Carrot Kheer
Nenu ela chesa, I don't know if it called kheer but I named it kheer. I grated carrots & cooked in milk.
1 lb or 2 ¾ loosely packed grated carrot
3-4 tbsp (approx. could have used more) Ghee
8-10 cashews
Few Raisins
1 can evaporated milk fat free
½ - ¾ quart milk (1 %)
⅔ - ¾ cup sugar
¼ - ½ tsp, Cardamon seeds powdered
Heat ghee in a pan and saute cashews & raisins until golden brown. Remove it and keep it aside.
In the same ghee, saute carrots for about 3-5 minutes.
Add evaporated milk, milk and bring the milk to a boil. Reduce the heat and let it simmer until desired consistency.
Add sugar and cook a little longer.
Add cashews & rasins, crushed cardamon powder.
Evaporated milk leka pothey, add more milk and boil until require consistency is reached. OR you can use wither 2% or whole milk for richer kheer.

3 large carrots
1 can evaporated milk
2 cups milk
handful of badam
sugar 8-10 tsps
ghee.3tsps
kissmiss,cashews
finely chopped walnuts and pistas
in a pressure cooker add ghee and put cashews after they turn slightly brown add kissmiss ,take them out in a small cup in remaing gheee add chopped carrots and fry for 5 mins till the raw smell goes,add 1cup of milk and cook for 3 whistles.
in a non stick pan add evaporated milk and remaining 1 cup of milk and let them boil ,meanwhile puree the carrots along with handful of badams.when milk is boiling add the purred carrots and mix them ,add sugar acccording to ur taste,.let it cook until they get boiled and switch off.let it cool and keep in fridge while serving add chooped nuts
