Taco Shells

Taco shells tho ila chesedaani...

Canned pinto beans ni blender lo green chillies tho coarse ga blend cheyali. Finely cut onions saute cheskunaka, add these pinto beans and taco seasoning mix(u wull get it in any grocery store..i use ortega brand) and saute for sometime. Taco shell lo bottom most layer is this beans...then top with some chopped tomatoes, lettuce, jalapenos and some cheese. Bake it until the cheese melts...

Serve it with sour cream and taco sauce(Taco bell sauces lo use chestham..)

Custard cheyataniki, I would recommend Weikfield. I tried several brands and several flavors. Weikfield Vanilla flavor is the best!

Radish, Turnip, Beets curry

yeah radish, turnip, beets same to same oke laaga curry chesthanu. 2-3 types chesthanu depending on my mood. 

type 1: wash, peel and cut into small cubes, boil them until soft with salt, drain water, (reuse water in rasam or drink with lil pepper). In a pan, do the thalimpu with curry leaves, add these cubes mix well, adjust salt and chilli powder simmer it for 5 mins and serve.

type2: same as above, in the end add some grated cocunut and if you like add some frozen peas while simmering.

type3: same as above, instead of coconut, add some pappula podi, or peanut powder or kura karam whatever you like. for radish add nuvvula podi, it gives extra taste. beets and turnip any powder gives taste. 

i do this, you can cut into cubes or grate them finely or if you have a food processor do the long julienne type. 

I once added grated paneer to my beets curry (running low on beets and had some leftover paneer) it actually tasted good, but again it depends on your taste buds. 

I once had leftover senagalu from varalaksmi vratham perantam, so added that in my beets curry again taste buds, my taste buds are so co-operative they will like if it has a edible food tag to it.
 
last but not least you can do the stuffed parathas with all the 3 the same way like muli paratha.  

oops forgot to add one more variety, wash, peel, cut into cubes, boil with salt, drain water. In a pan do the thalimpu (u can skip if you are not a fan of thalimpu, my dh is!!!) add finely chopped onions, fry them until translucent, then add finely chopped tomatoes, cook them until soft, add dhaniya, jeera powder, add a pinch of mustard powder, then add chilli powder, give it a stir and wait a min before adding boiled beets/turnips. if it is too dry, add a spoon of thick yogurt beaten smoothly, and simmer until the yogurt gets cooked and the curry is dry but not burnt. you can garnish with cilantro ( i dont do it always, depends on my mood and time) and serve hot with rice or roti. :-)

Girls, I am sure most of you would be using Ragi in some form or the other I was kind of lazy making it... camplo 4 days different energy smoothies ichaaru and loved them all... Ragi was extremely simple and filling...

Soak almonds at night 4 or 5, peel them,
make oats into powder - 1 or 2 spoons
Ragi powder - 1 or 2 spoons
Jaggery

bring water to boil and boil oats for a couple of minutes, a bit of jaggery, almond paste and once it is done, add ragi powder mixed in water and bring it to boil once... cool it a bit and have it.. simple

I also make ragi java..instead of soaking alomonds every day i grind diff nuts at once like almonds pista cashews walmutrs and put one spoon powder to the boiling mixture..i feel its easy and replace jaggery with agave necter some times..Adding oats powder is something new to me ..thanks for sharing

Beerakaya Royyala Kura ~ Ridge Gourd Prawn Curry

Nenu aite ela chestanu.
Tomatoes chopped 1
Beerakaya pieces 2 cups
Shrimp/ royyalu 10
Onion 1 medium chopped
Mustard seeds 1/2 sp
Senaga pappu 1sp
Salt, pasupu and chili powder
Garam masala 1/4 sp
Curry leaves 4
Green chili 3

Method:

Oil lo curry leaves, senaga pappu musratd vesi koncham fry cheyali.
Then add chopped onion and slit green chilies.
Golden browm vachaka add beerakaya pieces . Oka 5 minutes tarvata tomato veyali.
Ee lopu oka pan lo 1/2 sp oil vesi raw royyalu vesi koncham pink color vache daka cook cheyali.
They loose water so need not worry.
Beerakaya and tomato maggaka shrimp vesi baga kalapali.
Now add salt, pasupu and chili powder.
Anni baga undike daka unchi last lo garam masala and chopped kothimeera vesi okasari kalipi teseyali.
Vedi vediga tinte chala bavuntundi.

nenu ila chestanu

mundu shrimp ni salt, karam, pasupu and little ginger garlic paste and about 1/2 tsp oil vesi cook chesi pakkana pettukovali.(do not add any water)
Fry  onions and green chillies, then add the chopped beerakaya and fry for 5 mins and add the cooked shrimp along with li'l salt,karam and garam masala (a pwd of cloves, ilaichi , cinnamon, corriander seeds and cumin seeds). and cook till beerakaya is cooked completely, add li'l cilantro for garnish.

Drumstick with milk Method
  1. Heat a pan, add oil and seasoning then onions.
  2. Fry till golden brown.
  3. Then add tomatoes, lasoon, green chili, tumeric powder, and fry till oil separtes.
  4. Then add drumstick, chilli powder and add some water till the drumstick is cooked.
  5. Add dhania powder, cook for 2 min, and at last add milk.
  6. Cook for more 5 to 6 min, and garnish with coriander.

Capsicum Corn Masala

best way to make everyone eat brussel sprouts is to bake them. nenu sprouts ni quarters lo cut chesi, salt , pepper n oil vesi toss chestanu. sometimes i use garlic salt . I bake them in oven at 350F for abt 30min. toss them arnd and bake them again for another 20min . ee madhyalo if any leaves turn brown I take them away while tossing.

My mom makes a kura and kurma out of Brussel Sprouts.

Kura recipe is nothing but our regular kura style...

 Brussel sprouts ni guthivankaya style lo slits vesi i steam it for few minutes.
Oil lo popu vesaka, garlic and onions fry cheyali. Avi fry ayaka inka add sprouts and tomatoes. 
Spice lo coriander powder, jeera powder, turmeric powder and kura karam add chestha.
This kura goes very well with roti. 

Amma kurma/curry kuda chestadi but recipe telidhu :(

Capsicum Masala Rice

I usually fallow these steps for capsicum masala rice.

Here is the procedure..
Ingredients:
  1. Cooked rice – 3cups
  2. Capsicums -2 (big size)
  3. Ghee/oil – 2tsp
  4. Curry leaves – few
  5. Salt to taste
  6. Roasted peanuts for garnish.
Masala powder:
Roast the following ingredients in ghee and grind them into a powder along with grated coconut.
  1. Red chillies – 3 to 4
  2. Coriander seeds -  1 tsp
  3. Cumin seeds – 1tsp
  4. Urad dal – 1tsp
  5. Cinnamon stick -1″
  6. Peanuts – 2tsp
  7. Grated coconut – 1tsp
  8. Ghee(clarified butter) – 2tsp
  9. Lemon juice – 1tsp(optional)
Method:
  • In a wide bottom pan heat oil /ghee,add mustard seeds and curry leaves.
  • After the mustard starts spluttering add capsicum pieces and cook for 5min.(Do not over cook the capsicum)
  • To this add the above ground powder , salt and mix well.
  • Reduce the heat and add the cooked rice and combine with the mixture and salt well.
  • Turn off the stove ,add roasted  peanuts at the end, mix well and serve with  raita or any gravy of your choice.

Food to take for camping

Grills vuntayi kada general ga...i would suggest try some easy to grill stuff like corn, pineapple, paneer etc...burger patties tesukoni velli you can make burgers too... but you will have to carry ice chests for cheese, patties etc....naku ive thattayi... i haven't been to camping but guessing grilling will be natural choice...

To take: Grill (usually campsites lo grills vunattyi kaani charcoal vadaali. Memu first lo ave vaadevalamu kaani appudu appudu weather baagokapothe problem.,..sarigga flame undadhu and charcoal chaala time padthndhi. So memu oka chinna gas grill konnamu..$20 ki walmart lo..last 3.5 yrs nunchi adhe vadthunnamu.

Ice chest - Make sure meeru general ga fridge lo pette items anni ice lo pettali..so cheese, meat, eggs, veggies, drinks. Nenu anni boxes or ziplock bags lo petti chest lo pettesthaanu

Food - Meeru non-veg thintaaro ledho naaku teliyadhu...nenu usually chicken marinate chesthaanu night before or early that morning (chopped garlic,chilli powder, oil, lemon juice, turmeric, tandoori powder). I prefer boneless chicken thighs or chicken tenders. Breast naaku nacchadhu.
I also make ground turkey patties for burgers. Koncham garlic,salt and chilli powder add chesi, mix chesi ice chest lo pedthaanu. You can also take hotdogs.
Inka chips, bread, fruits+salad ki veggies, cookies, water, soda, corn, potatoes.
B'fast ki I take boiled eggs. Velle mundhu eggs boil chesi oka box lo pedthaanu. akkada morning grill on chesi koncham heat chesukuntaamu along with bread. You can also make maggie. Single burner stoves vunatyi you can take that if you have kids. Oka saari maa niece ni thuskuni vellamu..she was 1 yr appudu. Thanaki milk heat cheyytaniki..inka water boil cheyyataniki her mom bought a small stove. Memu appudu b'fats ki pancakes vesukunnamu.

Fish Fry

kaarapakaaya ki.... aavapindi use cheyyamu just uppu, kaaram, pachhi sanagalu (brown vi), peeled garlic pods, oil, pasupu, mango pieces vesi mix chesukoovadamee... maamidikaaya juice and oil loo naanaalee kadhaa sanagalu, vellullipaaya so koncham time paduthundhi avi naanee taste set avvadaaniki..... we have to keep mixing this for every 3 - 4 days annee sarigga ooraaleee antee....

Recipe:
Basmati Rice - 3cups
Onion- 1
Raisins - 3 tablespon
Dalchina, Garlic pods - 5,
Ghee - 1 cup
Turmeric powder - 1/2 spn
Sugar - 2 spn
salt to taste

Procedure
Soak rice fo r20 min In a pan heat ghee fry chopped onions nd spices add enough water and let them boil thena dd raisins, half fried cashew nuts, , turmeric powder, sugar, soaked rice and let it cook. Avanthi....edi ekkuva spicy ga undadu ani expecting so u can try Mirchi ka Salan....or instead of mirchi u can use capsicum or brinjal in the same recipe...Chole kooda manchi option anipistondi....

Stir Fry recipe

na stir recipe chala simple ra...

I use red capsicum, green capsicum, onions, tofu, mushrooms( U can add other veggies, like carrots, beans, baby corn etc)

In a pan add some olive oil or normal veggie oil, let it heat up, add onions, green chillies( acc or spice level), ginger, garlic, let it fry for a few min, add the veggies along with tofu and fry for a few min. Add soya sauce, I use garlic chilli paste , hoisin sauce,salt and cover it with lid, let the veggies become tender but ensure they have that crunchy texture...at the end I add some haberno sauce for spicy taste and eat it anthey!!!

be careful with the salt coz soya sauce also will ve some salt in it!!!

Onion Rasam

I use ghee for rasam poppu...

In a vessel, add ghee after a few sec, add mustard, jeera let it splutter add ginger, garlic, onion ,curry leaveslet it fry until the raw smell goes, add tomato and fry for few more minutes, ensure u keep in medium or low flame, add rasam powder( pepper powder if u want to) add water, salt and bring it to boil , then add tamarind paste and let it boil in low flame for sometime, adjust salt and also if u want more rasam powder u can add to.. atlast add corainder leaves and serve..

sometimes I add mint leaves too along with onions!!

forgot while frying onions add hing too!!
