Potatoes boil chesi mash/ small pieces cut chesi pettukondi, boil peas and carrots, keep aside. then jeera, curry leaves, mustard seeds talimpu vesi, fry chopped onions and green chillies, to this add turmeric, salt to taste karam and garammasala pwd fry for a min or two add the boiled veggies and some cilantro and mint leaves and cook for about 3-4 mins , squeeze lemon juice or add amchur pwd. let cool completely and use

Onion Rasam

here u go onion rasam recipe..

I use ghee for rasam poppu...

In a vessel, add ghee after a few sec, add mustard, jeera let it splutter add ginger, garlic, onion ,curry leaveslet it fry until the raw smell goes, add tomato and fry for few more minutes, ensure u keep in medium or low flame, add rasam powder( pepper powder if u want to) add water, salt and bring it to boil , then add tamarind paste and let it boil in low flame for sometime, adjust salt and also if u want more rasam powder u can add to.. atlast add corainder leaves and serve..

sometimes I add mint leaves too along with onions!!

forgot while frying onions add hing too!!

Onion-Capsicum chutney

1 red bell pepper.
1 small onion.
few peanuts.
4 green thai chillies.
Salt as required.

Saute altogether until well done/tender, blend it coarsely, add popu/talimpu finally.
chillies can be reduced to your spice

Onion Chutney

Oil heat ayyaka andulo koncham jeera,coriander seeds vesi fry ayyaka add dry red chillies to taste,then add onions n fry till they turn soft let the mixtur cool then take da mixtur to a blender,add salt to taste,picnh of turmeric,tamarind koncham n jaggery/sugar vesi make it to a smooth paste,finally add tadka n serve...

Ullikaram for Dosa

I do like this... my MIL's recipe...

Grind raw onion and redchillies with little salt together in a blender or mixie... don make it a paste let it be coarse mix... pour dosa batter and apply this paste and do as u normally do dosa and while taking it out I also use putnala pappu powder on top of it and serve hot..

Onion Rice Recipe

Ingredients:
Boiled rice
Cinnamon stick- 1
Elachi- 2 to 3
Marathi moggu-1
Cloves-2or 3
Bayleaf-1 or 2
Aniseed-1
Onions- 1 full onion sliced
Red chili powder- according to spice level
Salt
Curry leaves
Coriander leaves

1.Heat oil, put mustard and cumin,let it splutter, add all the masala items and fry for 4-5 seconds
2.Add onions , curry leaves and let it fry till golden brown
3.Reduce flame add red chili powder and fry for few seconds
4.Add boiled rice and salt according to taste
5.Finally add chopped coriander leaves n serve

Onion Chutney/Ullipaya Karam

i dont know if you are talking about this.. nenu onions tho ila chestanu.. tiffins ki but equally tastes good with Rice..


For 2 medium sized onions, u need 1/2 cup coconut powder

Onions, Coconut powder, Chilli Powder, Salt annee blend into coarse mixture.. this is raw now..we need to fry this mixture to get rid of the water.
In a pan, add 4 tbsp of Oil, add mustard, jeera, urad dal, chana dal , dry chillies and Curry leaves as we do for tadka. when its done add the onion mixture and fry it.. keep it in medium/slow flame depending on the amount of chutney and we need to keep stirring for every 2-3 mins, to make sure it doesnt stick to the pan..

this chutney is served with ghee in dosas or Rice.

Cauliflower Onion Fry

Cauliflower onion fry chesthaa nenu :

Onion & cauliflower chinna chinna ga mince chesukuni oil lo jeera , aavalu , green chillies 4-5 , minapa pappu , senaga pappu vesi splatter ayyaka ivi vesi salt & pasupu vesi lid pettali ...... deggera paddeka konchemu red chilly powder & konchemu garam masala ( for flavour & colour ) vesi kalipi dimpeyaali :D simple ........

Beerakaya Ulli kaaram koora

maa amma idi chestaaru, andhra item

oka medium size beerakaya chaala slender ga dark green ga unte baaguntundi
peel chesi 2 inch mukkalu 1cm width undaali

oka medium size red/white onion diced

2 table spoons grated coconut dry waala

for koorakaaram:

3 endu mirchi (kaaram ekkuvante add more)

1 tb sp senaga pappu

1 tb sp minappappu washed (pottu lenidi dry)

1/2 tbsp avaalu

1/2 tbsp jeera

tamarind oka medium nimmakayanta ( you have to adjust this based on your taste)


mirchi, pappulu, avaalu, jeera konchem oil lo veyinhaali indulo tamarind add cheyali

now fry onion in little oil till translucent

ivanni + endu kobbari podi grind cheyaali not a fine powder konchem coarse ga undaali now add friend onions and grind for a 3 seconds ante onions completega paste kaakudadu.

now pan petti, little oil vesi vedekkaka, add beerakaya mukkalu 3 mins vegaka, add salt, haldi, and cover it, and cook for another 3 mins, now add the ground paste to it add some water as per the desired gravy consistancy. and ippudu complete ga anta cook ayyevaraku unchaali may be for another 10mins or so. rice thoti chaala baaguntundi.

idi basic, inka jazz up cheyali ante, you can add nuvvula podi/ palli podi to it
instead of onion , you can add small ginger peice to the masala and then grind it. then it is called beerakaya allamkaaram koora.

Kakara kaya with Ullikaram

Ingredients:

Bitter gourd (kakarakayalu, karela) 1 lb
Tamarind very little or 1/2 cup of pullati majjiga
Onions 3 big (more the onions curry is less bitter)
Grated coconut -1/3 cup
Garlic 4 to 5 cloves
Chillipowder , salt (according to taste)


Preparation:
1. Slice karela into rings and boil them with majjiga or tamarind.
2. Let the pieces dry for a day or two.
3. Once the karela dries deep fry them in oil (or u can grill them in the oven till brown).
4. Chop finely or grind onions.
5. Heat oil in a pan, add popu ingredients and let them splutter.
6. Add onions and fry till brown (caramelized onion takes the bitterness of karela. No need to add sugar or jaggery again).
7. Once it is done add karela rings and mix grind grated coconut , chilli powder and garlic . Add this to karela fry, mix well and turn off the stove in 2-3 minutes.


Note:
nenu cheppina recipe only for taste buds....deep fry cheyali kada karela ni anduke 1-2 days dry cheyali ani cheppanu...if you can't wait oven lo dry cheyachu.....also oven lone ekkuva bake chesi deep fry avoid cheyachu for health reasons....
