Cooking Rajma & Chole

Overnight soak chesaka.. nenu koncham salt vesii pressure cook chestha.. (2 is good, 3 is like maxx.. ) ... anthakanta ekuva mataram cheyakandi.
I make the gravy seperate.. and add the cooked chole/ rajma and boil it for a few minutes to get the masala's soaked into rajma/chole. Hope this helps

ya, Rajma enta overnight soak chesi cook chesina gattigane untundi. For getting the perfect tenderness u have to pressurecook it till u get atleast 7 whistles...nenu alane chestanu and it comes very well...idi nenu tv programme lo vinna tip :)

Rajma overnight soak chesaka(min 10 hrs)....oka chinna cloth lo whole masalas(cloves,dalchini,elaichi) oka mutalo katti andulo vesi,allam mukkaluga cut chesi vesi...5 whisltes ayyaka oka 20 mins sim lo unchi off cheyyandi...chaala mettaga udukutundi..remove the cloth befoe u start cooking in a pan for the gravy..........R u using dark coloured rajma BTW.....use light colored.instead.......dark colour ila chesina kuda palukuluga untundi......
Chole.......idi kuda soak chesi...oka mutalo tea pwd or leaves katti.andulo vesi above procedure laaga udikinchandi...u will get a nice colour and gravy kuda ruchiga untundi chole vesaka...

Mixed Lentils Vegetable Vada ~ Garelu

Weekend variety ga variety garelu/vada try chesanu....
Split chickpeas - 2 cups
Moongdal - 1 cup
Sabudana - 1 handful
Rice - 1 handful
Soya beans - 1 cup
Rajma - 1/2 cup
Ginger - 1 inch piece
Green chillies - 4 or more if you like it more spicy
Potato - 4 peeled and grated
Carrot - 2 grated
Salt - to taste
Split chickpeas, Rajma, sabudana, rice, soya beans, moongdal anni mundu roju night soak cheyali. Next day rice, ginger, chillies and sabudana baga paste laga grind cheyali.
next grind the remaining dals coarsely. add salt and grated carrot and potato to the mixture. Make vadas and deep fry them on medium heat. a dip lekunda yummy ga vunnayi.......

this is the recipe i follow..and i js luv it !
soak 1cup of rajma ( i use red kidney beans) overnight or atleast 6hrs for best results
discard soaked water and pressure cook soaked beans in 3-4cups of fresh water with pinch of salt for 4 whistles.
fry 1 star anice, 1 inch cinnamon and 3 cloves in 2-3 tbl spns vegetable oil. Add 3 chopped green chillies, 1 big finely chopped onion, 2 medium sized red juicy tomatoes finely chopped..let them cook very well till oil oozes out and tomato gets fully mashed and then add the cooked beans along with water..add 2cups more water or as per consistency u like.
and then add 1/2tsp garam masala, 1/2tsp chilli powder and 1/2tsp salt , stir it well and let it cook on medium heat for 10min more.
complete with adding chopped coriander leaves !!
thr r diff variations..but for me above one clicked and i make it very frequently !

this is how I make rajma
rajma required quantity over night soak chesi water drain cheseyyali... when pressure cooking put very lil water (do not fill the whole rajma in water) three whistles vachey varaku vunchali. half cooked rajma alaney vundhi migitha half mash/grind to form a paste.
onion finely chopped
turmeric
mustard seeds, cumin seeds
ginger garlic paste
rajma masala
red chilli powder
salt
lemon juice
coriander
oka pan lo first oil vesi, thalimpu vesukunnaka add ginger garlic paste and saute it for a min or so till the rawness is gone... then add chopped onion, once onions are cooked add turmeric powder. saute this. then add mashed/ground rajma, pour some water if required and add red chilli powder, salt and rajma masala (add lil masala as you might need to add a bit more towards the end) when this mixture is cooked then add rest of the rajma, let it cook for some more time and before turning off the flame check the taste and add ingredients as required and add rajma masala again to get the flavour
after you turn off the flame add lemon juice (this is optional) and garnish with coriander
koncham gaji biji ga rasanu... plz dont mind... meeru ekkuva spicy thinamu ani anukuntey ganaka make the rajma only with rajma masala... it tastes very nice...
