This is how I normally cook, I add bell peppers (capsicum) to it. If you wish you can omit bell peppers and tomatoes... but do remember mushrooms cook chesaka, quantity koncham ee avutundi...

and i do the mushroom-spinach like this :
--> In a open pot/steel vessel, add salt, water bring water to boil, add mushrooms and cook for atleast 15 mins on med-hi flame. take out cooked mushrooms and keep them aside.
--> now, in a saute pan, Add cardomom powder, couple bay leaves, 2 cinnamon sticks, nutmeg powder, green chillies (to ur spice) to the heated oil and let them fry a lil bit.
--> Then add chopped onions, spinach, tomatoes accordingly and saute them, until they are well done.
--> let the gravy cool down and blend it;
--> Now take the saute pan again, add the blended gravy and the cooked mushrooms and keep it simmer for 5-10 mins. Don't forget to add salt :) garnish with gulp of cilantro;
yummy mushroom-spinach curry ready.
onions & tomatoes based on # of spinach u use; for 1 bunch u mite need 1 med onion and 1 med tomato; double the quantity for 2 bunches of spinach;
some may prefer blending spinach, onions, tomatoes first and then saute; but for me personally, i feel the onion smell, no matter how long i saute it; so, i do the saute first and then the blending;
