind almonds,rose petals, rose water, honey or sugar, milk and blend till smooth. Add 2 cubes of ice and blend till ice gets coarse.
Serve chilled.

Recipe 2

blend 1 scoop of vanilla icecream with a milk ,rose syrup, sugar or honey and serve chilled.

I added 1 handfull of saggubiyyam/sabudana
1/2 cup rice
Soak them in different bowls at the time of saoking minappappu

Milk Mysore Pak Recipe

nenu search chestunna recipe kosam... found one..not sure whether it tastes as milk mysore pak.I have to try this.

Sweetened Condensed Milk - 400 gms

Freh besan - 400 gms

Ghee - 1 ¼ cup

Grated nuts - to garnish (optional)

Kee the condensed mlk tin, open & ready.

Heat ghee in a kadai.

Roast besan on a low fire, stirring continuously.

Continue till the colur becomes light brown & a nice aroma emanates.

Remove from fire & quickly add the condensed milk.

Stir very well & quickly transfer to a greased plate.

It sets very fast.

Sprinkle chopped nuts – this is optional.

Mark & cut into squares.

I don't make pasta that much at home. So can't recommend you on the brand of the sauce.

Vegetables antee, you can use any vegetable you like. I like bell peppers and lots of onion in my pasta but you can also add asparagus, broccoli, spinach.

Herbs antee, basil baaguntadee and parsley also. Italians ee rendu herbs baaga use chestaaru. To Indianize it us can add cilantro/kothmir and use can green chilies too, to spice it up. Red chili flakes and back pepper powder use chestaaru, spice kosam. Use liberal amount garlic too.

Today I made pasta for lunch. I was not in a mood to eat rice so simple pasta cheskunna, without pasta sauce. Sauce badalu tomatoes vesa and used little bok choy as I was discarding it. Sharing it here, in case you are interested

Ingredients:
1/2 Rotini Pasta dry/uncooked
1-2 tbsp oil (nenu measure cheyaleedu.. appox.)
1/2 medium onion diced
2 tbsp. crushed garlic
2 green chilies (vinnavi kakunda, medium size vi dorukutai kada indian store loo, avi)
1 large vine ripe tomato chopped
1/4 cup bok choy

Method:
-- Boil pasta as per the instructions on the box with little salt, until al dente. Drain the pasta and keep it aside.
-- In a pan heat oil and saute onions are translucent.
-- Add garlic and saute for a few seconds.
-- Add tomato, green chilies, salt and mix well. Cover and cook until the tomatoes are soft and mushy.
-- Add bok choy and cook for a minute or so.
-- Add pasta and mix well until the sauce coats the pasta.
-- Add about 3/4 cup (appox.) water and cook on medium - medium high flame until most of the water/sauce evaporates.
-- Adjust the seasoning and serve hot. You can pepper if it not very spice.

You can add bell peppers or any veggies you like.

I forgot to mention, deentlo sauce ekova vundau... and I don;t like too much tomato sauce anyway.. Kaavalntee, you can add more tomato. I used Vine ripe tomato but you can use any kind. Or use canned tomatoes or tomato sauce.

Also, if you like cheese, you can sprinkle some cheese on the top.

Spicy Marinara Pasta

Store bought marinara use chesthanu....pasta any variety of ur choice,packet instruction batti cook chesukondi....n dont throw away the water in which pasta is cooked u can use it later if wanted in ur sauce....
Pan lo oil vesi..crushed or finely chopped garlic vesi fry ayyaka appudu add diced onion pieces,mushrooms avi baaga sautee ayyaka then add the marinara sauce,koncham Parmesan cheese(optional) ,adjust salt and pepper to ur taste,nenu koncham karam kuda add chestha to make it spicy to my taste.
koncham pasta boil chesina water vesi oka boil vacchaka appudu spinach vesi mix chesi final ga pasta vesi even ga coat ayye laaga toss chesi hot ga serve cheyadame....serving time lo add lil cheese if u want....

Veggies kuda of ur choice vesukovachu....

Spinach/Basil tho pesto pasta kuda chestharu...dats my fav...kavalante aa recipe link istha....

inka paina cheppina marinara pasta laane Alfredo sauce tho kuda chesthanu...kaani andulo karam veyanu jst pepper pwd add chestha anthe....

Mong dal flour recipes

is it yellow moong dal flour or green gram flour?? rendu different green gram flour ayite u hav to mix eual ratios of rice flour for uppindi, dosa or billalu

for uppindi:
first tampering vesukuni [ mustard,jeera,uraddal, ginger grated/finely chopped, curry leaves, g.chillies[ acc to taste], dry red chilles ivi fry ayyaka, flour : water uppindi ki 1:1 if u want dry one or else u can add 1/4 - 1/2 more water to the tampering add salt, let it boil nicely so that all spices will get incorporated with water. It takes about 5-10mins [here u can check for seasoning by tasting the water, trick is it should be wee salty so that it will be perfect later]
then simmering the flame add flour to the boiling water without stirring,[ so, don't pour the flour at one place]
Now allow the flour to cook in the water for about 10 more mins, later u hav to mix it quickly so that all flour is coated with water[ u hav to be quick at this step u may very little water in this stage to combine everything] now add 1 or 2 spns of oil nd fry for 5 more mins that's it.

for dosa: moong flour: riceflour 1:1 ratio again, water should be added to bring it to ravva dosa batter consistency, salt nd g.chilli paste will go very well for this then u may add jeera as well nd make dosa on hot tavva just like ravva dosa..very yummy with maggai

This is how I do in pressure cooker:
Oil lo talimpu vesukovali(cumin,urad dal,mustard seeds,green chillies,red chillies,hinge,fenugreek seeds,curry leaves),fry ayyaka andulo pearl onions(sambar lo vese chinna onions) vesi koncham fry cheyali and cut chesi okra veyali...add salt to taste,oo 3-5mins fry chesi aa taruvatha tamarind pulp,turmeric and taste ki tagga sugar/bellam vesi 2 whistles vacche dhaaka cook chesukovali...pressure poyaka lid teesi malli stove on chesi oo marugu ravali...indulo koncham bhiyam pindi lo water vesi vundalu lekunda kalipi boil avuthuna pulusu lo vesi kaasepu marichini appeyali...

Optional:Sometimes I add garlic and tomato to this...

- kandiapappu ni coarse paste la grind cheyali adding green,red chilly and jeera. add salt while grinding
- vere pan lo ekkuva oil vesi talimpu/tadka vesi onions fry ayyaka grinded coarse paste veyali.fry cheyali until done..

Mushroom Curry Recipes

Dry Chilies (opt.) You can also use green chilies if you want.. or just skip it all together

Tomato chopped (opt)
Cilantro

Heat oil and add jeera, chilies (if using), curry leaves. When the seeds splutter add onion and saute until translucent. Then add ginger garlic and fry for a minute until the raw smell is gone. Add all the powders, salt and mix well. Add tomatoes (if using) and mushrooms. Mix well and cook covered until cooked. If u want gravy, you can turn of the heat. If you want a dry curry, remove the cover and cook until the water evaporates . Garnich with cilantro. Rice and rotis tho baaguntadhi. This is similar to bell pepper mushroom curry in the link sI gave above, without bell peppers. Mushrooms koncham pedha pieces cut cheyali bcz, cook ainaka they shrink a lot.

Pulihora Powder/paste

ardam ayyinda inka detailed ga cheppana?

This is the procedure i follow
first powder chesukondi : coriander seeds - 1tbsp,methi seeds - 1/4tsp, sesame seeds - 1.5tsps, dry red chillies - 4/5 (optional)
roast in a drop of oil and make a fine powder

Tamarind Part : extract juice from the tamarind and keep it aside
Rice : Cook rice and keep it aside... once it is done.. add 2-3 tbps oil, turmeric and half of the pulihora powder,few curry leaves ,salt (for the rice) and mix well and keep aside... adding oil to hot rice helps in keeping the grains separate ...

Meanwhile iin a sauce pan, take oil(koncham ekkuve vesukondi).... do the popu ( pulihora ki popu ekkuva vestene bavuntundi)-chana,urad,mustard, cimin,inguva, curry leaves, red chillies, slit green chillies (long)... baga fry ayyaka add the extracted tamarind juice.... add lil turmeric,salt (deeni varaku), 1/2 spoon chilli powder.... the ground powder,curry leaves and 1/2 tsp jaggery.... ivvi anni baga udiki manchi smell vastundi
tamarind gujju baga daggaraki udiki when the oil is oozing out.... turn off the stove.. give it few mins to settle down and mix this to the rice mixture

goppalu cheppukotam kadu kaani naa pulihora eppudoo fail avvaledu.... so i am sure u will like it

u can also add roasted cashews and peanuts

Dum Aloo

try this from vah chef... nenu ilaney chesthanu but i add onions and also i deep fry boiled potatoes... if you want you can add chopped tomatoes and also cashew nut powder for more gravy... Here is the recipe link.

nenu dum aloo vah chef cheppinattu chestha kaani ninna konni variations chesa... i am not adding oil and whole masalas these days...

ninna chesindhi ila:

Chinna potatoes wash them , boil, peel them and poke them with fork and keep them aside.
Red onion ni thin slices laaga cut chesukovali
Turmeric, garam masala, amchur powder, red chilli powder, salt ni dilute chesi pettukovali
Cashew powder
Thick yogurt one cup

First let your non-stick pan warm and then add thinly sliced onions (Note that I did not add oil). Let onions cook on low flame, add lil salt so that they will cook lil fast and leave some water
When onions are cooked add spices paste to this and let it boil.
Then add yogurt and add water if required
Once this whole thing gets to boiling add boiled potatoes. Let these cook for a while and then add Cashew powder at the end (around 5 spoons). Let the whole thing boil and you see oil layer once done, this oil is released from Cashew powder after it is cooked...
finally garish with coriander... anthey, simple

Thotakura Pulusu & Fry

Thotakura - 1 bunch
pesarapappu oka pidikedu
tamarind -nimmakaya antha
bellam - nimmakaya antha
green chillies 3-4 ( depending on your taste)
Salt

for pulusu podi :

senagapappu 1 table spoon
dhaniyalu 1 teaspoon
red dried chillies- 3-4 depending on your spice level
menthulu very little

thotakura and pesarapappu with slit green chillies oka 15-18 mins boil chesukovali ( or u can cook in cooker )
to this add tamarind paste ( dissolved in water ) salt and keep boiling on low flame and add a pinch of hing.
in a small pan add one spoon oil and roast the dried red chillies and senagapappu, thne add dhaniyalu and menthulu once thye splatter and senagapappu is dark brown remove cool and make a powder /paste ( using water ) .This can be used for any other pulusu also .
add the pulusu podi to the pulusu and then add bellam allow to boil once and simmer .
Season with karvepaku , mustard and jeera seeds :)

Garlic

Channa dal
Urad Dhal
Coconut shredded

1) Add some oil in pan, mustard seeds , let it splutter, add, jeera, Channa dal, Urad Dhal n Red Chillies and fry for about a min
2)Add Onions in the pan and fry for about a minute and the thotakoora chopped and put oin the lid and let it cook for sometime until it gets soft and the water is drained
3)Switch off the gas and add coconut n fry for about 30 seconds and last add garlic and saute for 30 seconds.

I ve tried it and it really tastes good...

Tomato & Potato Lemon Pulihora

This is just like any other normal pulihara but we add tomato and potato to it anthe..

Tomato konchem pullaga unna pachidhii vaadithe better

Tomato-1 Medium size cut into small cubes
Potato 1 medium size cut into small cubes
Green Chillies- as needed for ur spice
Dry Red Chillies-4
Chana Dal- 1 tbsp
Urad dal-1tbsp
Mustard seeds-1 tbsp
Jeera(optional)-1/4tbsp
Peanuts-as required
Cahews-(optional) as required
Fresh Lemon's- As needed
Curry leaves - as needed
Turmeric-as needed
shredded Coconut(optional) 4-5 tbsps
Oil-as required
Rice-2 cups

first fry the potato by sprinkling some salt untill it is done and keep it a side.. then in the same pan add more oil then add rest of all the above ingredients except the coconut ..do the tempering same as u do for normal pulihora tempering.. Once it is done..switch off the stove add the potato and shredded coconut also into the pan and mix it well.

then mix it in rice with salt and squeezed lemon and serve it :P

Usually i fry the potato until it is 3/4 done and later will add the potato again during the tempering..but meeku confusion avakunda undalani ala cheppanu paina..
i some times add shredded coconut and some times i dont as my hubby does'nt like it.

Pesarpappu tho okk gujarati traditional dal recipee..( Recipee nenu Discovery channel lo planet food prog lo choosa)

soak pesar pappu in hot water for a while.

Take pan, put some oil, bay leaf and green chillies.

Add soaked dal into it... No need to add water. add salt as per taste.

This tastes grt with any parantha, roti or puri.
Let the dal cook for a while.. since it is already soaked it will get cooked very quickly.
