Vankaya pachadi with mango

Sorry kudaraledhu mundhu post cheyadaniki . Cut eggplants in to medium size pieces, Add oil in a pan , add Jeera, eggplant pieces , red chilis, green chilis (to your taste) , peanuts, raw mango pieces(tamarind bhadulu mango vesanu pulupu ki) , ginger, garlic , curry leaves vesi few mins fry chesaka stop the stove and grind in mixer. Grind chesetappudu I break the quantity in to two portions. one baaga softga grind chestha ..denilo I add cilantro and salt and one koncham one pulse raanistha that way koncham texture vuntundhi roti pachadi laga . Once its done combine both and put tadka/popu with chanda dal, urad dal, chils, cilantro, garlic, curry leaves, 4 methulu . Adi add chesaka u can add raw cut onions if you prefer and taste chala baguntundhi. anthe simple. ma garden lo vankaya chethlu vesam so week antha edo oka kotha experiments chesthunna

Mango Kulfi (no cook)

1 cup mango pulp(kesar use chesa)
1 can condensed milk

1 pack heavy whipping cream
15 badam coarsely ground
elaichi pwd
2 bread slices ni side brown part teesi mixie lo pulse vesi keep aside, adding bread to get texture..
2 spoons sugar
mixie lo add all wet items and grind for a min, add all dry items and mix...moulds lo vesi.. paina garnish ki malli badam pwdr..
 freeze overnight done..

Bottom layer - graham cracker crust and honey. Rendu mix chesi pat it down. Butter kuda use cheyachu.

Middle layer - Whipped topping and mango pulp - rendu mix chesi layer cheyali

Top layer - mango pulp.

Mamidikaya Charu

here's the recipe for mamidikaya charu:
Same normal charu lane chesta except that tamarind badulu mango vestam.
Take water in a vessel and add mango paste/grated mango/chinna chinna mukkalu kuda add chesukovachu. Quantity should be as per your taste. Koncham ekkuva untene taste baguntundi. Then add little jaggery, 1tbsp charu podi(Tur dal, dhaniyalu, miriyalu, jeera, red chillies powder), pinch of turmeric, salt, kothimeera and curry leaves. Bring it to boil and then add tempering with fenugreek, jeera, mustard, red chillies and hing. Deentlo you can add dal and it becomes pappu charu. You can even add tomatoes, bendakaya, drumstick. It tastes awesome and splly summer lo chalava kuda. Nenu summer mottam tamarind avoid cheyadaniki try chestanu.

Ide charu you can make with lemon also instead of mango. Procedure anta same except lemon juice stove off chesaka veyali. Hope I'm clear!

Mango Cheese Cake

Mango cheesecake FB lo vuntadi. Only thing I wud tweek next time is...replace honey with sugar and add lil castor sugar to the middle layer.

Receipe tweaked as per Visa Puvvada :
2 whole Graham Cracker sheets (finely ground)
1 tbsp melted butter/margarine
2 tsp sugar
1/2 slab of cream cheese (4oz)
1 tub of lite whipping cream
Mango pulp (fresh or canned)


For Bottom Layer:
2 whole Graham Cracker sheets (finely ground)
1 tbsp melted butter/margarine
2 tsp sugar
Combine and add to the glass. Press, so that it compresses to form a solid layer. Don't press too hard..

 For Middle Layer :
1/2 slab of cream cheese (4oz)
1 tub of regular whipping cream
Mango pulp (according to taste)
Some Sugar
Whip the cream cheese, till it is soft and fluffy. Combine the whipped cream, sugar and mango pulp and mix well. More mango pulp can be added, depending on how strong you want the mango flavor. Add the mixture to the glass and freeze for 1:30-2 hrs.

3. Top layer:
Mango Pulp.

Add mango pulp and refrigerate. Put it in the freezer 30 mins before serving. I frozed these because i had to carry to a different place and I kept it outside for 3 hrs and they became normal.. Ee pina mesaurements tho oka 30(2 ox) cups cheyochu..



this is one of the easiest recipes.. Asalu chala simple and easy ga aypothundi.. i felt better than a deep fried dessert..

first 2 hrs freeze chesi.. mango pulp vesi 30 mins fridge lo pedithe chalu... as nenu vere vala intiki carry chesthuna kabbati.. nenu 2 hrs freeze chesi.. mango pulp vesi malli freezer lo petesina.. so it was easy to carry..

nenu allumium tray lo petti.. allumium wrap tho motham tray ni wrap chesi freezer lo pettanu and alage carry chesanu and akkadiki vellaka i opened the foil and left in tray.. dinner munde i arranged in that platter.. nenu pina rasina receipe ki 30 cups avthayii..

The ingredients quantity is fairly flexible..so taste and add accordingly. Off late I started adding pectin to the mango pulp that goes on top..that way it sets firmly and easier for transportation. You can add gelatin too..but its mostly from animal source and its a problem for vegetarians.

Mango Nut Bread

I added a wee bit more oil and couple spoons of water to get the batter consistency. Else chaala so kattiga vundindi. Mangoes ekkuva sweet levu..manchi sweet ga vundey mmangoes tho chesthey inka baaguntadi anukuntuna :) Happy baking..chaala easy recipe:)

For 25 medium sized sour mangoes ki.... 1 Kilogram ginger, 1 kilo gram garlic... peel and grind to a paste.... ee paste ni oil loo baagaa fry cheyyaleee... till the raw smell reduces.... oil bayataki vasthundhi kadhaaa antha varuku veginchaalee kaluputhu.... adugu antuthundhi kaluputhu undakapootheee... ayyakaa we have to let this cool fully... deentlooo maamulu aavakaaya ki vesukunattee aavapindi, uppu, kaaram, pasupu, koncham menthulu, oil vesukuni mango pieces thooo kalipi store chesukoovaalee.... maamulu aavakaaya kantee ekkuva time paduthundhi mukkalu ooradaaniki ee pachhadi ki...

kaarapakaaya ki.... aavapindi use cheyyamu just uppu, kaaram, pachhi sanagalu (brown vi), peeled garlic pods, oil, pasupu, mango pieces vesi mix chesukoovadamee... maamidikaaya juice and oil loo naanaalee kadhaa sanagalu, vellullipaaya so koncham time paduthundhi avi naanee taste set avvadaaniki..... we have to keep mixing this for every 3 - 4 days annee sarigga ooraaleee antee....

Bringing mango juice or pulp from India

Contributor: Gayathri Sadhu this my Aunt does this for my SIL... this is what she told me they make thick juice and they freeze it till the day of travel in a ziplock bag and then bring it here, once they come here they again freeze it for a day and then start using it... HTH!!! ya they brought it like that almost 2-3 times and its been good all the time and she was telling my mom to do it when she came... ensure that mangoes are ripe and the juice is thick!!! 2. Mango Pulusu

Mango pulusu - This is very similar to the kootu.... peel skin and cut into cubes... boil with salt and turmeric... now in a pan, take oil and do the seasoning... now add the cooked mango pieces...squeeze in tamarind juice, water, adjust salt, add grated jaggery, chilli powder, little sambar powder, and little water and cook for 2-3mins.. when its boiling reduce the flame .... mix a spoonful of rice flour with little water to make a paste and mix this paste to the mixture.... the flame shd be low otherwise rice flour will form like balls.... mix well and make sure no lumps are formed..... check the salt and other spices.... add coriander leaves...

NOTE : Instead of sambar powder ... we genereally add a spice powdeer made of dry roasted cumin+red chilli+pepper corns+dhaniya+few methi seeds
when i don't have time i simply use sambar powder

Mango kootu

I first tasted this at my friends place... they are Iyyer's and how many times I tried the exact recipe.. I cudn't match their taste.... but here's how it is done
Mango - wash the mango... without peeling the skin cut the mango... for this recipe the mango pieces are prefered in uneven sizes... and the seed ( tenka with skin) is also used... so don't discard it.. cut the mango into uneven pieces... take in a bowl... add little turmeric and salt.. and pressure cook for 2 whistles .....
meanwhile... in a blender take fresh shredded coconut+jeera+green chillies+pepper corns and make it a fine paste... keep this aside
once the mango is cooked... in a deep sauce pan, add oil and do the seasoning with urad,jeera, mustard, curry leaves and hing

... now add the mango pieces along with water... and keep boiling in medium flame... to this add the ground paste... add little more water...adjust salt and mix well.... keep it in low flame...
now beat 1/2 cup of yogurt and keeping the flame very low... add this to the mixture and mix well..... cook for 2more mins on low flame and turn off the stove.... taste good with rice

NOTE : this recipe tastes good only when the mango is sour... manchi pulupu vunte kaani bavundadu

Mango Dal

Mango dal - first boil toor dal in a pressure cooker.. peel the skin of mango.. cut into small ( not very small) cubes , wash, sprinkle lil water and cook in mmicrowave.. nenu toor dal pressure cooker lo pettetappude aa paina oka chinna bowl lo ee mamidikaya mukkalu kooda pettesta... koncham methaga avutayi mukkalu... thts ok for us.. some ppl don't like the mango pieces to be mushy.. they like them as it is... if u also want the mango pieces to hold their shape and still be cooked... cook it in microwave..

now in a pan, take oil and when it is hot.. do the tempering with urad, jeera, mustard, curry leaves, hing, dry red chillies and few slit green chilles.... (u can also add garlic pods if u want) once they are done... add lil turmeric and mix and to it add the boiled mango pieces... mix well and now add chilli powder .... let it boil for 2mins and add the cooked toor dal .... mix all well and add salt.... let it boil for another 2-3mins... adjust the consistency by adding water... I usually retain the water from the mango's and use it in the end... finally add chopped coriander leaves

NOTE : if the mago is not sour enuf... u can add lil tamarind juice

Mango Pie

Mango Pie........Easy and tasty
Ingrediants :
Mango Pulp - 1/2 Tin
Cream Cheese : 8 oz
Unflavoured Jelatiin - 2 sachets
Sugar - As per taste
Pie crust : 9 oz
Milk - 1 cup

Method:
Warm milk for 1 min in Microwave, pour two sachets of jelatine powder and mix it.(Don't worry if it has any lumps, it would get mixed when we blend them)
Keep it a side and now take a mixing bowl pour mango pulp add cream cheese, sugar and jelatine mixture and mix it thoroughly with a hand blender or mix it in a food processor.
Now no lumps everything should be mixed well.
Pour the mixture on the pie crust. close with the pie lid and refrigerate it for 2 hrs before serving.

Raw Mango Pachi pulusu ~ Mamidikaya Pachi Pulusu

ala konchem sweet ga vunte mamidi kaya pachi pulusu cheyochu.

oka bowl lo water teesukuni mamidi kayani vunchi boil cheyali. adi challaraka mamidi kayani squeeze chesi juice teeyali. daniki konchem water add chesi, salt, green chilli pieces, onions finely chopped, sugar (according to your taste) vesi kalipi tadka add cheyyali. chala tasty ga vuntundi rice loki.

Raw Mango Pachadi

Sweet raw mango
You can make pachadi with it.

Mango peel chesi, grate cheayli. Grated mango ki, chili powder, salt, koncham methi powder vesi mix cheyali... then tadka vesi, grated mango mixture loo kalapali.
