Mixed Dal ideas

Question : Girls monna ma ayana ni toor dal temmante mixed dals techaru adenti ante five vunayyi better emo ani techanu anta 🙆 danilo toor dal, urad dal, chana dal, masoor dal, moong ( anukunta not sure ) dal vunayyi .. denini deniki use cheyagalanu ?! Pls help .

 Usha Rao : panch ratan dal cheseyu. It should be fine. I did mix 5 dals but sometimes I mix 2-3 varieties of dal to make dal. Normally o don't add ginger and garam masala but for mixed dal ginger vestanu and pinch garam masala or in tempering whole garam masala. Vada should also taste good. Again I never tried with 5 dals. But I think it would taste fine

Meera Girija Tadimeti: Panchmel dal chesta and I use whole urad gota with skin. Konchem pasupu vesi Hawkins cooker lo cook chestey baga ostundi. Baga cook ayyaka jeera, 1-2 cloves, lots of thinly sliced garlic, endu and pachi mirchi, sannaga tarigina onions vedi nooney and neyyi kalipi popu veyyi. Popu vesaka salt vesi, let it simmer for at least 30 mins. Almost dal makhani laga baga cook aitey neeku foam radu. Ala baga chikkaga ayyaka, konchem amchur and home made or punjabi garam masala vesi kalapali. It tastes really good. Key ingredient is lot of cooking, garlic and the good garam masala

Charu with homemade Charu Powder

already andaru cheppinattu unnaru kada rasam recipe nenu naa version postuta which I learnt from my mom. Amma charu/rasam ki chala mandi fans unnaru.

1st I make charu podi and store. It's made of 1cup turdal, 1cup dhaniyalu, 50 gms of jeera and black pepper, approx 20-25 red chillies. I use little more black pepper as I like the flavour. Dry them and powder little coarse.
Now take a lemon size tamarind and soak it in water and extract pulp. Add some more water to this. Water quantity varies according to the sourness of tamarind. Allow it to boil while u add diced tomatoes, salt, small piece of jaggery(optional), 2tsps of the powder, curry leaves and coriander. I usually don't add dal to my charu. If I add I'll add about 1cup of Tur dal boiled and the procedure is same but it'll be called pappu charu in our house. After it is boiled give it tempering with fenugreek seeds, jeera, mustard seeds and red chilly. If you like u can add hing orelse garlic and mix it to the charu. It's very tasty and is more like a clear soup😛
If you want to avoid tamarind u can do it completely with tomatoes or u can add dry/ fresh mango or just boil it without tamarind pulp and after u off the stove, add lime juice. All are equally tasty.

For sambar powder I also add fenugreek seeds about 3/4th cup and a fistful of channa dal and powder it. Then procedure is same like pappu charu except that we boil veggies and dal qty is more.

Collard Greens Pappu

Collards pappu recipe adigavu kada .. Collards pappu same bachali pappu laga cheyallli .. 7-8 big collards leaves 1 cup toor dal ki saripotayyi ..Just stems tessi.. pieces kinda cut chessi , add 1 cup dal, 1/2 onion ,3/4 green chellis and pressure cook .. oka 3-4 whistles vacahkka ...after cool down .. add tumeric, salt .. then add poppu (oil, Mustard seeds, iguva, zeera, garlic , red chilies ) .. Last loo 1 tsp lemo juice(optional) add chestha baguntadhi .. iron absorbing kuda panichesthadhi ..

Sambar

here u go veggies any of ur choice , if u want ve hotel sambhar add carrots, beans, potato, onion tomato else if its just 1 veggie like raddish

1) add veggies along onion tomato with turdal turmeric salt and pressure cook it for 3-4 whistles
2) in a vessel add oil then mustard jeera n 2-3 methi seeds red chillies , curry leaves and fry it few mins and then add some onions n let it fry add hing
3) add the dal veggie mixture , add sambhar powder ( I always use homemade sambhar powder, mom sends it if u want the recipe for that I can ask mom n let u know)
4) let it boil , then add tamarind paste or or tamarind water and let everything boil n mix let it simmer
5) u can adjust by adding sambhar powder if u want it more spicy n adjust salt
6) garnish with coriander leaves
U can also do the poppu at the end and then add it to the sambhar

2)add onions,carrots,beans,potato and sorakay(must) avi koncham maggaka dal +tomato puree add chesi,salt,pasupu,sambhar powder,koncham karam and jaggery vesukoo
3) koncham chinthapandu ni nanabetti juice teesi add cheyali meeku kavalisina pulupu ki saripada add chesukondi ,nenu aithe koncham chintapandu rasam vesi oka tomato kuda chinnaga cut chesukuni addd chesthanu
4) baaga marignchukuni kottimeera vesi dinchesthanu guest vachinappudu extra taste kosam last lo serving bowl lo sambhar vesi ghee tho malli popu vesi paina vesthanu look wise baguntundi ani .

I do it in this way......I have a carriage type cooker in which there are 3 cups....oka cup lo rice, oka cup lo dal and 3rd cup lo all veggies,,,, all together I cook for 3 vessels so all are cooked at a time ....then I grind the boiled dal to make a paste. Then, take kadai, do popu/ tadka, then add this ground toor dal to it, then add the boiled veggies over it , add the tamarind juice, little bit Jaggery, 1 spoon mtr sambar powder ( I use ready made ones if u want u can also use home made ones), add 1 spoon dhaniya powder ( my mom made this and gave it to me ). Keep boiling all this and add salt and atlast add cilantro leaves............................thatz it finished.

my mil does it this way and chala chala baguntundi taste....same Harini Krishna process ee but kandipappu 1 cup aite pesarapappu, senagapappu and minapappu kuda almost 1/4th cup to 1/2cup each fry chestaru. Anni without oil ee cheyali. Inka end lo curry leaves kuda dry fry chestaru just dry ayyela ante, colour change avvakudadu. It gives very nice aroma.

Inka charu podi aite amma is famous for charu in our families
Dhaniyalu 1cup
kandipappu 3/4 cup
Miriyalu 1/2cup(u can reduce it if u don't prefer it's spice)
Jeera 1/4 cup
Red chillies - fistful
Anni manchiga endabetti powder cheyadame, need not fry. Inka charu pettinappudu we use asefotida(hing) also in tempering (only menthulu, jeera and mustard, red chilly)

Mixed Dal ~ Vegetable Dal

i do like this :
open pressure cookerlo, first dal foam antha poye varaku openga cook chestanu; pina foam form avutu untundi kadaa, adi antha remove chesestanu; meanwhile, vegs(dosakaya/sorakaya, 1 onion, 1 big tomato, 2 green chillies) anni cut chesukuntanu; dal 80% cook ayipotundi ee lopu;
first, onions add chesta; okka 2 mins cook ayyaka, inka migata vegs,and lil bit tamarind add chesi, pressure cooker lid petti, weight petti, 3 - 4 whistles ranistanu;
stove off chesi, pressure poyaka, lid open chesi, salt, red chilli powder, [konchem sambar powder add chesta (my dh's req idi :P)] kalipi, tempering vesta, okka 5 mins simmerlo open lid tho cook chesta;

Nimmakaya Pappu Charu ~ Pappu Kattu

Nimmakaya Pappu Charu

Ingredients:
Toordal : 1/2 cup, Lemon : 1-2 ( as per ur taste), salt - to taste, green chilles - 2 /3 ( as per taste), Ginger - finely chopped ( a small piece), curry leaves, oil for tadka

Procedure:
1) Boil the toor dal and after it is cooled , add some water and blend it to a smooth paste in a blender.
2) in a vessel add the dal mixture , add some water ( conistency should be thin)
3) And then add finely chopped ginger, green chillies, salt
4) let it boil for 15-20 mins.....
5) add Tadka in it.
6) After turning the stove off, add the lemon juice.

Mango Dal

Mango dal - first boil toor dal in a pressure cooker.. peel the skin of mango.. cut into small ( not very small) cubes , wash, sprinkle lil water and cook in mmicrowave.. nenu toor dal pressure cooker lo pettetappude aa paina oka chinna bowl lo ee mamidikaya mukkalu kooda pettesta... koncham methaga avutayi mukkalu... thts ok for us.. some ppl don't like the mango pieces to be mushy.. they like them as it is... if u also want the mango pieces to hold their shape and still be cooked... cook it in microwave..

now in a pan, take oil and when it is hot.. do the tempering with urad, jeera, mustard, curry leaves, hing, dry red chillies and few slit green chilles.... (u can also add garlic pods if u want) once they are done... add lil turmeric and mix and to it add the boiled mango pieces... mix well and now add chilli powder .... let it boil for 2mins and add the cooked toor dal .... mix all well and add salt.... let it boil for another 2-3mins... adjust the consistency by adding water... I usually retain the water from the mango's and use it in the end... finally add chopped coriander leaves

NOTE : if the mago is not sour enuf... u can add lil tamarind juice

dil leaves cut chesi pappu tho paatu udaka pettali....popu lo minappapu, aavalu, jeelakarra, endu mirchi, inguva vesi. mirapakaayalu, karivepaaku veyyali, vegaka dal with a lemon size chintapandu pulusu...baaga kalisaka pasupu, uppa, karam....almost dal tadka laage...

kaani pesarapappu veste ekkuva udikinchakarledu...

Kandipappu Patoli Curry

seasoning tadka - mustard,jeera,urdal dal,chenna dal,curry leaves
process
- kandiapappu ni coarse paste la grind cheyali adding green,red chilly and jeera. add salt while grinding
- vere pan lo ekkuva oil vesi talimpu/tadka vesi onions fry ayyaka grinded coarse paste veyali.fry cheyali until done..
- goes with rice..

Sambar Powder

My Sambar powder recipe
this tastes somewhat close to Sarvana Bhavan sambar

Toor dal - 1cup
urad dal+chana dal - handful
Raw Rice - handful
Corainder seeds - 3/4-2 cups
Red chillies - 8-10 (depending on ur spice level)
Methi seeds - 1tsp
pasupu kommu - 1 (optional) tastes better with this
cumin - 1tsp
pepper corns - 1/2tsp
saunf/fennel seeds - 1tbsp

Dry roast all the above individually till golden brown and then make a smooth powder. Hope this is helpful.
