IP veg biryani

3 cups rice ki 2 cups coconut milk 2 cups water 
Basmati rice ni oka 15 minutes soak chesa

Nenu IP lo chesanu regular pressure cooker kuda same measurements
Pan lo oil ghee vesi shahjeera, lavanga,chekka, ilachi,biryani aku, vesi fry ayyaka onions green chillies- 9 vesi fry ayyaka gg paste then potatoes carrots beans cauliflower peas soaked soya chunks vesi fry ayyaka cancel the saute button
Soaked rice pudina kottimeera salt- 3 tsp vesi antha mix chesi manual HP 6 minutes then NPR 6 minutes chesthey ala grainy ga adugu antukokunda vastundi

cauliflower chinna pieces cut chesukoni wash and drain them... Nenu koncham sepu colander loo unchi night counter meeda tissues vesi vaati meeda spread chesi vadhilesaa so that they wont have moisture in them by morning ani...

Oil, lemon juice(cauliflower loo pulupu undadhu kadaa lemon baane paduthundhi), uppu, kaaram, koncham menthi pindi vesi kalupukoovaalee... Nenu rough gaa vesaanu so I don't have exact measurements... Oka couple of hours vadhilesthee anni mix ayyi it will be ready to eat...


Padma Ks : Ma intlo chestaru.. oil lo avalu, inguva, curry leaves vesi fry cheyali.. poornima chepinatlu cauliflower ki kalapali with salt, karam,ava pindi, menthi pindi.. ivvi anni manchiga kalisaka add lemon juice.. soak for 1 hr atleast.. u can repeat same recipe for carrot, mango dondakaya mixed veggie pickle too

Geetha Madhuri : nenu menthulu koncham dry roast chesi powder chestanu. Alane aavapindi kuda kaluputa. Cauliflower pieces wash and drain chesi 1st lemon juice kalipi oka 10-20mins ayyaka karam, aavapindi, salt vesi oil mix chesi, mudduga oil lo aavalu, inguva vesi kalipi oka 30mins ooranivvali. Tastes yummmm ... nenu same process with french beans, carrot and white raddish chestanu baguntundi

Thai Red Curry

Thai red curry ki main paste ee kada anni ready unte simple.
-Take a pan add oil,then add in the paste fry for a while until it releases nice aroma
-then add coconut cream[top layer of coconut milk u will c if u carefully open the tin ] this method adds little more flavour to the curry.
-let it fry for few more mins when u c the cream splits nd combines withthe paste now itz time to add ur vegetables.
Note:
[ I like my veggies to be cooked in the same pan so that it enhances the taste kani heavy anipisthadi thineppudu or for time saving u may preboil ur veggies nd can be added in tihs with the stock]

-if itz raw veggies u may need to fry a little while for2-3 mins if boiled veggie r added couple of mins is fine then stir in rest of coconut milk would love to add tiny bit of sugar in this stage,. let it boil nd simmer for the consistency u need.thats it heavenly thai curry is ready.garnish with coriander
note:for adjusting spice u may add chilles when the curry is boiling or if u think the paste is mild add to the oil in the first stage.

I tried showmethecurry.com red curry. Manam restaurant lo aithe veggies crunchy ga vuntayi kadha mana chethitho cook cheseppudu ala crunchy ga aapeyyalememo 2 times gravy taste yummy but veggies matram crunchy ga raledhu. Just yesterday edho green curry paste vunte try chesa. Innovative thoughts ekkuva ayyi daani medha instructions tho curry cook chesi rice noodles tho mix up chesanu. So yummy and motham no complaints tho ginne kaali. store bought lo spicy konchem takkuva vuntundhi kadha i ended adding up green chillies in the last minute. May be red curry ki red chilli paste would do good.

here it goes: first veggies ni stir fry cheyali then add coconut milk let the veggies simmer in the milk for 15 mins or so and last lo add that paste to the veggies and cook another 5 mins.... Serve with hot steamed rice.... BTW instructions kuda vuntayi on the back of the jar

padma chesinatte chesta nenu kuda. But veggies koncham munde cook chesi then I add to the gravy. Coconut milk boil aayaka I add paste, then I add veggies or shrimp or chicken.

Veggie Chettinad

veggies - cauliflower,potato,carrot,beans half cook cheyali
tomato puree
chopped onions

spices
fennel seeds
cinnamon
clove
elachi
red dry chilly


-above spices ni dry fry cheyali..grind them along with fresh coconut into smooth paste adding water.
- oka pan lo oil vesi onions small pieces cut chesi fry cheyali. then tomato puree(just grind tomatoes) add cheyandi..koncham cook ayaka salt+turmeric+grinded paste vesi kalapali

- veggies ni add chesi gravy loki baaga kalipi lid pettali..oka 5 min unchi stove off cheyali
- add curd to gravy while serving.(optional)

Meeru chepina Veggie Chettinad nenu friday try chesanu.. chalaaaa baga vachidnhi, nenu pics kuda tisanu.. upload chesinapudu post chesthanu.

Chala simple ga aipoindhi, almost 30 mins cook time anthe max.. taste aithe restaurant lo taste kanta bagundhi.

Freezing Vegetables

When ever you freeze any raw vegetable, vaatini oka 2 minutes boiling water loo vunchali... then immediately drain the water and run it in cold water. Or ok abowl ice cubes and cold water teesukoni, aa bowl hee par boiled vegetables veyyali.

Two minutes boiling water loo enduku veyadam anti, it will kill teh ripening agents from teh vegetable. Immediately putting it cold water is to stop the cooking of the vegetable.

Raw vegetables as it is freeze chestee, they don't last long.. freezer loo vunna, slow go ripe avutu rot avutai. I saw this tip on a cooking show long time ago. India loo fresh green peas, green chana, anupakaya my mom elaga freeze chstundh.. nene chepa elacheyamni and baagane vuntai...
