Chukka Kura Chicken

oka half an hour chicken tho marinate chesukoni with usual marination, GG paste, turmeric, salt n red chilli pwdr pakkana petti, then in a pan add oil..green chillies n 2 big onions( i add more in this bcos curry final ga deggiraga aipoddi), n then normal ga chicken veskuni vandeyyadame till the chicken is completely done...full fa udikipoyaka chukkakura ni stems remove chesi n cut chesi add cheyyadame..keep lid till water comes out n leaves deggira paddaka, kura kavalsina consistency daka cook chesi teeseyyadame..basic ga normal chicken curry w/o garam masala n addition of chukka kura...i usually dont use tomatoes but fridge lo half padi undi ninnati ninchi ani vesa..tastes grt with rotis bcos its semi gravy..never tried with rice

nenu appudappudu ila chesthanu...chicken marinate chesi pettukovali with salt,kaaram,pasupu..Pressure cooker lo oil vesi tarvatha masala dinusulu (aku,lavangam,puvvu,chekka etc) veyali...avi manchi smell vachaka add onions ..onions konchem fry chesaka ginger+garlic paste vesi pachi vasana poye varuku fry cheyali...then add tomatoes ...very less quantity or u can skip if u dont like also...avi mushy ayye varuku fry cheyali..before adding tomatoes i add mint+corinader leaves to onions sometimes....next add chicken...high lo pettali 2 mins...water vachaka tagginchi avi half cook ayyaka add some curd...di kuda optional appudappudu vestha....then add rice+water and pressure cook for 2 whistles..if its basmati then chicken almost cook ayyaka vesi 2whistles vachaka pressure tesesthanu..

Chickem Meat Balls

This recipe I wanted to share since long .. This is my OWN recipe .. It's healthy and good for working moms ..

Chicken(400g)
Carrots
Celery
Leaks
Spring onions
1 egg

Mince the meat and the veggies... Don't make the veggies into a paste
Add spices according to it taste and preference
Boil water in a pan with salt cloves bay leaf
Drop balls of meat into the boiling water .. When the balls float, it means they are done
Remove them
I make them in tomato base and creme base .. You can use them in any way
I make big amounts and deep freeze them

Revathi Cherukuri covered pretty much all the combinations you can amke. Naa blog loo chicken curries ekuva varieties leevu bcz maa intlo andariki chicken ante chicken shorva nee kavali. Dry curry type ante, you can also try another variation that Revathi did not list. Mamulu chicken fry lagane but green chilies + kotmir +mint grind chesi veyachu. For thanks giving whole chicken in gravy chesa and my husband liked the gravy a lot. Whole chicken badalu meru chicken pieces veyachu. This is somewhat similar to dum ka murgh. But in that I also add cashew powder. I am copy pasting the recipe I noted down for myself. You might also find some notes I made for myself. I am little busy today. So just pasting the recipe as it is. As I said you can use cut chicken instead of whole chicken. Also I made dum style. You can cook it the regular way. If you want to do dum style, then cooking time would be 10 minutes on high and 20 minutes on low.

3.245 lbs. Whole Chicken
2 ½ tsp. Chili Powder
1 tbsp. Coriander Powder
2 tbsp. Ginger Garlic Paste
Turmeric
1 ½ tbsp. Salt I think
Garam Masala – 10 clovers, 10 peppercorns, ½ tsp. Cardamom Seeds, ½ tsp. Shah Jeera, ½” Cinnamon
1 large & 1 medium Onion Sliced or approx. 3 cups Sliced Onions
1 ½ tsp. Poppy Seeds
2 – 2 ½ tbsp. Blanced sliced Almonds
½ Lime Juice
1 cup Yogurt
¾ - 1 cup (rice cooker cup) Oil This was too much
4-5 Green Chilies
½ cup chopped Cilantro
1/3 cup chopped Mint

Fry onions in oil until light grown, cool and grind to paste.
Dry roast poppy seeds and almonds, and make a fine powder or a paste using little water. I made a powder.
Mix everything and rub it into chicken and marinate the chicken overnight. Or Make a marinade with chili, garam masala, coriander, salt, turmeric, ginger garlic and rub it to the chicken. Two hours before cooking, mix yogurt, fried onion paste, almond poppy seed powder, lime juice and rub it to the chicken.
In the oil that onion was fried, put the chicken. Keep the marinade aside. Fry the chicken on both sides, one minute per side. Add remain marinade and mix it. I added ½ cup water and it gave bit more gravy. We felt masala type would have been better instead of a flowing gravy.
With breast side facing up, cover the pan and cook for 2-4 minutes on high and 20 minutes on low. 10 minutes late, turned it around and cooked on high for 5-10 minutes to cook the breast side and also to reduce the gravy.

try this.. wash chicken and keep aside.. Oka pan lo oil vesi(i use lil more) put some jeera, whole garam masala and once they sputter,..add onions..(gravy ekkuva kavalante ekkuva) and add lil salt.. cook till onions turn light brown, add some green chillies and ginger garlic paste and once they cook well , oil started oozing.. Add cumin powder,corinonder power, chilli powder, salt and mix them .. make sure you mix once you all powders are added and add lil water too.. ee powders burn avvakaunda.. and cook for some time.. Add chicken to this and mix well and cook on medium flame and reduce to low and cook it till your chicken is cooked.. and oil oozes out.. add cilantro.. Chala baguntadi

this is how I make it adhi chilli chicken Antaru chicken 65 Antaru telidhu first chicken ni koncham yogurt ,Karam ginger garlic paste,garam masala ,salt,Daniya powder vesi oka 2 hrs ala marinate cheysi I bake in the oven until it is cooked max 45 min lo avthundhi tarvatha pan lo koncham oil vesi fry onions,green chillies,koncham crushed garlic,pepper powder koncham tomato sauce,soya sauce ani fry ayyaka I add the baked chicken snd fry for 10 min koncham gravy la kavali ante add 1/2cup water...and last lo koncham spring onion and coriander add cheystha...

nenu tandoori chicken drumsticks thone chesta... Restaurant style taste vastundho leedo teliyadu but we like it. Also, make sure you pick small drumsticks. Buffalo Wings

nenu couple of times chesaanu buffalo wild wings laaga..nenu wings either walmart or maa local store lo thisukunta..size chusukuni. Nenu avi paper towel tho pat chesi...koncham oil, salt, pepper, and garlic kalipi oka 1 hr marinate chesi, oven lo pedthaanu at around 400F. I turn them in between. Either I completely cook them in the oven or I deep fry them at that point.. Appudu deep fry chesthe crispy ga vuntundhi..also ekkuva sepu pattadhu as they are 90% cooked in the oven. Asala oven lekunda deep fry cheyyachu kaani it takes a very long time to cook those pieces thoroughly. Sauce nee ishtam..i buy franks.and lousiana something something and mix them..put a tsp of butter in a bowl..add the sauce and heat it in the microwave till the butter melts..add the chicken to the sauce and mix till they are well coated.

Grilled Chicken

I usually marinate chicken for 5-6 hrs and I use boneless chicken thighs or tenders..nenu breast pices tho koda try chesaa kaani kaanu antha manchiga anipiyyaledhu

For Marinade - lemon juice from 1 lemon, oil, salt, pepper, turmeric, red chilli powder (masala karam from india) ,coriander powder, 6-7 cloves grated/diced fresh garlic. I also add crushed curry leaves..(optional).

Measurements meru entha chicken vesthunnaro dhaani batti..taste everything after mixing and before you add th chicken.

Kung Pao Chicken

1 pound skinless, boneless chicken breast halves - cut into chunks/ cubed rotisserie chicken
2-3 red chilli peppers
2 tablespoons white wine (tastes better, but is optional)
2 tablespoons soy sauce
2 tablespoons sesame oil, divided (can use any oil, sesame has a nice smell)
2 tablespoons cornstarch, dissolved in 2 tablespoons water
1 tsp hot chile paste
1 teaspoon distilled white vinegar (my chilli paste had vinegar, so I didn't add additional vinegar)
2 teaspoons brown sugar
4 green onions, chopped
1 tablespoon chopped garlic
1/2 cup unsalted dry roasted peanuts

I also added some veggies including carrots, broccoli, bell peppers and beans (this is optional and you can add any vegetables you have). Traditionally kungpao just has some celerey, carrots and water chestnuts.

To Make Marinade: Combine 1 tablespoon wine, 1 tablespoon soy sauce, 1 tablespoon oil and 1 tablespoon cornstarch/water mixture and mix together. Place chicken pieces in a bowl and add marinade. Toss to coat. Refrigerate for about 30 minutes.

To Make Sauce: In a small bowl combine 1 tablespoon wine, 1 tablespoon soy sauce, 1 tablespoon oil, 1 tablespoon cornstarch/water mixture, chili paste and sugar. Mix together and add green onion, garlic and peanuts. In a medium skillet, heat sauce slowly until aromatic.

Meanwhile, heat some oil in a wok/wide pan. Add the red chillies and remove chicken from marinade and saute until meat is white and juices run clear. Add the sauce to it and let simmer together until sauce thickens.

If you wnt to add vegetables, then do so after the chicken is cooked. Let them cook for 3-4 min and then add the sauce

Chicken Sandwich

ma vadiki nenu sandwich ila chesthunnanu for his lunch box..
i use the following ingredients..
boneless skinless lean cut chicken breast piece
whole grain sandwich bun
italian bread crum seasoning

....first oka bowl lo konchem salt and pepper and then egg white vesi whisk chestha. take another plate and put some generous amount of seasoning in it. ee chicken piece ni first egg mix lo two sides turn chesi and then bread crumbs plate lo vesi malli two sides turn chestha(so that crumbs chicken ki motham antukuntundhi) then oka skillet lo 3 spoons oil vesi each side 5 min fry chestha (depends on how thick your breast piece is....i use very lean one)

then sandwich bread madhyalo ee chickne breast petti isthanu(u can add some vegies along with chicken too)

naku idhi cheyataniki oka 15 to 20 min paduthundhi

butter lo onion, tomatoes, ginger garlic paste and all spices vesi fry ayyaka puree cheyandi...
then butter lo chicken pieces vesi koncham fry ayyaka e puree veseyandi....last lo cream and little butter add cheyandi....done

Chicken Kababs with ground chicken
Nenu Ila chestanu, Anshi ki baga istam, meatballs ani tinestundi

ground chicken 1pound,
1/2 red onion grated
1 tsp ginger garlic paste ( u can add only chopped garlic for kids)
roasted ground cumin 2 tsp,
1egg yolk,
2 tsps bread crumbs ( I use panko)
chopped cilantro, kothmir handful
2 tsp Paprika powder or use mana inti karam for extra spicy
1 tsp soy sauce
2 tsp lemon juice
crushed black pepper and salt

anni ingredients ground chicken lo mix chesi just fold it, baga kalapakudadu..that will make very hard kababs
then  coat with rice flour or panko bread crumbs (i use this, baga crunchy ga vostayi) shallow fry chesukovali
first okati chesi, taste chusi, uppu karam saripoinatlu vesukoni migathavi meat ball shape gani, patties shape gani, or else sheek kababs laga stick ki petti shallow fry it...

For freezing... I immediately freeze once they are room temperature, Anshi ki kavalsinnappudu 2-3 defrost chesi malli kunchum olive oil lo light ga fry chesi pedatha...she loves it!! Mee sahasra ki kuda try cheyyu....

Thai Red Curry

Thai red curry ki main paste ee kada anni ready unte simple.
-Take a pan add oil,then add in the paste fry for a while until it releases nice aroma
-then add coconut cream[top layer of coconut milk u will c if u carefully open the tin ] this method adds little more flavour to the curry.
-let it fry for few more mins when u c the cream splits nd combines withthe paste now itz time to add ur vegetables.
Note:
[ I like my veggies to be cooked in the same pan so that it enhances the taste kani heavy anipisthadi thineppudu or for time saving u may preboil ur veggies nd can be added in tihs with the stock]

-if itz raw veggies u may need to fry a little while for2-3 mins if boiled veggie r added couple of mins is fine then stir in rest of coconut milk would love to add tiny bit of sugar in this stage,. let it boil nd simmer for the consistency u need.thats it heavenly thai curry is ready.garnish with coriander
note:for adjusting spice u may add chilles when the curry is boiling or if u think the paste is mild add to the oil in the first stage.

I tried showmethecurry.com red curry. Manam restaurant lo aithe veggies crunchy ga vuntayi kadha mana chethitho cook cheseppudu ala crunchy ga aapeyyalememo 2 times gravy taste yummy but veggies matram crunchy ga raledhu. Just yesterday edho green curry paste vunte try chesa. Innovative thoughts ekkuva ayyi daani medha instructions tho curry cook chesi rice noodles tho mix up chesanu. So yummy and motham no complaints tho ginne kaali. store bought lo spicy konchem takkuva vuntundhi kadha i ended adding up green chillies in the last minute. May be red curry ki red chilli paste would do good.

here it goes: first veggies ni stir fry cheyali then add coconut milk let the veggies simmer in the milk for 15 mins or so and last lo add that paste to the veggies and cook another 5 mins.... Serve with hot steamed rice.... BTW instructions kuda vuntayi on the back of the jar

padma chesinatte chesta nenu kuda. But veggies koncham munde cook chesi then I add to the gravy. Coconut milk boil aayaka I add paste, then I add veggies or shrimp or chicken.
