Badam Kheer

here goes the recipe .I didn't update in my blog.. Mee kosam I'm giving the recipe
Badam 1/2 cup
Milk- 4 to 5 cups
Saffron few strings
Condensed milk or fresh cream(1/4 cup)
Sugar1/4cup(I added less sugar)
Cardamom 2 to 3

Nenu badam whole night soak chesi,morning oka bowl lo water boil chesi,andulo ee badam vesi 2 mins taravatha remove chesi running cold water lo 2 mins unchi tisthe u can get out the layer of badam( u can easily take out the skin)You can take badam just soaked in hot water just 1 hr instead soaking whole night)

Procedure:
Now grind the blanched badam into smooth paste.Use milk while grinding instead of water.
Boil 4 cups of milk in a deep bowl,keep stirring it till the milk reduces little bit.
Soak saffron in warm milk(take around 4 to 5 tbspn of milk)
Add fresh cream or condensed milk at this stage
Now add grounded badam and saffron milk.
Keep stirring without getting burnt in a slow to medium flame.
Add sugar,crushed cardamom keep stirring slowly
Inka anthe ready to serve..refrigerate few hrs,gives awesome taste.
Note: u can use extra milk if u think it is too thick.
I added cream instead of condensed milk.

I added few strings lastly and refrigerated few hrs ,awesome taste

Avocado or Tofu Chapathi

Avocado or tofu chapathi : Mash avocado ,add lil salt ,pepper and if you want some lemon and then add chapathi floor mix it , if needed add water and mix like regular chapathi dough and Roll chapathis . Adults ki Guacamole ( mashed Avacado, Onion, cilantro, tomato, salt, lemon, green chilli ) lo chapathi fllor mix chesi cheyochu . Tofu also same mashed tofu lo chapthi floor.

Mamidikaya Charu

here's the recipe for mamidikaya charu:
Same normal charu lane chesta except that tamarind badulu mango vestam.
Take water in a vessel and add mango paste/grated mango/chinna chinna mukkalu kuda add chesukovachu. Quantity should be as per your taste. Koncham ekkuva untene taste baguntundi. Then add little jaggery, 1tbsp charu podi(Tur dal, dhaniyalu, miriyalu, jeera, red chillies powder), pinch of turmeric, salt, kothimeera and curry leaves. Bring it to boil and then add tempering with fenugreek, jeera, mustard, red chillies and hing. Deentlo you can add dal and it becomes pappu charu. You can even add tomatoes, bendakaya, drumstick. It tastes awesome and splly summer lo chalava kuda. Nenu summer mottam tamarind avoid cheyadaniki try chestanu.

Ide charu you can make with lemon also instead of mango. Procedure anta same except lemon juice stove off chesaka veyali. Hope I'm clear!

Basundi in Slow Cooker

Here is the recipe -
1/2 gallong whole milk
3/4 cup blanched sliced almonds, powdered
1/4 cup pistachios powder
1 cup sugar
1/4 - 1/3 tsp. cardamom seeds powder

Milk slow cooker loo 7 hours high meeda cook cheyali. Stir it once in a while.
Add powdered nuts powder, sugar and cook it for another 3 hours.
Nenu 3 hours cook chesa but felt 2 hours would have been sufficient. Nadhi konchem thick ayyindhi but taste was good. 45 minutes before konchem saffron vesa. Last 2-3 hours konchem every 15 - 20 minutes kalapali.

Milk boiling point ravadaniki almost 1 hour patindhi. I felt stove top piana boil vachaka slow cooekr loo veste oka 1 hour cooking time takkuva avutundhi ani.

Palli Podi ~ Peanut Podi

pachallu teleedu kaani annam lo thine podi ok ante cheptha - palli podi.
saute peanuts, red chilis.
First grind peanuts to powder with skin (due to fiber),
then grind red chilis
and then cumin and garlic together.
Mix everything along with salt..
evaina left overs like cumin garlic mixture or red chili powder edaina curries lo veseyyandi..

nenu ee recipe follow ayya. 10 red chilies vesina koncham karam takuvunde.. So added about 2 -3 tsp. chili powder. It was little on the milder side but baagunde.. Ante mana kura laa ga garam masala ghatu leekunde but it was still good. Oil 8 tbsp vesa. Also, I cooked it little longer than what he mentioned. It took longer to cook the meat. Flax Seeds Podi

Gals I made flax seeds podi and turned out well.

Flax seeds - 1/2 cup
Peanuts - 1 tsp
Sesame seeds - 1 tbsp
Gulla senagapappu - 1 tbsp
Dry red chillies 6-8 (to taste)
Garlic 1 or 2 as per taste
1 tsp. Jeera
Salt - as required

Dry roast all ingredients and grind into fine powder. Goes best with rice and good

Collard Greens Pappu

Collards pappu recipe adigavu kada .. Collards pappu same bachali pappu laga cheyallli .. 7-8 big collards leaves 1 cup toor dal ki saripotayyi ..Just stems tessi.. pieces kinda cut chessi , add 1 cup dal, 1/2 onion ,3/4 green chellis and pressure cook .. oka 3-4 whistles vacahkka ...after cool down .. add tumeric, salt .. then add poppu (oil, Mustard seeds, iguva, zeera, garlic , red chilies ) .. Last loo 1 tsp lemo juice(optional) add chestha baguntadhi .. iron absorbing kuda panichesthadhi ..

Pandhu Mirchi Chutney

pandu mirchi ki ite ila chesi chudandi..onion, tomato sannaga cut chesi oil lo popu vesi ivi rendu baga cook ayyedaka vunchi ,pandu mirchi pickle kalapandi...dosa or idly lo ki peanut/putnalu chutney to paatu idi kuda serve cheyandi...

Nenu pandumirapakaya pachadi tho ila chestha

Pachadi, perugu , konchem bellam and vellulli kalipi grind chesestha .. Ratio andaaz ga vestha .. Then temper it with mustard ,jeera ,garlic ,inguva ,curry leaves ,senagapappu .. Chala tasty ga untundhi .

And second method ila chestha

For 3 -4 big spoons of pandumirapakaya pachadi ki chepthunna .. Ratios meeru change chesukondi as u need according to ur taste

Take Tomatoes 3-4 small ones or big ones aithe just plan accordingly . Now just fry them like you do for normal tomato chutney with a lil salt and cover with lid , avi baaga soft ayaka , then grind that with pandumirapakaya pachadi along with raw garlic and lil bit jeera . Them tempering malli same as the above one . Idi entha yummy ga untadi aithe ... Mmmm mmmmm mmmmm try cheyandi .. Inka vere pachadlatho kuda ilane Evo experiments cheyochu .. Just give it a try .
