beerakaya nuvvula kura

Sesame seeds, jeera and red chillies dry roast chesi salt vesi powder cheyali. Aa powder ni gutti laga cut chesina beerakaya lo stuff chesi koddiga oil lo vesi magginchali ante. Powder lo you can add garlic pods too. Nenu veyaledu.

Beerakaya Royyala Kura ~ Ridge Gourd Prawn Curry

Nenu aite ela chestanu.
Tomatoes chopped 1
Beerakaya pieces 2 cups
Shrimp/ royyalu 10
Onion 1 medium chopped
Mustard seeds 1/2 sp
Senaga pappu 1sp
Salt, pasupu and chili powder
Garam masala 1/4 sp
Curry leaves 4
Green chili 3

Method:

Oil lo curry leaves, senaga pappu musratd vesi koncham fry cheyali.
Then add chopped onion and slit green chilies.
Golden browm vachaka add beerakaya pieces . Oka 5 minutes tarvata tomato veyali.
Ee lopu oka pan lo 1/2 sp oil vesi raw royyalu vesi koncham pink color vache daka cook cheyali.
They loose water so need not worry.
Beerakaya and tomato maggaka shrimp vesi baga kalapali.
Now add salt, pasupu and chili powder.
Anni baga undike daka unchi last lo garam masala and chopped kothimeera vesi okasari kalipi teseyali.
Vedi vediga tinte chala bavuntundi.

nenu ila chestanu

mundu shrimp ni salt, karam, pasupu and little ginger garlic paste and about 1/2 tsp oil vesi cook chesi pakkana pettukovali.(do not add any water)
Fry  onions and green chillies, then add the chopped beerakaya and fry for 5 mins and add the cooked shrimp along with li'l salt,karam and garam masala (a pwd of cloves, ilaichi , cinnamon, corriander seeds and cumin seeds). and cook till beerakaya is cooked completely, add li'l cilantro for garnish.

Beerakaya Kobbari Pachadi

Ingredients

Beerakaya – 1 Large

Kobbari – half

Green chilies – 6-10 (depending on spice level)

Tamarind – Small lemon ball size

All tempering ingredients( Minapappu, Senaga pappu, avalu, jeera & curry leaves)

Procedure

1st beerakaya chekku teeyali

Then stove on chesi koncham oil vesi oil heat ayyaka beerakaya pieces_green chilies vesi fry cheyali

E lopu kobbari chippa pka half tesukuni china pieces kinda cut cheuskuni unchukovali

Blender lo 1st kobbari pieces grind cheyali mettaga

Then fry chesi pettukunna beerakaya+green chili pieces+tamarind+jeera+salt anni vesi grind cheyali

Last lo talimpu vesukuni pachadi baaga mix cheyali

(Fresh kobbari tho ne e chutney baguntundi )

Beerakaya Tomato n Kobbari Pachadi

1.beerakayalu dont peel the whole skin..partial peel n make in to cubes.
2.tomatos .
3.kobbari mukkalu r frozen kobbari
4.green chillies.
5.tamrind.
6.garlic
7.jeera
8.salt

tempring:
senga pappu,minapappu,avalu,jeela karra,pinch of turmeric,garlic,curry leaves n kothimeera

procedure:

1.add little oil to pan.
2.add jeera n green chillies.
3.add kobbari mukkalu r frozen kobbari n salt.fry it till the rawness of coconut reduces.
4.ippudu varku fry ayan kobbari, chillies ni vere bowl lo pettukondi.
4.to the same pan put 1 table spoon oil n add berakaya mukkalu
5.after beerakaya is fried add tomatos.after both are cooked take it to the bowl which has kobbari n chillies.
5.cool the above mixture.
7.grind the above mixture,tamrind , garlic,jeera , salt.
7.take a pan n do tempring.n add it to chutney .


those who dont eat garlic can use inguva instead.

Capsicum Beerakaya Pachadi

beerakaya chopped slightly peel sharp edges retain skin
sesame seeds- dry fry them
tamarind
jeera
green chilly

- oka pan lo oil vesi green chilly vesi fry cheyali..next beerakaya,capsicum fry cheyali.
- cool ayaka grind cheyali along with sesame,jeera,tamarind,salt.
- finally add tadka

Fiber Pachadi

nka nenu oka pachadi chestha FIBER PACHADI... ma amma chestundi idi

1-2 migilipoyina kooralu ( not dumpu kooralu) - like beerakai, beerakai tokku, cauliflower stems, sorakaya tokku, dondakai, bendakai head ilanti padeyakunda ziplock lo vesipettukunta

ee pachadi cheyyalo ardham kanappudu esp weekends...

i take oil in a pan, add jeera, mustard, hing, red chillies, then add 1/2 sliced onion, 1 tomato and leftover veg pieces/veg skin ( washed and cut), green chillies, salt, tamarind.... anni baga maggaka.. let it cook n grind to a smooth texture...

finally do the seasoning with urad, mustard n jeera with lil hing n curry leaves...

instant pachadi with LOT OF FIBER ... idi pillalaki kooda pettachu... as vegetables lo vunde protiein asalu veg lo kanna vaati skin lo and head part lo ekkuva vuntundi and we end up throwing them.... ala waste kakunda ma amma nerpinchina pachadi idi..... ma amma denni PICHI PACHADI antundi... nenu danni FIBER PACHADI atanu.....

taste matram chala bavuntundi... u cannot even imagine inni tokkulu, tolulu kalipithe inta taste vastundi ani...

nenu asalu koora waste cheyyatam anedi vundadu... even green leaf, corainder, mint stems kooda padeyanu... avvi kooda ila pachadila chesetunna ee madhya....

Method:

beerakay koora vandataniki pottu teestam kada adi waste kakunda pakkana pettukondi.....aa pottu anta mixi lo vesi water posi just oka 1 min grind cheyandi ( mettaga avvakoodadu) ippdu danini cheitito vadakati pina vunna gujju anta oka plate lo ki teesukuni pettandi....

kadai lo oil vesi popu vesi, onions vesi fry ayyaka pesarapappu water teesi vesi kadai lo vesi fry cheyali....brown color vachhaka beerakaya pottu vesi oka 5 mins ala fry cheyali medium flame lo chivaraga mirchi powder and salt add chesi oka 1 min vunchi off cheyali........

chaala tasty ga vuntundi ee curry.....

Beerakaya kaaram pettina koora

Senagapappu,Minapappu,Aavalu,Jeera,menthulu,Dhaniyalu,Endukobbari (Ivi dry ga fry chesi powder chesi pettukovali....)

Method -
Oil vesi beerakaya mukkalu baaga maggapettali...avi maggaka tomatoes vesi koncham sepu lid petti vunchali...tomatoes kuda methaga ayyaka salt,pasupu vesi kalipi paina cheppina powder vesi kalipesi dincheyali...

Oil lo senagapappu,minapappu,jeera,crushed garlic,red/green chillies to taste vesi fry ayyaka add garted carrot and fry till it looses it raw flavor,add salt to taste,let it cool n then grind it to ur desired consistency and finally add tadka.

Beerakaya Curry

Here is my tried recipe with ridge gourd.. It came out well..

1..Beerakaya curry..
.......................................

Ingredients:

* 1 arm sized ridge gourd( beerakai )
* 1/2 small lime sized tamarind
* 1 big onion
* 5 green chillies
* cilantro / coriander
* 1 tsp sugar

For tadka or seasoning

* 1 tsp mustard seeds( aavaalu )
* 1 tsp cumin seeds( jeela karra/ jeera )
* 1 tsp Methi seeds( menthulu )--- Required!
* 10 curry leaves
* a dash of hing
* 1 tbsp split chick peas / chana dal
* 2-3 tbsp oil
* a pinch of turmeric

Method of preparation:

* Peel the gourd ( save the peels for the chutney ) and chop into 1/2 inch pieces
* Slit green chillies length wise, and onions into 1 inch pieces
* Soak tamarind in warm water for 5 min, remove any seeds in tamarind and keep aside
* In a pressure pan, heat oil and add seasonings and when they start to pop, add curry leaves, onions and chillies
* Fry for 30 sec and add ridge gourd pieces( beerakai mukkalu) and tomatoes
* Saute for 2 more min and add tamarind pulp and water until the pieces just get immersed in water
* Pressure cook for 5-10 min or if u have Indian style pressure cooker with weight, switch off the heat just after one whistle
* Once the weight comes off easily, open and cook under flame until desired thickness.
* You can mash it a little(or more if you want a thick gravy ) with a round bottommed spoon or masher.
* Add sugar at this point( you can either avoid or get overboard with sugar )
* Adjust salt to taste and if you need more spice, you can add red chilli powder.
* Switch off the flame and add cilantro! the spicy ridge gourd curry is ready!

Beerakaya Thokku Podi

*beerkay thokku theesi unchali.
*pan lo oil vesi,beera thokku,red chilli,zeera vesi veyinchi unchukovali.
*ila veyinchina dhanilo vellulli konchum,salt add chesi dry ga grind cheyyali.
dheenini vedi annam lo ghee vesukuni kalipi thinte bhaguntundhi.

Beerakaya Chutney

beerakaya chutney :

Beerakaya chekku teesesi pieces cheyyandi.

Konchem oil lo talimpu veyyandi. indulone okka vellulli rebba add cheyyochu (to remove the raw smell of garlic, ledante grinding lo add chesukovachu). tamilpu vegaka, pachi mirchi veyyali. after 2 sec , beerakaya pieces add cheyyali. Mukkalu konchem magganivaali , water poyadedaaka. then grind it along with a little bit of tamarind.

beerakaya tokku pachadi:

paina cheppina pachadi laane cheyyali kakapothe, beerakaya thokku thoti cheyyali(beerkaya mukkalu vaadakoodadu). beerakaya thokku konchem pachi smell poyedaka maggiste chaalu.

ee beerkaya tokku pachadi lo ninna kobbari add chesi chesanu, baagundi taste.my DH like it too. u can try that variation as well.

Beerakaya Ulli kaaram koora

maa amma idi chestaaru, andhra item

oka medium size beerakaya chaala slender ga dark green ga unte baaguntundi
peel chesi 2 inch mukkalu 1cm width undaali

oka medium size red/white onion diced

2 table spoons grated coconut dry waala

for koorakaaram:

3 endu mirchi (kaaram ekkuvante add more)

1 tb sp senaga pappu

1 tb sp minappappu washed (pottu lenidi dry)

1/2 tbsp avaalu

1/2 tbsp jeera

tamarind oka medium nimmakayanta ( you have to adjust this based on your taste)


mirchi, pappulu, avaalu, jeera konchem oil lo veyinhaali indulo tamarind add cheyali

now fry onion in little oil till translucent

ivanni + endu kobbari podi grind cheyaali not a fine powder konchem coarse ga undaali now add friend onions and grind for a 3 seconds ante onions completega paste kaakudadu.

now pan petti, little oil vesi vedekkaka, add beerakaya mukkalu 3 mins vegaka, add salt, haldi, and cover it, and cook for another 3 mins, now add the ground paste to it add some water as per the desired gravy consistancy. and ippudu complete ga anta cook ayyevaraku unchaali may be for another 10mins or so. rice thoti chaala baaguntundi.

idi basic, inka jazz up cheyali ante, you can add nuvvula podi/ palli podi to it
instead of onion , you can add small ginger peice to the masala and then grind it. then it is called beerakaya allamkaaram koora.

Beerakaya Curry

Ingredients
1000 grams beerakaya
7-8 clove garlic
1/2 tsp jeera
1 tbsp oil
1 tsp red chilli powder
to taste Salt
1/2 tsp sugar

Wash and peel beerakaya make long 2 inchec pieces.
Put one kadai on gas add oil add jeera let it sputter add garlic .
Add the beerakaya pieces keep one lid for some time .Now add salt cook till all water evaporates and the pieces becomes tender.
Now add the chilli powder mix well.Goes well with roti as well as rice.

Beerakayalni peel chesi chinna mukkaluga cut chesi,onions,chillies ni kuda cut chesi pettukondi tarvatha wok lo 2tb sppon oil vesi popu pettandi tarvatha onions,chillies veyandi fry akkayaka konchem gingergarlic paste and turmeric powder veyandi then beerakaya mukkalani kalipi konchem salt vesi lid tho cover cheyandi oka 15-20 min then mukka konchem methaga ayyaka dimpe mundara paalu poyandi ala paalu poasaka oka 5 min unchi kothimeera veyandi.karam add cheyam kanuka chillies saripada veyandi.

oka vela chillies lekapothe/nachakapothe beerakaya mukkalu vesaka konchem saripada kaaram and dhaniyalapodi vesthe kuda baguntundi and same process last lo paalu poskovadame

Nenu Karnataka style chestanu...kodiga long procedure but i like it this way...

Beerakay
Onions
Garlic
Cococut- couple of spoons
Coriander leaves
Dhaniya - 2 spoons
Peanuts - 3 spoons
Turneric Powder
Jaggery
Chilly powder
Salt
Tamarind Paste - a spoon

Beerakay, onions and garlic ni chop chesi pettuko...Dry roast peanuts and dhaniya and powder them. Grind cocnut and coriander leaves. Turmeric Powder,salt, chilly powder and jaggery ni tamarind water lo mix chesi pettu...
Heat oil and do the popu..Fry garlic and onions...onions fry ayaka add beerakay. after few minutes, paste kuda vesi fry chey...cook until beerakay is done...

nenu illa chestanu
beerakayani peel chesi chinna pieces ga cut chestanu, onion kuda cut chesi pettukovali in a pan add 3spoons of oil and add popu then onions ivvi koncham fry ayyaka add beerakaya mukkalu add salt according to ur taste and i add some suger (approx 1 spoon for one long beerakaya) then close the lid and let it cook for almost the 3/4th of beerakaya and add karam to that according to ur taste and let it cook completly.. off chese mundu konni palu add chesi baga kalapali and cook for 2-3mins and off it

Beerkarya Thokku Pachadi

Ingredients:

beerkaya cheku 2 beerkaya
coriander seeds--1 tsp
jeera --1tsp
garlic --big one clove
tamarind--konchem juice
coconut pieces - small piece
kothmir little
chana daal --1tbspor little less
green chillies --according to ur spicy ness 2-3

Method:
dry fry coriander seeds keep side
then in little oil fry chana dal and keep side
beerkaya thiga thesesi paina cheku grate chesi pakkana pettukondi
wash it then cut into small peices
put little oil in pan fry these pieces till they become dry keep side
now grind chana daal jeera garlic coconut coriander seeds green chillies to fin pwd
add beerkaya thokku little tamarind tamarind juice kothmir and grind konchem coarse texture untadhi ee pachadi kani taste is yummy

Beerakaya kura with moong dal

oil heat ayyaka avalu, jeera, ginger-garlic paste, green chillies , onions vesi konchem fry cheyali..
beerakaya mukkalu vesi, pininchi konchem 4,5 spns of moong dal vesi lid pettali..

mukkalu vudikaka salt, dhaniya powder vesi kalapali.......... currry ready

Beerakaya Chutny

Ingredients:

Beerakaya thokka -1.5 cups
gram dal -0.5 cups
red chillis - 10-12(as per ur taste)
tamarind goose berry size
salt as req
garlic peeled 3-4 flakes
oil (for frying)
mustard seeds 1/4 tsp


Steps:
1.fry with little oilgram dal, red chilli till golden brown keep aside.
2.beerakaya ni baga wash chesi thooka ni cut chesi pan lo little oil lo fry cheyali.
3.cool down them,grind to coarse paste them with tamarind, salt, garlic with little water
4.season with mustard seeds

Enjoy with rice/ tiffins
