Chukka Kura Chicken

oka half an hour chicken tho marinate chesukoni with usual marination, GG paste, turmeric, salt n red chilli pwdr pakkana petti, then in a pan add oil..green chillies n 2 big onions( i add more in this bcos curry final ga deggiraga aipoddi), n then normal ga chicken veskuni vandeyyadame till the chicken is completely done...full fa udikipoyaka chukkakura ni stems remove chesi n cut chesi add cheyyadame..keep lid till water comes out n leaves deggira paddaka, kura kavalsina consistency daka cook chesi teeseyyadame..basic ga normal chicken curry w/o garam masala n addition of chukka kura...i usually dont use tomatoes but fridge lo half padi undi ninnati ninchi ani vesa..tastes grt with rotis bcos its semi gravy..never tried with rice

Chickem Meat Balls

This recipe I wanted to share since long .. This is my OWN recipe .. It's healthy and good for working moms ..

Chicken(400g)
Carrots
Celery
Leaks
Spring onions
1 egg

Mince the meat and the veggies... Don't make the veggies into a paste
Add spices according to it taste and preference
Boil water in a pan with salt cloves bay leaf
Drop balls of meat into the boiling water .. When the balls float, it means they are done
Remove them
I make them in tomato base and creme base .. You can use them in any way
I make big amounts and deep freeze them

Eggs Munakaada Tomato Curry

it more or less similar to mulakkaya tomato curry..egg boil chesukoni, madyalo knife tho put marks n keep aside..now take oil n do normal tempering..then add slit chillies n onion, salt..maggutundaga add drumsticks, avi magginaka, add tomatoes( i add two, usually 1 add chesi tamarind pulp ekkuva veyochu end lo), then turmeric, karam till tomatoes become soft..then add the eggs, add a cup of water..and add tamarind pulp here..keep lid and cook till the gravy becomes a lil thick consistency..garnish with coriander..

nenu ee recipe follow ayya. 10 red chilies vesina koncham karam takuvunde.. So added about 2 -3 tsp. chili powder. It was little on the milder side but baagunde.. Ante mana kura laa ga garam masala ghatu leekunde but it was still good. Oil 8 tbsp vesa. Also, I cooked it little longer than what he mentioned. It took longer to cook the meat. Mutton Kheema

i make it like this: 1/2 kg kheema ki idi take the mince, add salt, red chilli pwdr, turmeric and keep aside..take a cooker..add oil, add 1 onion chopped and..after they turn translucent GG paste, add the kheema..koncham sepu lid petti water ooze ayyedaka unchu..there will be sufficient water for the kheema to cook..close lids and put it for 2-3 whistles..ee lopu vere pan lo oil heat chesukuni, add two cloves and an inch of cinnamon, add 1 onion and green chillies..avi fry ayyaka, add the minced meat mix..then lid petti cook cheyyali, if u want add tomato here..chk for seasonings if required..oil vache daaka cook chesesi add coriander leaves and sprinkle some freshly made garam masala..

For thanks giving whole chicken in gravy chesa and my husband liked the gravy a lot. Whole chicken badalu meru chicken pieces veyachu. This is somewhat similar to dum ka murgh. But in that I also add cashew powder. I am copy pasting the recipe I noted down for myself. You might also find some notes I made for myself. I am little busy today. So just pasting the recipe as it is. As I said you can use cut chicken instead of whole chicken. Also I made dum style. You can cook it the regular way. If you want to do dum style, then cooking time would be 10 minutes on high and 20 minutes on low.

3.245 lbs. Whole Chicken
2 ½ tsp. Chili Powder
1 tbsp. Coriander Powder
2 tbsp. Ginger Garlic Paste
Turmeric
1 ½ tbsp. Salt I think
Garam Masala – 10 clovers, 10 peppercorns, ½ tsp. Cardamom Seeds, ½ tsp. Shah Jeera, ½” Cinnamon
1 large & 1 medium Onion Sliced or approx. 3 cups Sliced Onions
1 ½ tsp. Poppy Seeds
2 – 2 ½ tbsp. Blanced sliced Almonds
½ Lime Juice
1 cup Yogurt
¾ - 1 cup (rice cooker cup) Oil This was too much
4-5 Green Chilies
½ cup chopped Cilantro
1/3 cup chopped Mint

Fry onions in oil until light grown, cool and grind to paste.
Dry roast poppy seeds and almonds, and make a fine powder or a paste using little water. I made a powder.
Mix everything and rub it into chicken and marinate the chicken overnight. Or Make a marinade with chili, garam masala, coriander, salt, turmeric, ginger garlic and rub it to the chicken. Two hours before cooking, mix yogurt, fried onion paste, almond poppy seed powder, lime juice and rub it to the chicken.
In the oil that onion was fried, put the chicken. Keep the marinade aside. Fry the chicken on both sides, one minute per side. Add remain marinade and mix it. I added ½ cup water and it gave bit more gravy. We felt masala type would have been better instead of a flowing gravy.
With breast side facing up, cover the pan and cook for 2-4 minutes on high and 20 minutes on low. 10 minutes late, turned it around and cooked on high for 5-10 minutes to cook the breast side and also to reduce the gravy.

try this.. wash chicken and keep aside.. Oka pan lo oil vesi(i use lil more) put some jeera, whole garam masala and once they sputter,..add onions..(gravy ekkuva kavalante ekkuva) and add lil salt.. cook till onions turn light brown, add some green chillies and ginger garlic paste and once they cook well , oil started oozing.. Add cumin powder,corinonder power, chilli powder, salt and mix them .. make sure you mix once you all powders are added and add lil water too.. ee powders burn avvakaunda.. and cook for some time.. Add chicken to this and mix well and cook on medium flame and reduce to low and cook it till your chicken is cooked.. and oil oozes out.. add cilantro.. Chala baguntadi

Gongura Mutton

I do it this way:wash gongura and boil it, till it is like paste. Once mutton is done, add gongura paste to your requirement and add some coriander powder. Gongura kabatti koncham salt padutundi

naaku noru oorings..I usually make gongura royyalu, mutton tho nenu try cheyyala but my MIL does it..gongura ni oka onion n green chilli vesi maggapetti water antha poyedaka, inka leafy ga anipisthe tokkutaru, with mortar n pestle, then mutton curry almost 80% cook ayyaka, andilo gongura ni add chestaru...salt ekkuva padutundi ee curry lo..and vandina puta kante rendo puta yummmmm untadi

Cooking Salmon ~ Salmon Curry ~ Salmon Pulusu

usual ga salmon ni fry chestaru..u can marinate in whatever spices u usually put generally GG paste, turmeric, red chilli pwdr, garam masala,salt, jeera n dhaniya pwdrs,also koncham lemon juice..mukka gattipadutundi lemon vesthe..koncham sepu attepetti, shallow fry cheyyandi..u can also bake or grill it..

I do grilling on my outdoor grill.Preheat gril to 350 Marinate the fish as per your requirements.. Thin fillets aite each fillet in foil lo petti oil spray chesi close the foil put it on the grill and close it for 7-8 min and them switch off grill and let it stay for another 2-3 min. Salman lanti flesh unna fish aite grease the grates with oil , put the fish on and let it cook on high heat for 10 min on one side and 2 - 3 min on other side. This is how I do .

Broccoli Egg Curry ~ Scambled Broccoli Egg

Eggs - 3
Brocolli - Large flower okkati
Onions- 2 medium ones
Chillies 3
Jeera - 1/4 team spoon
Ginger Garlic Paste - 1/4th spoon
Garam Masala - as per your taste
Salt
Chilli powder
Turmeric
Oil
-- Cut brocolli into small sized florets
- Onions and chillies cut chesukondi, small pieces ga....
- Take a pan, add little oil... Fry jeera, onions and chillies
- After sautéing onions, add ginger garlic paste and fry for 2mins...
- Add garam masala, salt, chilli powder, turmeric , fry for a minute and then add brocolli pieces...
- High flame lo kaluputhoo oka 6-7 mins fry cheyandi....
- Finally eggs beat chesi same egg burji ki fry chesinattu cheyadame...

Chala baguntundi....

You can made Brocolli Rice too, just like Peas Pulav kakapothe add Brocolli instead of peas.

Kung Pao Chicken

1 pound skinless, boneless chicken breast halves - cut into chunks/ cubed rotisserie chicken
2-3 red chilli peppers
2 tablespoons white wine (tastes better, but is optional)
2 tablespoons soy sauce
2 tablespoons sesame oil, divided (can use any oil, sesame has a nice smell)
2 tablespoons cornstarch, dissolved in 2 tablespoons water
1 tsp hot chile paste
1 teaspoon distilled white vinegar (my chilli paste had vinegar, so I didn't add additional vinegar)
2 teaspoons brown sugar
4 green onions, chopped
1 tablespoon chopped garlic
1/2 cup unsalted dry roasted peanuts

I also added some veggies including carrots, broccoli, bell peppers and beans (this is optional and you can add any vegetables you have). Traditionally kungpao just has some celerey, carrots and water chestnuts.

To Make Marinade: Combine 1 tablespoon wine, 1 tablespoon soy sauce, 1 tablespoon oil and 1 tablespoon cornstarch/water mixture and mix together. Place chicken pieces in a bowl and add marinade. Toss to coat. Refrigerate for about 30 minutes.

To Make Sauce: In a small bowl combine 1 tablespoon wine, 1 tablespoon soy sauce, 1 tablespoon oil, 1 tablespoon cornstarch/water mixture, chili paste and sugar. Mix together and add green onion, garlic and peanuts. In a medium skillet, heat sauce slowly until aromatic.

Meanwhile, heat some oil in a wok/wide pan. Add the red chillies and remove chicken from marinade and saute until meat is white and juices run clear. Add the sauce to it and let simmer together until sauce thickens.

If you wnt to add vegetables, then do so after the chicken is cooked. Let them cook for 3-4 min and then add the sauce

Beerakaya Royyala Kura ~ Ridge Gourd Prawn Curry

Nenu aite ela chestanu.
Tomatoes chopped 1
Beerakaya pieces 2 cups
Shrimp/ royyalu 10
Onion 1 medium chopped
Mustard seeds 1/2 sp
Senaga pappu 1sp
Salt, pasupu and chili powder
Garam masala 1/4 sp
Curry leaves 4
Green chili 3

Method:

Oil lo curry leaves, senaga pappu musratd vesi koncham fry cheyali.
Then add chopped onion and slit green chilies.
Golden browm vachaka add beerakaya pieces . Oka 5 minutes tarvata tomato veyali.
Ee lopu oka pan lo 1/2 sp oil vesi raw royyalu vesi koncham pink color vache daka cook cheyali.
They loose water so need not worry.
Beerakaya and tomato maggaka shrimp vesi baga kalapali.
Now add salt, pasupu and chili powder.
Anni baga undike daka unchi last lo garam masala and chopped kothimeera vesi okasari kalipi teseyali.
Vedi vediga tinte chala bavuntundi.

nenu ila chestanu

mundu shrimp ni salt, karam, pasupu and little ginger garlic paste and about 1/2 tsp oil vesi cook chesi pakkana pettukovali.(do not add any water)
Fry  onions and green chillies, then add the chopped beerakaya and fry for 5 mins and add the cooked shrimp along with li'l salt,karam and garam masala (a pwd of cloves, ilaichi , cinnamon, corriander seeds and cumin seeds). and cook till beerakaya is cooked completely, add li'l cilantro for garnish.
