Kulfi

condensed milk and evaporated milk toh manchi kulfi cheyochu. But you will also need heavy whipping cream. Here is the easiest way to do the kulfi
1 portion of Heavy whipping cream
1 portion of evaporated milk
1/2 postion of condensed milk( ekkuva sweet kavalantey add some more).
pinch of caramom
grated almonds( optional if you want to make Almond kulfi)
Mix them in a container. Don't have to whisk, just mix well to be consistent and store in the freezer. Eat it when it is ready.

Prep time - 5 mins

eggplant tho nenu 2 types chestanu. 1. Put popu, saute onion, green chillies, tomato and eggplant. Add some masala of ur choice, and salt taste. Cilantro if u like. 2. Make green chillies, cilantro, ginger, salt to paste; wash frozen peas set aside; saute eggplant , add green chilli paste, once it is half done add peas, let it cook until well done. Vepudu Biyyam

here is the recipe for Vepudu Biyyam:
Ingredients:

Rice 1 cup
Nuvvulu 1/2 cup
groundnuts 1/2 cup
putnalu 1/2 cup
cashew 1/2 cup
coconut pieces (dry or fresh, cut into very small pieces) 1/2 cup
salt and chilli powder according to taste

Procedure:

Rice tappa migilina anni ingredients vidi vidiga dry roast chesukovali. Coconut dry di ishtam aite dry coconut, ledante fresh di aina parvaledu, chala chinna pieces cut chesukoni roast cheyali, till it is fried well and turns into golden brown. (Naku personal ga endu kobbari alavatu ledu, so nenu fresh di baaga fry chesi vadatanu)

Now comes the main and tedious process:

Rice ni baaga wash chesi, water posi vidiga stove paina pettali(same like how u do for cooking rice separately). Water baga boil ayi oka pongu ragane chala koncham salt vesi kalipi oka minute avvagane stove off chesi migilina water drain cheseyali. At this stage, rice will be like half boiled rice. Let the water drain completely. Ippudu stove meeda vere pan pettukoni baaga heat ayyaka oka table spoon qty boiled rice vesi andulo water anta poyi avi baga fry ayyelaga veyinchali...it takes about 2-3 mins for each spoon of rice to fry completely. Once the rice is fried, meeku avi koncham malli pelala laga kanipistayi and baaga gala gala vegina sound vastundi kaluputunte...once they start changing colour, you can remove it. repeat the process till all the boiled rice is completed into fried rice

remember: rice fry ayye varaku chala patience kavali and tondaraga avvadaniki ekkuva rice tesukovaddu...vatilo unna tadiki vegadaniki badulu cook ayipotayi.

Once all the rice is done, mix it with all the above ingredients...then salt and chilli powder...ur recipe is ready. Oka sari chesi pettukunte 2-3 months ayina kuda freshness podu, padavvadu...because we are not at all using water or oil...all the ingredients are only fried without oil

Nenu 350 meeda 25-30 mins bake chesintanu. Kinda rack lo pettanu because Paina rack to maa hubby polenta bake chesaru. So I thought since the oven is on, I might try it ani. Prep time kuda 10 mins apttindi and since it is baked, I didn't have to spend time near the stove to cook it. Try cheyandi, meekey telustundi.

Tips for crispy vankaya vepudu

you have to use wide and big pan, mukkalu anni kuda oke layer laaga spread ayye laga unte mudda avadu, cook on high heat until they start turning brown, aa tharavatha medium lo pettukuni roll the brijal pieces over to the other side. important thing, dont cover and cook, dont mix them many times, gently shake the pan and toss the mukkalu. shallow fry ke ala avuthayi not deep frying, dont add salt until they are 80% done. try cheyyi ee sari flop avadu chudu.

Coconut Macaroon

3 cups shredded coconut
1 cup sweetened condensed milk
1/4 teaspoon salt
2 teaspoons vanilla extract
1/2 teaspoon almond extract

Generously grease two baking sheets, or use silicon baking sheets. Combine all of your ingredients and stir until completely blended.
Drop by teaspoonfuls, 1 inch apart, on prepared baking sheets. Gently press down with the back of your spoon to give them a uniform shape.
Bake at 350° for 15 minutes, or until cookies are golden brown. Allow to cool before removing from baking sheet. Makes 30-36 cookies

Dondakaya Majjiga Kura

Tindora ni rounds ga cut chesi koncham salt,1 red chilli,turmeric vesi pressure cook for 2 whistles..
Mean while,heat a spoon of oil when hot add a spn of cumin seeds when splatter add 2-3 spns of shredded coconut fry till it turns golden color,now add a medium tomato and dry red chillies to taste and fry for a min,take this mixture into a plate,let it cool n now blend this mixture into a very smooth paste and put aside.
In a wok,add a spn of oil,then add the boiled sliced tindora(remove the excess water) and fry till they r half way done,add few curry leaves,now add the smooth coconut paste and fry for 2-3 mins,now put the flame in medium heat and add the thick beaten curd,stir well and check for the seasonings,adjust if needed,
let the mixture cook till the desired consistency is reached,The consistency cud be thick-thin depending on ur taste,this goes gud with rice and chapathi/pulka too.U can other veggies also like carrot,potato,peas,panner, and make it as a mixed veg curry.

1.kakarakaya ni sannaga n oka 1 1/2 inch podavuga cut chesukoni deep fr chesi pakkanapettukovali.
2.oka pan lo oil vesi aavalu, zeera vesaka koncham green chilli paste veyyali, next koncham nuvvula podi, dhaniya powder, dry coconut powder, koncham karam and salt vesi oka 1 min fry cheyyali.
3. indaka manam fry chesi pettukunna kakarakaya mukkalu induloki vesi oka 2 min fry chesi stove off cheyyali
4. Koncham challaraka koncham lemon juice add cheyali...anthe it tastes really good....idi podi podigane vasthundi....

Phool Makhani Kheer

this is the procedure which i followed

ingredients:
phool makhana :2 cups
milk : as needed
ghee
cashews and badam: 8 each
raisins: few
sugar
elachi powder

procedure
In a pan add ghee fry raisins. then cashews and almonds and keepaside.
In same pan add makhana and fry for few seconds.
Once makhana cools a bit take fist full makhana aside and grind remaining makhana along with cashew and badam on a pulse mode.
In a sauce pan boil milk.Now add sugar and elachi powder.Let it boil for few seconds and switch off the stove.
Add makhana, powdered makhana and mix well without forming any lumps. powder cheyakunda cheyali ante milk ni half quantity aye daka boil cheyali... but naaku pina method nachidi as we can grind nuts ... rich taste vachidi kheer ki... inka saffron string s kuda veyochu

 pesarapappu seperatega cookerlo udakabettali
 tharuvatha cookerlo only veggies kasantha water chintha pulusu sambar pdr,lil chilli pdr if u want u can add lil chopped green chillies 1/2 spn jaggery or sugar(idi optional) but i like adding very lil jaggery to any sambar..ivanni vesi malli cookerlo udakabaettali.
 cool ayina tharuvatha udakabettukunna pesarappau, n veggies add chesi oka 5mins boil cheyali...
lastlo konchem popu... and veggies anni vesukovachu...
 my must veggies for sambar are potato,beans,carrot,drum stick,radish ivanni each one vesthanu..

Pesarapappu - 1 small cup
Onions - 1
drumstick - 6-7 pieces (frozen)
Green Chillies - 3 (slit in to half)
Turmeric, salt, red chilli powder, tamarind pulp, sugar (depending on the taste)

First, pour sufficient water in pesarapappu and boil in a kadai (open cooking) . after it is boiled .. 3/4th.. put all the others (onions,chillies,drumstick, Turmeric, salt, red chilli powder, tamarind pulp, sugar) and boil it for 15 min atleast. then put coriander leaves and then the seasoning (urad dal, lil methi seeds, jeera, mustard seeds, hing, red chilli and curry leaves)
