Veggie Chettinad

veggies - cauliflower,potato,carrot,beans half cook cheyali
tomato puree
chopped onions
spices
fennel seeds
cinnamon
clove
elachi
red dry chilly
-above spices ni dry fry cheyali..grind them along with fresh coconut into smooth paste adding water.
- oka pan lo oil vesi onions small pieces cut chesi fry cheyali. then tomato puree(just grind tomatoes) add cheyandi..koncham cook ayaka salt+turmeric+grinded paste vesi kalapali
- veggies ni add chesi gravy loki baaga kalipi lid pettali..oka 5 min unchi stove off cheyali
- add curd to gravy while serving.(optional)

Vegetable Biryani

nenu vegetable biryani ila chestha, no idea about your recipes as i did not check the biryani in your blog.
Take equal quantities of
Onion, Green peas, Beans, carrot, potato, beetroot, one or two tomatoes.
Chop all the above length wise.
Green chillies as per your taste and cut length wise
Cinnamon 1/2" stick
Bay leaves - 3 to 5
Curry leaves - chopped
Coriander for garnishing (i chop these very fine)
Ginger Garlic Paste
Put oil in a pan, add seasoning, then add bay leaves and cinnamon stick. Now add green chillies saute for a min and then add curry leaves. Add onion slices and add ginger garlic paste. Once the raw smell from GG paste is gone then add all the chopped vegetables except tomatoes. Add some salt so that these vegetables start leaving some water. When you can see the veggies leaving water add tomatoes and stir for another 5 minutes. Now add water (depending on the rice you take). Once water starts boiling add washed and drained rice to it and let it cook till done.
Occassional stirring is required so that rice and vegetables are mixed properly.
Once rice is done add chopped coriander for garnishing. Serve it hot with raita

Vegetable Kofta Curry

Ingredients :
potatoes - 2
carrots - 2
Beet root - 1
Finely cut beans - 3/4 cup
Peas - 1/2 cup
Knol- Khol - 1
Bengal gram flour - 2 tbsp
Salt - as required
Green chilles - 4
Mint leaves - a small bunch
Onions - 3
Tomatoes - 4
Oil - enough to deep fry
Butter - 2 tbsp
Grind Together :
Green chilles - 2
Ginger - small piece
Cumin seeds - 1/2 tsp
Salt - as required
Turmeric powder - 1/2 tsp
Chilli powder - 1 tsp
Garam masala Powder - 1/2 tsp
Method :
1. Boil potatoes, peel and mash it. Add finely cut steam cooked vegetables.
2. Mix it together with salt, chilli paste, bengal gram flour, little garam masala powder and chooped mint leaves.
3. Make into balls and deep fry until golden . Keep it aside.
For gravy :
1. cut onions and tomatoes finely .
2. Heat butter in a frying pan, fry onions until crisp. Add ground masala and fry till oil separtes from it.
3. Pour enough water and allow the gravy to boil till it becomes thick.
4. Gently slip koftas and chooped mint leaves, boil for a minute, remove and serve.
Gravy lo onions, tomatoes grind chesi ayyina veyyachu......ala cheste tondaraga avutundi.....

Beans Fry

frozen beans(french cut)
frozen coconut(fresh is also good)

deforst beans, take oil in the put onoins fry 4 some time
add gg paste,daniya powder,and mirchi,add beans fry untill it dry
take out to bowl add kaju on it.

Recipe 1:
Spicy bean fry ante..i follow the below. andaru chese lagane chestanu..kakapote..garlic vesi...as below..chala baguntundi naku aithe..and spicy too (just like goru chikkudu fry)
I boil the beans with little salt and water till they get are cooked well. And drain the water once they are done.
In a pan, add oil, season with jeera and karivepaku ( okkosari popu kuda veyanu) add these boiled beans.
While they are getting fried, i make the fresh garlic powder by grinding 3,4 cloves of garlic, salt and chilli powder ( chinna rolu lo nooresta).
When the curry is fried well, Add this karam to the curry, mix and off the heat.
Recipe 2: With carrots...looks colorful.
i make very small pieces of beans and carrots. boil them. in little oil, fry both of them together for 10min and then add salt, chilli powder and dry coconut powder after completion of curry.
