Avacado Dip ~ Guacamole

Avacardo.. koncham ripe ayye la choodandi. Ante koncham press chesteh.. soft ga anipisthayi kada.. (marii juice la kadhu.. but mangoes manaki anipisthayi kada ala.)

Apudu skin tiseyandi, seed tiseyandi. Aa madhyalodhi antha oka bowl lo petukondi..

Add this paste to onion, tomato, green chilli, salt, some coriander (if you like few capsicum pieces) and grind them.

Koncham mukkalu thaguluthu unte bagane untundhi.. This will be nice like a dip. Chips tho.. lekapothe sandwich chesukuntunapudu ala vadukovachu.

avocado skin peel chesi, seed theesi mash cheyali baga... green chillies, red choppedonions, cilantro, salt, and lemon juice add chesi chips tho tinte baguntundi........

Usiri Pachadi ~ Amla Chutney

yea.. Anitha cheppinatte hair ki apply chesthe baguntundhi. Usiri Pachadi aithe I have to ask mom. Normal ga aithe Usirikayaluu ni outer skin tisi.. pachimirchi, uppu, slight ga pasupu vesii rubbutharu.. aa tarvatha tempering vestharu - minapappu, jeelakarra, red chillies, hing tho..
Manchidhi patyam tagguthundhi ani antaru.. kani mari Amla powder lo Ingredients choosi.. only Amla aithe ne ila cheyagalaru.. vadu inkemaina kalipithe idhi kudarakapovachu.

Instant ga tinese pachadi aithe.. curd kuda kalupukovachu aa pachadi lo.

Gobi Fried Rice

Mango Pulusu

Mango pulusu - This is very similar to the kootu.... peel skin and cut into cubes... boil with salt and turmeric... now in a pan, take oil and do the seasoning... now add the cooked mango pieces...squeeze in tamarind juice, water, adjust salt, add grated jaggery, chilli powder, little sambar powder, and little water and cook for 2-3mins.. when its boiling reduce the flame .... mix a spoonful of rice flour with little water to make a paste and mix this paste to the mixture.... the flame shd be low otherwise rice flour will form like balls.... mix well and make sure no lumps are formed..... check the salt and other spices.... add coriander leaves...

NOTE : Instead of sambar powder ... we genereally add a spice powdeer made of dry roasted cumin+red chilli+pepper corns+dhaniya+few methi seeds
when i don't have time i simply use sambar powder

Mango kootu

I first tasted this at my friends place... they are Iyyer's and how many times I tried the exact recipe.. I cudn't match their taste.... but here's how it is done
Mango - wash the mango... without peeling the skin cut the mango... for this recipe the mango pieces are prefered in uneven sizes... and the seed ( tenka with skin) is also used... so don't discard it.. cut the mango into uneven pieces... take in a bowl... add little turmeric and salt.. and pressure cook for 2 whistles .....
meanwhile... in a blender take fresh shredded coconut+jeera+green chillies+pepper corns and make it a fine paste... keep this aside
once the mango is cooked... in a deep sauce pan, add oil and do the seasoning with urad,jeera, mustard, curry leaves and hing

... now add the mango pieces along with water... and keep boiling in medium flame... to this add the ground paste... add little more water...adjust salt and mix well.... keep it in low flame...
now beat 1/2 cup of yogurt and keeping the flame very low... add this to the mixture and mix well..... cook for 2more mins on low flame and turn off the stove.... taste good with rice

NOTE : this recipe tastes good only when the mango is sour... manchi pulupu vunte kaani bavundadu

Mango Dal

Mango dal - first boil toor dal in a pressure cooker.. peel the skin of mango.. cut into small ( not very small) cubes , wash, sprinkle lil water and cook in mmicrowave.. nenu toor dal pressure cooker lo pettetappude aa paina oka chinna bowl lo ee mamidikaya mukkalu kooda pettesta... koncham methaga avutayi mukkalu... thts ok for us.. some ppl don't like the mango pieces to be mushy.. they like them as it is... if u also want the mango pieces to hold their shape and still be cooked... cook it in microwave..

now in a pan, take oil and when it is hot.. do the tempering with urad, jeera, mustard, curry leaves, hing, dry red chillies and few slit green chilles.... (u can also add garlic pods if u want) once they are done... add lil turmeric and mix and to it add the boiled mango pieces... mix well and now add chilli powder .... let it boil for 2mins and add the cooked toor dal .... mix all well and add salt.... let it boil for another 2-3mins... adjust the consistency by adding water... I usually retain the water from the mango's and use it in the end... finally add chopped coriander leaves

NOTE : if the mago is not sour enuf... u can add lil tamarind juice

Soya Chunk KEBAB

today i tried sanjeev kapoor's soya chunks kebab :D basic ga soya chunks tho cutlet lantidi baaga vachindi :d filling snack and good for kids may be :)

Soya chunks ( warm waterL ovesinavi ) 2 cups
onion half( big red one) chopped
salt, ginger small sliced ,jeera powder, green chillies(2-3) ,pinch of chat masala, garam masala , chilly powder 1 t spoon,
(He told to add tofu ) i used half boiled potato for binding
Ivvanni kalipi food processor lo okka thippu thippi :d shallow fry chesukuni Tomato ketchup tho serve chesukovadamey :D

Recipes with Sour Cream

swathi.........memu ladies mi ma appartment lo weekdays evaro okallintlo kalusthamu nd snacks chesi andaram kalisi thintaam....memu usual ga mana mango pickle untundhi kadha andhulo sour cream kalipi avi vadalu alanti vatilo thintaam nd it tastes good....also manaki tortilla chips untayi kadha like bowl shape lo vatilo sanna kaarapoosa+chopped onio+chopped tomatoe+kothimeer on top of this add sour cream nd have it tastes very tasty

l normally do mushroom curyy like this

First in seasoning i add one by one clove,cinnamon(the spices which ever u like),curryleaves,greenchillies,onions,mushrooms,tomatoes,salt,pepperpowder,coriander powder.after 5 mins i add 2tbsp of sour cream depnding upon the gravy quantity and let it boil for 5 mins and simmer until oil leaves behind anthe mushroom curry is ready heheheh

u can use any vegtable curry whatever u prefer inka aloo aithe masth taste vasthundiiii nenu eppudu sams lo pedda dabba kontanu sour cream di friends get together appudu must ga vesthanu.

Cucumber Dip

You can use sour cream in cucumber dip.

1. peel and grate cucumber
2. add salt, and a finely chopped green chili
3. add sour cream
4. mix well

eat with tortilla scoops. sour cream antha fatty stuff aina pakkana fresh cucumber thintam kada - ado self satisfaction :)

this tastes very good...

Soft Chegodilu

Methatti Chegodiluu : (Soft ga untayi)

Ivi.. maa native place (Srikakulam) lo koncham famous.. I got hooked onto them when I first tasted them as a teenager (ante nenu koncham junk ekuva tinta :P ) .. So, monna amma valu vachinapudu Amma made at home. It was sooo yummy, Keshav ki kuda chala nachindhi. So.. evarikaina snack kavali ante.. idhi oka variety ani chepthuna.

Ingredients :
0.5 cups of rice flour
0.75 cups of sooji
Salt , red chilli powder, hing, water

-- Boil 2.5 cups of water.
-- In the water, add salt, red chilli powder, hing. Koncham salt and spice should be slightly on the higher end while adding in the water (like for Upma).
-- Once the water boils, add 0.5 cup of rice flour, 0.75 cup of sooji and stir continously.
-- Simmer the flame and place a lid.
-- If the mixture gets too tough, sprinkle some hot water.
-- Turn off the stove and let the mixture cool for some time.
-- Now, roll them like you do for Chegodilu.. Though, this has to be a bit thicker than the ones done with plain rice flour.
-- Fry them with a medium flame until golden brown.

They will be softer because of sooji and a bit crunchy because of the rice flour. These are best when eaten fresh. Next day ki they become soggy. Hope I was clear. Evarikaina emaina doubt vasthe adagandi. Picture attach chesthuna.. so that you get a lil idea of they look like.

Dill Dal

nenu last week dill leaves dal chesanu...original recipe lo pesarapappu vadali....maa athagaru pesara pappu tinaru ani kandi pappu tho chesanu....

dil leaves cut chesi pappu tho paatu udaka pettali....popu lo minappapu, aavalu, jeelakarra, endu mirchi, inguva vesi. mirapakaayalu, karivepaaku veyyali, vegaka dal with a lemon size chintapandu pulusu...baaga kalisaka pasupu, uppa, karam....almost dal tadka laage...

kaani pesarapappu veste ekkuva udikinchakarledu...

Potato Curry with Dill

Dill leaves chala vagaru taste smell vastai.
Nenu aloo fry and pappu lo vestanu.

First dill leaves ni cut chesi oil lo baga fry cheyali till brown them add potato to it and cook as normal.

Dal lo kuda same baga brown aayedaka fry chesi use cheyali.
