Vegetable Soup

Vegetable Soup - this is a very easy soup and you can throw in any vegetable you like. I don't like store bought stocks so I use bouillon cubes. Maggi vi chinna cubes vastunai, each box has 20 cubes and those cubes are just perfect for when making a small pot of soup. I have seen only chicken and beef flavors. Vegetable flavor loo vastundo ledo teliyadu. But you can use any other brand or just use stock. There is the recipe...
Ingredients:
1 – 2 tsp. Oil
1 – 1 ½ tsp. Ginger Garlic Paste
4-5 Button mushrooms diced
1 small – medium Carrot sliced
4-6 Green Beans cut into 1 – 1 ½” pieces
1 tender Celery sliced
Handful of Moong Beans Sprouts or canned White Beans (opt)
1 small Tomato chopped or 1 – 2 tbsp. tomato Sauce (opt. I did not use it yesterday)
3-5 small Cauliflower Florets cut into small pieces (I did not use it yesterday)
Handful of Kale or Spinach chopped (I used kale yesterday)
1/8 tsp. Pepper Powder (adjust to taste)
¼ tsp Salt (adjust to taste)
1 mini cube Bouillon
2 cups Water
Cilantro chopped
In a pan heat oil and sauté ginger garlic paste for few seconds.
Add all the vegetables except sprouts, kale/spinach & cilantro. Sauté the vegetables for 2-3 minutes until veggies are lightly roasted. Add tomato sauce, salt & pepper and saute for few seconds. If using tomato, cook for a minute until tomato is soft and mushy.
Add water, bouillon and bring the water to a boil. Let it boil for a minute or 2 until the vegetables are cooked, especially cauliflower if using.
Add sprouts and kale/spinach. If using kale cook for 2-3 minutes until kale is cooked. If using spinach cook for 1 – 1 ½ minutes. Add cilantro turn of the heat and serve.
Again, you can use stock instead of water+bouillon.
Tomato is optional usually do not added it as I usually add tomato to almost all the curries I make. So I leave it out in the soup. If there is any left over canned tomato sauce, I add a little.
Also you can add vegetables to your preference. I usually add lots of vegetables as it is filling.
Sometimes I also add some diced onions along with other vegetables

Microwave Spicy Tofu Salad

These are approximate measures.. type chestu approximate quantity rasanu.. I might have added more spice too, as it was very spicy and did not need to add any dressing to the salad
1 pack extra firm tofu (cut into 32 cubes)
1 tsp. chili powder
1 tsp. ginger garlic paste
1/2 tsp. garam masala
1/2 tsp. tandoori powder or tikka masala forgot what i used, i think used tandoori masala
little bit of lime juice
salt
1 - 2 tbsp. oil
Mix all the ingredients and marinate for 30 - 60 minutes. Taste the tofu and adjust seasoning according to your taste
Arrange tofu in a micorwave safe plate and microwave for 2 minutes. Flip the tofu and microwave for another 2 minutes. Either flip or toss the tofu and bake for another 3 - 4 minutes tossing them every 1 1/2 minutes. Total microwave time is 6 - 8 minutes.
For salad, some lettuce, carrots, cucumbers, red onions or veggies of your choice. Mix all teh veggies, ad the tofu and drizzle some extra virgin olive oil. My tofu was quite spicy so I did not use any dressing or vinaigrette for the salad.
I once tried this tofu with cubes of firm tofu, that is precut tofu cubes. Those cubes were quite small and microwaved for 3 - 4 minutes turning the pieces every 1 1/2 minutes.

Bone Soup ~ Paaya

nenu eppudu try cheyyaledu ra coz it is like 8 hrs of cooking but one of my tamil friend made it for me while I was pregnant with Anshika, edo paya soup tagalani undi ante tanu chesukoni vachindi potluck ki... I remember she first fried on the gas first, like nippulu meda kalchutamu kada first aa trotters nee kalchi then she added so many items, I don't even remember bu yes she did add coconut milk which gave unique flavor and smoothness to the soup.... but on of my hydbadi food blogger who's recipes I can vouch for is Zaiqa.net, anni authentic recipes when comes to hyd mutton recipes.... you can try that!! http://zaiqa.net/2008/12/nihari/

mushroom soup: i use half box mushrooms, 1 onion, 2 pods garlic, 1-1.5 cups milk,pepper pwdr, butter 1 tpsp pr olive oil, i prefer olive oil, 1 tbsp all purpose flour..
first finely chop mushrooms n onions n garlic..pan lo olive oil heat chesi add garlic, avi colour change ayyaka, add onion..cook till they turn transparent, add the mushrooms, avi water antha ooze aitayi kada, then i take out some mushrooms out, arnd 2 spoons or so..inka aa migith mix lo add maida, fry it for some time, add the milk,take care no lumps are formed..milk koncham boil ayyaka switch off the stove, let it cool and blend this, then again pour this bc into the pan, let it boil, chk for consistency, u can add milk or mari thick anipisthe waater, season with salt n pepper n the 2 tspoons of mushrooms we had reserved earlier..

Ingredients List: Barley cooked(pressure cooked),peanuts roasted,aloo cut into small sqaures, (any veggies like carrots,peas alaa meeku nachithe vesukovachu) ,fresh grated cocnut,kothimeera,karivepaku....and thadka items..jeera,musterd seed must migathavi meeku nachithe vesukovachu.....try this ammailu naakaithe baga nachindi...barely is healthy tooo...please let me know if you like it too..
Barelu ni mundu cook chesukovali koncham water tagginchi posukunte better...( koncham sticy ga vuntundi Khicdi saboodana la podi podi ga vundadu..) first tadka: oil(Ghee tastes bettter kani nenu oil vesthanu) lo( chanadal,urad dal optional)l, jeera,musterd seeds,green chillies ivanni vesi veyinchaka...cut chesina potatoes vesi koncham sepu magganivvali...you can add onions if you like....potato vundikaka cooked Barely andulo vesi koncham sepu magganivvali andulo roasted peanuts mari powder la kakunda grind chesi pettukunnadi vesi...paina kothimmera karivepaku vesi mix chesi serve cheyyadame...karivepaku munde vesukovachu I forgot to add that.....ooops fresh coconut marchipoya...

Bone Soup

nenu goat (mutton) bones tho chesta. In the link below I used toor dal but it can be skipped.

The other version is without toor dal & veggies. It has liberal amount of ginger garlic paste & cinnamon. Oil loo bay leaves, cinnamon, cardamon, cloves, shah jeera or jeera veyali.. then saute onions followed by ginger garlic paste. Then coriander powder, green chilies (opt), chili powder, salt turmeric and garam masala powder (cardamom+cloves+shah jeera+black pepper+cinnamon) vesi baga kalapali. Then add bones and fry them nicely for about five minutes. Then add tamarind paste or juice and mix well. Required amount of water posi pressure cook it. Pressure release ayyaka, check it for taste, adjust seasoning, cilantro vesi few minutes maraganichi remove form heat.
Tamarind badalu tomatoes kuda veyachu. Before adding bones, add tomatoes and koncham mushy ayyaka, bones vesi follow the rest of the steps.

Garden Vegetable Soup
