Butter Chicken

then butter lo chicken pieces vesi koncham fry ayyaka e puree veseyandi....last lo cream and little butter add cheyandi....done

Indian Style Spring Rolls

indian Style Spring rolls
I had made a small changeto the stuffing in spring rolls and my frineds and husband loved it .

Ingredients:
Cabbage :Approx 200grams
carrot one grated
onion finely cut into long slices
Capsicum ( optional)
Garlic 3 pods chopped finely
ginger finely chopped half spoon
1 small spoon tamarind juice or pulp
1 spoon sesame seeds
1 spoon bhel poori sweet tamarind chutney ( i prepared this at home with tamarind and jaggery ) used the same

Procedure :

Take a stir fry pan add one small spoon oil and then add the ginger and garlic let them brown a little and then add the veggies cabbage , carrot , onions and capsicum stir fry for one minute then add mixed sauce ( tamarind pulp sweet chutney , sesame seeds and salt )mix all the veggies and sauce well for one - two minutes and turn off the stove . This can be stuffed into the puff sheets for spring rolls and deep fried :D

Sweet corn salad

Ingredients
1 cup sweet corn
3 tomatoes, diced
1 medium onion, diced
1/4 cup chopped fresh coriander
2 tb spoons olive oil
2 tb spoons white vinegar(optional)
salt and pepper to taste
Directions
1.Take a large bowl of lightly salted water n boil it . Cook corn in boiling water for 7 to 10 minutes, or until desired tenderness. Drain, cool, and cut kernels off the cob with a sharp knife.
2.In a large bowl, toss together the corn, tomatoes, onion, coriander leaves, oil, vinegar, salt and pepper. Chill until serving.

Sweet corn Salad or Salsa!!
Ingredients:
1 cup Fresh/ frozen sweet corn
1 cup fresh POM pomegranates
1/2 cup chopped red onions
1/3 cup diced apples
1/3 cup diced mangoes
1/3 cup diced tomatoes
1tbsp olive oil
2-3 tbsp lemon juice
1 chopped Jalapeno pepper
2 tbsp fresh chopped cilantro
salt and pepper as per requirement

Preparation:
Mix up the Sweet corn, pomegranates, mangoes, apples, onions, tomatoes and fresh cilantro in a bowl. Season it with lemon juice, olive oil, Jalapeno pepper, salt and crushed peppercorns. Toss them all together gently and chill in the refrigerator for sometime before serving. Serve with whole grain tortilla chips.

COCONUT CHUTNEY

COCONUT CHUTNEY RECIPIES

Tomato- Kothimeera
Ingredients:
Coconut 2 Tomatoes (Cut into chunks)
few Springs of Coriander
1/2 cup Coconut pieces (Pachi kobbari or u can use the grated coconut from the stores)
1 tsp minapappu/ urad dal
1tsp jeera
1/2 tsp aavalu / mustard seeds
4 to 5 green chillies according to ur spice level
1/2 tbsp oil for tampering
Salt to taste

Method:

Do the tadka with the oil,urad dal,jeera and mustard.Once they start spluttering , put the green chillies either cut or whole( with stems removed).Once the chillies start turning white add the tomatoes chunks.Add little salt.Check them until the raw smell goes off.Add the coriander sprigs at this instant and keep them for 5 sec and turn off the heat.Add coconut at this point. (IF using coconut pieces , fry them a bit before adding tomatoes, I use grated coconut, so I add it directly during grinding )Grind them all. Adjust salt. **********************************************

Naa version chepputunna .Hope you like it
Ingredients:
Channa Dal - 1/2 cup
Red Chillies -10 or(according to ur taste )
Tamarid --like plums size loo ..soak cheyandi ...with little water
Jaggery -2 inch piece
Ginger - Almost 1/4 Cup o
il- 1 tsp Salt

Method :Oil loo fry Ginger ..raw smell poyevarakku Add channa Dal and Red cillies until they turn brownGrind the above mixture with jaggery. salt and tamarid juice
