Aloo kurma

 aloo korma..i usually cook directly in hawkins..
take cooker, add oil, add whole masalas(clove, cinnamon, cardamom n bay leaf), fry and then add onions cut longitudinally and green chillies, add salt n cook till onions are soft, add GG pa
ste and fry till raw smell goes, here i add peeled potatoes(raw) cubed.. fry for a min and add tomatoes again big pieces only..add lil garam masala, red chilli pwdr n turmeric, fry and add lil water.. put whistle and cook for 2-3 whistles..meanwhile soak 5/6 cashews in warm water..when they become lil soft mixie lo add 1-2 green chillies, 2tbsp grated coconut and cashews n lil water n make a fine paste.. once the cooker lid comes off, add this paste and mix and cook for 4-5 more mins, consistency chuskoni add coriander and done

Parwal Aloo Curry

Parwal aloo recipe 
Parwal 1 lb 
Aloo 3 big or medium
Method: This is typical orissa style. Cut parwal into halfs and aloo into big slices.Add little salt and turmeric to the chopped pieces. Fry aloo parwal in 4 tbspn of mustard oil ;( if u don't have mustard oil can use regular cooking oil, in most oriya dishes we use mustard oil)shallow fry) once fried take out from pan keep aside.In the same pan add jeera, bay leaf, clove, cardamom, cinnamon ( each spice only 1 quantity)soon add chopped onions( one big onion )2 green chillies.Fry well then add 2 tbspn of ginger garlic paste. Add salt and turmeric, fry well then add fried parwal and aloo and one chopped tomato.Now add jeera, Daniya powder, chili powder sauté ,Cover it cook few mins , then add 2 cups water( I usually add boiled water) Cook 10 to 15 mins or until it is done. Finally add 1 tspn Garam masala ( mine home made)to the curry cook 2 to 3 mins or until our gravy consistency,switch of the stove.Yummy parwal aloo curry ready.

Dumpala Karam

Potatoes ---cut them into equal pieces (not too small) and par boil them for 7-8 mins with salt ...drain and let cool , add g-g paste, finely chopped green chillies, finely chopped curryleaves, finely chopped cilantro (around a tsp), finely chopped onion, karam, garammasala , dhaniya pwd , salt (little),pasupu, rice flour konchem, besan konchem, pinch of chaat masala mix them well with just enough water ( a couple of drops just so the mixture sticks to the aloo but doesnot cover it completely) and heat oil and deep fry till golden brown and meanwhile heat 1 tsp oil and fry chillies, curryleaves and add the fried potatoes and toss ...serve as is or with ketchup or with rice, rasam or sambar ...mast untadi

Ujvala Kiran: Mee stuffed kakarkaya chesanu, too much ga vachindi. I baked it and asalu kakarkaya tinnattu ledu. Thanks a lot. Now I can malke my fav kakarkaya without adding a drop of oil. Nenu stuffing ki konchem water esi kalipanu and bake chesanu. I used only besan.. Yummy. Thanks a lot for the recipe

Nenu 350 meeda 25-30 mins bake chesintanu. Kinda rack lo pettanu because Paina rack to maa hubby polenta bake chesaru. So I thought since the oven is on, I might try it ani. Prep time kuda 10 mins apttindi and since it is baked, I didn't have to spend time near the stove to cook it. Try cheyandi, meekey telustundi.

Potatoes boil chesi mash/ small pieces cut chesi pettukondi, boil peas and carrots, keep aside. then jeera, curry leaves, mustard seeds talimpu vesi, fry chopped onions and green chillies, to this add turmeric, salt to taste karam and garammasala pwd fry for a min or two add the boiled veggies and some cilantro and mint leaves and cook for about 3-4 mins , squeeze lemon juice or add amchur pwd. let cool completely and use

Potato Curry with Dill

Nenu aloo fry and pappu lo vestanu.

First dill leaves ni cut chesi oil lo baga fry cheyali till brown them add potato to it and cook as normal.

Dal lo kuda same baga brown aayedaka fry chesi use cheyali.

Potato Curry for Masala Dosa

For dosa u can make aloo curry like masala dosa in restaurants .it taste very gud

Boil the potatoes,peel the skin and temper with chana dal uradh dal,jeera and mustard seeda.chana daal should be more in quantity.Then add finely chopped onions,green chillies .Wait till they transculent and then add potatoes.make sure it should not be too mushy.potatoes and onions should be of equal quantity.Like one big onion for 4 medium sized potaoes.Garnish with coriander. u can add minced ginger too. This curry is very yummy and goes well with dosa. i love it..

dis is how I do..
Potatoes ni boil chesi mash chesi vunchali..Oil lo jeera,mustard,urad dal vesi fry ayyaka add cut green n dry red chillies to taste,curry leaves nacchithe broken cashews,let them fry now add thinly sliced onions,add salt to taste,turmeric pwd and fry till onion turns light brown,now add the mashed potato,mix well,if u want u can add gree peas to this,inka potato masala neeku entha thick/thin ga kaavalo dani batti u can adjust water...
Adding Garam Masala n Lemon juice is optional...naa mood batti ivi add chesthu vunta..

potato, senagapappu (chana dal), onions, green chilli paste or green chillies, salt, lemon juice (optional), regular seasoning items

first potato boil cheseppudu oka chinna bowl lo chana dal kuda boil cheyandi.
to a pan add oil, seasoning vesi avvi fry ayyaka, add green chillies, saute for a min and add onion (onion length wise cut cheyyali), onion chala ekkuva vesthey same hotel curry taste vasthundhi. onion transculent ayyaka add boiled and cut to size potato pieces, then add salt and last lo lemon juice if req. koncham gravy laaga kavali antey oka potato manchiga mash cheyandi vesey mundhu.

Mixed Lentils Vegetable Vada ~ Garelu

Weekend variety ga variety garelu/vada try chesanu....

Split chickpeas - 2 cups
Moongdal - 1 cup
Sabudana - 1 handful
Rice - 1 handful
Soya beans - 1 cup
Rajma - 1/2 cup
Ginger - 1 inch piece
Green chillies - 4 or more if you like it more spicy
Potato - 4 peeled and grated
Carrot - 2 grated
Salt - to taste

Split chickpeas, Rajma, sabudana, rice, soya beans, moongdal anni mundu roju night soak cheyali. Next day rice, ginger, chillies and sabudana baga paste laga grind cheyali.
next grind the remaining dals coarsely. add salt and grated carrot and potato to the mixture. Make vadas and deep fry them on medium heat. a dip lekunda yummy ga vunnayi.......

Aloo Dum Biryani

In this recipe I used mixed vegetables but you can use only potatoes. Here is the recipe link

If you think that recipe is a little complicated, try this recipe.. You can substitute eggs with potatoes. U can use raw potatoes and cook it until potatoes are tender.
