Egg Puffs

for egg puffs : same brand sheets, same thawing process, boiled eggs, vertical halves chesi, salt, pepper, chat masala sprinkle chesi, each square sheetlo stuff chesi, corners fold chesi, bake cheyyadame..

Veg Puffs

I have used pepperidge farm pastry sheets in the past. need to thaw # of sheets you want for atleast 30-40 mins. meanwhile, for veggie puffs - saute until half done, the veggies of your choice (like potato, onion, carrot) in a pan, add some salt, red chilli powder, chat masala. Now, cut the thawed pastry sheets into about 4 inch square (even small or big based on ur interest), stuff the sauteed veggies in each square, apply some water at the edges of pastry sheet and close the sides after stuffing veggies. Repeat process for required # of puffs, place on the tray and in oven for 20 mins on 360 F. (usualga puffs makinglo 400 antaru, kani naku 400 peditae aduguna maadindi. so, konchem tagginchi, ekkuva sepu cook chesanu; appudu slightly crispyga vachi baagundi.)

nenu ujwala cheppinatte chesthaa..except i don't add other veggies...only potatoes tho..maa ayanaki veggie allergy ...potato boil chesi..peel and cut them into small cubes..oka ginni lo koncham oil heat chesi, i add cumin seeds, curry leaves, chopped green chillies, grated ginger, chopped mint leaves (optional), pasupu and saute the potatoes for a while..add salt..koncham coriander,cumin and chilli powders..not too much.at the end i add some fresh lemon juice and coriander lvs....i use pepperidge pastry sheets...avi unfold chesthe3 parts vasthayi.i cut them lengthwise..then i cut each strip 3-4 times..depending on what size i want..i put the stuffing in the middle and either close them as triangles or lengthwise..so chinna rectangles vathayyi..i bake at 375F for 10-12 min on each side...i turn them over..so both sides manchiga golden brown avuthayyi..

Indian Style Spring Rolls

indian Style Spring rolls
I had made a small changeto the stuffing in spring rolls and my frineds and husband loved it .
Ingredients:
Cabbage :Approx 200grams
carrot one grated
onion finely cut into long slices
Capsicum ( optional)
Garlic 3 pods chopped finely
ginger finely chopped half spoon
1 small spoon tamarind juice or pulp
1 spoon sesame seeds
1 spoon bhel poori sweet tamarind chutney ( i prepared this at home with tamarind and jaggery ) used the same
Procedure :
Take a stir fry pan add one small spoon oil and then add the ginger and garlic let them brown a little and then add the veggies cabbage , carrot , onions and capsicum stir fry for one minute then add mixed sauce ( tamarind pulp sweet chutney , sesame seeds and salt )mix all the veggies and sauce well for one - two minutes and turn off the stove . This can be stuffed into the puff sheets for spring rolls and deep fried :D

Veg Puffs using Pastry Sheets

Puff Pastry sheets ni flat ga petti room temperature lo thaw cheyali.. for abt 10-15 mins.
Aa pedda sheet ni make it into total 9 parts.. you can put abt a teaspoon full of curry/filling and seal it with some water in the edges.. koncham gattiga nokki pedithe, open avvavu while baking.
Preheat and baking instructions pastry sheet box meeda untayi.. tentative ga 10-15 mins bake cheyali, till they are litely browned. Try to put them on a cookie sheet so that kinda antukokunda, maadakunda manchiga vachestayi.. ofcourse, cookie sheet lekapoyina just flour vesi pettina ok.

CURRY PUFFS
CURRY PUFFS-by-Anupama
Ingredients:
1-2 big potatoes
1/4 cup peas
1/2 onion finely minced or 1 spoon of onion pwder
1 spoon curry powder or garam masala
1 spoon of garlic
1/2 spoon avalu or mustard seeds
1/2 spoon jeera or 3/4 spoon jeera powder
3/4 spoon pasupu
1 packet Pepperidge Farm puff pastry sheets(this brand is vegetarian)
Salt
Method:
1) Thaw puff-pastry in fridge(not freezer) atleast 2 hours prior to making puffs
2) Boil potatoes, mash it and keep it aside
3) Fry onion, mustard seeds, jeera and garlic with a spoon of oil..thaalimpu laga. Add the mashed potato, masala, salt and pasupu - mix it and warm it through.
4) Add peas to the mixture and mix it till it becomes soft. Keep the filling aside and let it cool down.
5) Unfold the puff pastry and cut it into big rectangles where u can see the fold lines.
6) Cut the big rectangle into half - u'll get 2 pieces(2 small rectangles).
7) Take the first piece - Spoon the potato filling in the center. Just 1 - 2 spoonfuls should be enough. Do not fill entirely.
8) Take the 2nd rectangle piece - put it on top of the first one and bind the edges with a fork. U get a beautiful design too.
9) Bake it in 400 degree oven
