Boil frozen ravioli in water with little salt...first salt water boil chesi apudu ravioli vesi 10 min ala boil cheyali....then theesi water strainer lo petti....next little bit oil lo pizza sauce depending on taste , salt garlic powder , red crushed pepper vesi 5 min cook chesi ravioli vesi inkoka 5-10 min co ok cheyali med paina...anthe
And oil vesi sauce vese mundu choice of vegetables add cheyachu....palak bavuntundi

Stuffed Pasta

For pasta :
300g flour ( I used 3different types of Flours wheat, spelt and Roggen ... U can take any flour based on Ur preference )
3eggs ( 1 egg per 100 g of flour )
Salt
Olive oil 2 Tbspns
Knead well ... If required add some water and Knead into a normal roti dough consistency ... Let it Rest in fridge for an Hour
For the stuffing ...
50gms fresh Cheese
100gms tuna Fish
U can use Pesto or any other mix for stuffing ... U can try on Ur own too ..
Make small puri sort of roti ...
Put the stuffing in middle
Apply water on the sides
Close the rotis into half sealing the edges
Boil water in a top .... Add Salt
Slowly Drop the wrapped pastas ... When they float, they are done
U can add Butter or make a cream Sauce to ho with it ..
The Pasta dough can be Used to make any sort of pastas ... And I roll out the dough Cut it into shapes and freeze it ... They are quick to Cook later ..

Simple spaghetti with store bought sauce

inka sauce kuda ante pack medha instructions lekapothe...add the pasta sauce to pan cook for few min adi sizzle aye varaku appudu pasta vesedame check for seasoning.

I don't make pasta that much at home. So can't recommend you on the brand of the sauce.
Vegetables antee, you can use any vegetable you like. I like bell peppers and lots of onion in my pasta but you can also add asparagus, broccoli, spinach.
Herbs antee, basil baaguntadee and parsley also. Italians ee rendu herbs baaga use chestaaru. To Indianize it us can add cilantro/kothmir and use can green chilies too, to spice it up. Red chili flakes and back pepper powder use chestaaru, spice kosam. Use liberal amount garlic too.
Today I made pasta for lunch. I was not in a mood to eat rice so simple pasta cheskunna, without pasta sauce. Sauce badalu tomatoes vesa and used little bok choy as I was discarding it. Sharing it here, in case you are interested
Ingredients:
1/2 Rotini Pasta dry/uncooked
1-2 tbsp oil (nenu measure cheyaleedu.. appox.)
1/2 medium onion diced
2 tbsp. crushed garlic
2 green chilies (vinnavi kakunda, medium size vi dorukutai kada indian store loo, avi)
1 large vine ripe tomato chopped
1/4 cup bok choy
Method:
-- Boil pasta as per the instructions on the box with little salt, until al dente. Drain the pasta and keep it aside.
-- In a pan heat oil and saute onions are translucent.
-- Add garlic and saute for a few seconds.
-- Add tomato, green chilies, salt and mix well. Cover and cook until the tomatoes are soft and mushy.
-- Add bok choy and cook for a minute or so.
-- Add pasta and mix well until the sauce coats the pasta.
-- Add about 3/4 cup (appox.) water and cook on medium - medium high flame until most of the water/sauce evaporates.
-- Adjust the seasoning and serve hot. You can pepper if it not very spice.
You can add bell peppers or any veggies you like.
I forgot to mention, deentlo sauce ekova vundau... and I don;t like too much tomato sauce anyway.. Kaavalntee, you can add more tomato. I used Vine ripe tomato but you can use any kind. Or use canned tomatoes or tomato sauce.
Also, if you like cheese, you can sprinkle some cheese on the top.

Pan lo oil vesi..crushed or finely chopped garlic vesi fry ayyaka appudu add diced onion pieces,mushrooms avi baaga sautee ayyaka then add the marinara sauce,koncham Parmesan cheese(optional) ,adjust salt and pepper to ur taste,nenu koncham karam kuda add chestha to make it spicy to my taste.

Pasta Sauce

Pasta Sauce recipe:
Canned tomatoes - pureed
onion - 1 medium finely chopped
Garlic - 6-7 cloves finely minced
Sweet Italian basil - 4 leaves finely chopped
Dried oregano - 1/2 teaspoon
Salt n pepper
1 Green bellpepper, 1 carrot - finely chopped
Tomato paste - 1 Tbspn
Water
Olive Oil
Optional - 1 spoon Cream Cheese or Parmesan cheese (1/4/ cup)
Process:
1) Sate onion, bellpepper, carrot and garlic till they become soft
2) Add the tomato puree, tomato paste, oregano, water and salt and let it come to a boil.
3) Once it comes to a boil - reduce the heat and simmer it for 15-20 mins
4) In the last 5 mins of simmer - add the cheese - mix it well
5) Adjust the salt and remove from heat
Meeku Basil and Oregano strong anukunta - takkuva adjust cheskondi

Bruschetta

ripe tomatoes cut chesi , dantlo konchem salt, pepper kalipi pettuko. Bread ki olive oil and garlic rasi, (basil or pesto kooda add cheyyachu ) tomatoes vesi 15 mins bake cheyyi. Yummy to the tummy!

Orzo

Orzo ante rice shape lo unde pasta..
Normal pasta boil chesinattu chesukondi with salt. Then Butter/olive oil lo Garlic saute chesi, then kavalsina vegs like Onions, peppers, peas, carrots and/or mushrooms anni vesi saute/cook cheyandi with salt and pepper(red pepper flakes kooda add cheyachu). Mix in the cooked Orzo and garnish with chopped basil and grated cheese of your liking. Cheese vaddu anukunta, try adding some butter or olive oil..
Oil/butter last lo vesukunte enduku better ante, Orzo is drier than normal pasta, koncham binding agent unte better.
Another preparation is to have sauteed vegs, boiled orzo with alfredo sauce.. normal marinara to Orzo antha bagundadu.

Mushroom Risotto

This is Mushroom risotto recipe( i dnt like wth chicken, i luv da taste of lots of mushrooms)
You get dried mushrooms in Chinki stores. soak a handful in boiling water for abt 30 mins. Dnt put too much water. enuf so da mushrooms u put are completely soaked. (not too less or not too much). After that you can remove the mushrooms but dnt throw away the water.
Heat olive oil and butter in a pan. Put chopped onion (1 small onion shud be enuf, too much of onion fades away da original taste anta)You need to then put lots of garlic cloves. DH maa iddari ki chesina appudu he puts abt 6-7 cloves. The quantity he makes is generally enuf for 3 ppl..so adjust accordingly. Dnt burn the garlic, just make it a little soft.
Add the Arborio rice (1 cup of rice is enuf for 2 ppl..adi maa intlo normal rice quantity kuda same. So adjust accordingly).Just coat the rice with the oil and garlic for a couple of minutes. In a separate pan (you can lso do this in the beggining and put them aside) put some butter and fry fresh mushrooms. We use Shitake and button mushrooms. We generally pick put da bigger size shitake mushrooms they taste gud.
Fry them and you get a nice smell. put some salt and pepper to it.Saute for a couple of minutes and add them to the rice.Cook for another 2 minutes. Now add the dried mushrooms and fry again for 2 minutes. Make sure you have to keep stirring to not get it burnt. Add the rest of the water from these dried mushrooms. (use it like stock, it will be thick in consistency unlike plain water after u have soaked the dried mushroom in them for 30 mins.
**At any point in time if the rice becomes dry add water or stock.
Now when that water is reduced to almost nil add Stock ( my husband uses chicken stock, tastes better than veg stock).
Dont pour eveything at the same time,pour little by little. And make sure as and when it gets drier add stock. After 20 mins..you will feel the rice is cooked. Dont over cook or under cook. It shud not be like a paste or it shud not be crunchy.
Once you feel its done. Add a little grated parmesan, chooped parsely andbasil leaves to it.
Also, add a little pepper and salt at this stage after tasting.
* Add salt at the end becoz the stock you are using may already contain salt.
Enjoy the Risotto. If you like it let me knw :)
Sorry forgot to mention if u want chicken Risotto..jus fry chicken along with the Mushrooms. Put in the chicken first and then after a few minutes add the mushrooms.
That is the only addition.

You have to add some pesto sauce just abt 2 tea spoons and like half cup cream to it around the end. before you put the parmesan and everything.

Pasta is very simple to make. Meeku pasta sauce dorikithe its well and good
Pasta ni boiling water lo 10mits cook cheyali. U can easily know if its cooked r no. Add some salt while cooking.
Cut onions and capsicum into bite size pieces.
IN a pan heat little oil and add these veggies and cook. Now add pasta sauce, cook till oil looses.
Now add heavy cream or half and half and bring it to boil.
When it thickens add the cooked pasta and mix well.
If u like cheese add cheese at the last before serving.
I loike to add some green chilli paste too with veggies, it gives slight indian flavour and some spicyness too.

Pizza with Self Rising Flour

u can make pizza using tht flr and it actually comes out good than all purpose flr one. and i also use whole wheat flr with self raising flr in 1:1 quantity.
check for manjulas kitchen on you tube videos and u can exactly follow her instructions to make the base...i have tried couple of other recipes too, but this one was the best of alll!!
as for the topping and tomato sacue u can mrinara sauce at home using fresh tomatoes or canned tomato paste....this comes out really tasty believe me
mrinara sauce kosam u have to first heat oil and then add some chopped onions and minced garlic to it. once they r done u can add the tomato paste with some salt and pepper and finely chopped basil leaves.
and also use mexican blend cheese, it is a mix of 4 types of cheese and is also bit spicy and i love it. and also there is one type of cheese tht is barbecued..i mean it has tht taste and i use these two types of cheese at home when making anything.
also put some finely chopped basil leaves with toppings...they give a real nice flavor to the pizza and i just love this home made pizza. my daughterl oves it too and now rarely asks me for pizza when v go out

and also use mexican blend cheese, it is a mix of 4 types of cheese and is also bit spicy and i love it. and also there is one type of cheese tht is barbecued..i mean it has tht taste and i use these two types of cheese at home when making anything.
also put some finely chopped basil leaves with toppings...they give a real nice flavor to the pizza and i just love this home made pizza. my daughterl oves it too and now rarely asks me for pizza when v go out

1 small capsicum, half carrot, half onion, small tomato...1garlic pod ivi mixie lo grind cheyyi, put one tsp oil in pan and saute this paste, pachi vasana poyaka, add two glasses of water and 1 sp salt, boil ayyaka add pasta, cover and let it cook, cook ayyaka, oka cheese slice add chesi stir and simmer for three minutes and serve...

Garlic Bread in Microwave

Its very simple.
take any bread and spread little butter on bread slice.
Sprinkle garlic powder or rub fresh garlic on bread and microwave for 1 mit on each side.
Tastes yummy.

nenu pasta ila chestha
First kettle lo water boil chestha, then pour the hot water in a vessel with pasta add some salt and let pasta boil for a while... koncham tender avaganey stove off cheseyali
simultaneous ga inko pan lo add oil, then add thinly sliced onion, once onions chg colour add choice of your vegetalbes (I add carrot, green pepper, beans etc)... once vegetables are nearly cooked add pasta sauce (I use store bought tomato & Garlic), will leave the vegetables to boil in the sauce for some time and then add drained pasta... leave it on the hob for around five minutes to get the sauce absorbed and serve hot!

chinna cooker untundhi kadhaa andhuloo chesthaanu direct gaaa... oil vesi chopped onion fry cheyyalee koncham... next ginger garlic paste vesi mix chesi chopped tomatoes vesthaanu, spices add chesthaanu tharuvaatha (coriander powder, a bit cumin pwd, black pepper, chilli pwd, basil pwd, etc... annee use cheyyanu prathi saari i keep changing the combinations to get different tastes).. indhuloo for every 1 cup of pasta i add around 1 and 1/2 cup of water and then salt... final gaa pasta add chesi depending on the type of pasta i'm using whistle lekundaa 9 - 14 mins steam full vachhetattu unchutaanu....
okosaari tomatoes badhulu bayata konna pasta sauce use chesthaanu... but i spice it up a bit to get the indian touch....

Pizza Base

Naa recipe as follows try cheyandi....
Pizza Base
Ingredients
2 Cups All Purpose Flour(If possible try and get Bakers Flour/ Bread Flour)
8gms Dry Active Yeast(1 Sachet) or 5gms if using Fresh Yeast
1 Cup Water(lukewarm)
1 tablespoon Sugar
1 teaspoon Salt
1 teaspoon Pepper
1 teaspoon Dry Oregano
10ml(2 Tablespoons) Extra Virgin Olive Oil
Process
1) In a bowl, Mix Lukewarm water, sugar and yeast and set aside covered for 10 mintues or until the mixture froths up to alomst double its volume.
2) Then sieve the flour and add salt, pepper and oregano to it.
3) Slowly add water and mix the dough to bring it together. Add the olive oil.
4) Knead it for 10-15minutes till the dough is well mixed and oil is well incorporated. The dough can be a little moist but not to wet. if it too wet then add a little flour. It should be smooth.
5) Leave it covered in a warm spot for 1 hr or till the dough doubles in size.
6) Once dough has risen then remove it onto a lightly floured surface and knead the dough till knocked back to almost its original amount.
7) Roll in smooth sraight moves to desired shape of baking tray and once on baking tray apply a little more olive oil.
8) Top with whatever ingredients you want and bake till the base is light golden colour.
The above recipe should make 2x8inch bases if rolling thickly....but if rolling thinly it should easily make 2x10inch bases.
I sometime add a Tablesppon on fine Semolina(Sooji/bombay rava) to give the dough some texture.

[one more thing... the properties of flours vary because of various climatic contions like humidity, heat, cold etc....I have given a recipe that works very well in a very varied climate like Melbourne, Australia....extreme cold winters and bizare summers...so check out accordingly for timings to let dough rise etc

pan thesukuni oil vesi little jeera vesi then onions veyyandi.avi konchem vegaka........veggies add cheyyandi.veggies konchem vegaka,pasta add cheyyandi.just oka two mins vunchi....pasta sauce kuda add chesi oka 2 table spoons konchem antha kalisetattu thippandi than oka 5 mins vunchi stove off cheseyandi.
meeku pasta sauce istam lekapothe.....u can use tomatoes and vatini konchem boil chesi puree chesukuni add chesukovachu.
nenu ekkuva knorr pasta sauce use chestha.Ippudu Loyd Grossman anta adi thecha.....meeru select chesukune tappudu tomato and basil combination di thesukondi.adi aithe bagane vuntundi.

Mostly mana Indians ee sauce nachutadi. I dont find it in all grocery stores...though.

Minestrone Soup

I tried this recipe from net last week and it came out very well....
Ingredients
* 3 tablespoons olive oil
* 1 cup minced white onion (about 1 small onion)
* 1/2 cup chopped zucchini
* 1/2 cup frozen cut italian green beans
* 1/4 cup minced celery (about 1/2 stalk)
* 4 teaspoons minced garlic (about 4 cloves)
* 4 cups vegetable broth (Swanson is good *note: Do not use chicken broth!*)
* 2 (15 ounce) cans red kidney beans, drained - i used 1 can only
* 2 (15 ounce) cans small white beans or great northern beans, drained - i used 1 can alone
* 1 (14 ounce) can diced tomatoes
* 1/2 cup carrot, julienned or shredded
* 2 tablespoons minced fresh parsley
* 1 1/2 teaspoons dried oregano
* 1 1/2 teaspoons salt
* 1/2 teaspoon ground black pepper
* 1/2 teaspoon dried basil
* 1/4 teaspoon dried thyme
* 3 cups hot water ---- I used more water for thinner consistency.
* 4 cups fresh baby spinach
* 1/2 cup small shell pasta
Directions
1 Heat three tablespoons of olive oil over medium heat in a large soup pot.
2. Saute onion, celery, garlic, green beans, and zucchini in the oil for 5 minutes or until onions begin to turn translucent.
3. Add vegetable broth to pot, plus drained tomatoes, beans, carrot, hot water, and spices.
4. Bring soup to a boil, then reduce heat and allow to simmer for 20 minutes.
5. Add spinach leaves and pasta and cook for an additional 20 minutes or until desired consistency.
6. Makes about eight 1 1/2 cup servings

I prepare pizza in the following procedure..it came very well when ever i prepare..try it for your self....if you already have a pizza base then follow he recipe from the 3rd para
Ingredients:
11/2 cup maida
1/4 cup water or more..acc to ur need
1spoon sugar
1 spoon salt
2spoons oil
11/2 table spoon yeast
Method:
1.first yeast ni oka ten mins water lo vesi unchali..then take 1/4 cup water and warm it..then take maida..add sugar,salt and oil ,yeast and warm water and mix the maida and knead it well like chapathi dough..cover tho dough with a cover for 2 hrs and dont disturb the dough in the middle let it be like that..then it will raise into double size and very fluffy
2...then take pizza pan ..apply some oil to the pan spread the dove with ur hands or chapathi pin around the pan in the equal consistence..oka chota lavu ga oka chota sannaga undakudadhu...ends lo mathram konchem laavu ga unchukovachu..thats ur wish..
3.then spread Tomato puree..or pasta sauce..or marinara sauce...which ever u like..then add Mozarella cheese and spread all over the dough...and add the toppings....then keep it in the oven 400 degrees for 15 to 20 mins...( time varies acc to the oven)ayindo ledo theliyaka pothe oka fork teesukuni oka sari podichi chudandi..fork clean ga vasthe..oka 3 to 4 mins unchi teseyandiInko important vishyam ammayiluu...self raising flour use chesthe pindi kalipesinaaka 2 hrs ala unchakkarledu..direct ga sauce ..cheese avanni vesesi pettayochu oven lo..
