Baked Asparagus ~ Roasted Asparagus

Preheat the oven to 400 degrees F.


Break off the tough ends of the asparagus and, if they're thick, peel them. Place the asparagus on a sheet pan, drizzle with olive oil, then toss to coat the asparagus completely. Spread the asparagus in a single layer and sprinkle liberally with salt and pepper. Roast the asparagus for 15 to 20 minutes, until tender, but still crisp.

I do the same thing as above on stove top generally asparagus ki ekkuva sepu cooking avasaram ledhu so, microwave lo boil chesi frying pan lo nuvvu cheppinate chesta...above koncham different unnayi kadha felt like trying them once..

hey one more thing if u get Zaatar spice u can use that for granish it goes well with it..

Asparagus Chutney

I make chutney with asparagus... it tastes similar to beerakai pachadi...

1. take little oil in a pan, fry channa dhal, redchillies, 1 pearl onion, dhaniya seeds, cumin till the dhal is golden brown

2. Cut the asparagus till u reach the hard part...and discard the hard part(U will know it as u cut it coz it will be difficult for u to cut it)

3.Fry the cut asparagus in little oil in the pan till it turns brown

4.Grind evrything with little bit of tamarind, salt

5. Put some oil in pan, put some mustard seeds let it splutter, add curry leaves and pour it on chutney..

Goes well with Idli, dosa, Chapathi, rice....

Asparagus Curry

hi gals,

i made asparagus curry today for roti and for the first time in my life with this vegetable.
i am not sure if anyone of you have already made successful curries with this vegetable. I welcome more ideas for me to use it many different ways in my everyday cooking.
Once i ate this at a friend's house as i dry curry for rice and i made it wet for roti (little juicy)

asparagus - bunch (cut them into 1/4 inch pieces after cutting of the broader end of asparagus)
potato - 1 medium (similarly cut potatoes into 1/4 inch cubes)
onions - 2 small
tomatoes - 2 medium
garam masala - 3/4 tsp
green chliies - 3 small
coriander powder - 1/2tsp
cumin powder - 1/4 tsp
salt - as required
cilantro - good handful (i love cilantro garnish)
ginger and garlic (freshly grated) - 1tsp
clove - 2-3


Preparation:

- Add oil to tawa
- add cloves and let it fry
- add green chllies, fry it a little
- add ginger and garlic, fry it a little
- add talimpu ingredients, fry everything completely
- add onions and salt
- when onions starts turning translucent, add potatoes
- once potatoes start to turn soft, add asparagus and turmeric.
- when all the ingredients are almost cooked, add diced tomatoes, required salt, cover and let it cook completely.
- before tomatoes are almost done, add garam masala, coriander powder and cumin powder and cover it and let it cook on low untill tomatoes are done.
- remove the tawa from flame and garnish with cilantro

Was great with roti and i will not prefer to add garam masala if it was to go with rice. gals please suggest some more recipes if anyone knows or can think of with asparagus.

Asparagus is not a common veggie in my house but once in a while, tender asparagus store loo kanipistee, I get it and cook it like any other subzi... this is how i make it.. Recipe Link
