kakarkaya fry
nenu kakarkaya fry chesta.. usa lo dorike kakarkaya baga thick skin untundi kada along with 2 much bitterness..so i trim skin of it to make even fry.
- kakarkaya chinna chinna pieces ga chop chesta.
- pan lo oil vesi kakarkaya fry chesta. half done ayaka chopped onions vesta.
- salt vesta.once fry is done add red chilly powder and some sugar.
note - sugar vesina inka cheduga anipistundi kada if u like try this way. kakarkaya pieces ga chop chestaru kada appudu curd lo veyandi. koncham sepati curd lo nunchi teesi squeeze cheyali. bitterness pothundi a curd tho..heard this tip from a friend. i never tried..nenu sugar add chesta ante..
- kakarkaya taste ga undali ante oil ekkuva padutundi....

Nenu kakarakaya fry frozen vati thou chestha
u just defrost wash the pieces and squeeze out the water
koncham yekuva onions padatayi deeniki
put oil in pan fry the kakarakaya peices till 3/4 th done
and then add the chopped onions add salt turmeric and chilli pwd
fry till everything is cooked
dark brown colour vache variki fry chesi last lo sprinkle with
some sugar

nenu mention chesinattu karela pices ga cut cheyi by removing the seeds nd then deep fry them in oil....ila chesthanu nenu nd i never add any jaggery or sugar but i don't get any bitterness in the curry....only thing is deep fry the pieces nd then add some extra onion ala chesthey the curry wont taste bitter at all

Naa kakarkaya fry : Karela ni baga china china pieces la cut chesukovali.. (like potato for deep fry'ing).. adhi koncham buttermilk to oka 5 mins petti .. oil lo fry cheyali.. koncham pachi vasana poyaka salt vesukovali.. inka cook aipoyaka.. koncham senaga pindi veyyali.. senaga pindi vesii.. koncham adhi goldish brown color vachinapudu karam vesi.. koncham hing kuda vesukunte baguntundhi.
Senaga Pindi maa amma vesedhi.. maybe bcz of that epudu naku kakarikaya ante virakthi raledu chinapudu nunchi kuda. Taste baguntundhi..
Buttermilk vvala chedu pothundhi.. ekuva sepu em akarledu.. just cut chesukunaka.. oil pan lo heat aye antha varaku kuda chalu.
Hing gives a nice aroma.. :)

Nenu ninna nee chesa kakarkaya kura.
Ingredients:
4 kakarkayas
1 medium sized onion chopped
1 ginger garlic paste (you can use just crushed garlic also)
1 1/2 - 2 tsp. coriander powder
1 1/2 tsp. chili powder (adjust to taste)
Salt
Turmeric powder
1 tbsp rosted sesame seeds & 2 -3 tbsp roasted peanuts ground to powder (sometimes only sesame powder ee vestaanu but yesterday rendu vesa)
3/4 - 1 tsp sugar (brown sugar or bellam can also be used)
Cilantro to garnish
Preparation:
Karkaya nee light ga scrape cheyyu, so that those thick horny skin comes off. Eee step I skip most of the time. Naaku baddakam lee.
Cut the gourd as you like.. I usually slice them into thick rings. Koncham yogurt, salt, turmeric & tamarind (this is optional yesterday I skipped it) & some water vesi cook cheyyu. Once it is tender, remove from stove. Drain the water, if there is any and squeeze the bitter gourd to remove as much juices as possible and keep aside.
In a pan heat oil and saute chopped onion.
Add ginger garlic paste and saute until the raw smell is gone
Add coriander powder, turmeric powder, chili powder, salt and mix well.
Add cooked bitter gourd and saute for 5- 10 minutes until it is nicely fried.
Add sesame & peanut powder and cook for few for minutes until powders mix well with the gourd.
Just before turning off the heat, add sugar and cook for 2 minutes.
Garnish with cilantro and serve.
You can add less or more sugar to adjust the bitterness of the veggie.
Grated kakarkaya fry:

edhi kuda baanee vundi.. /i made it once. Koncham pani eekkuva but the taste was not bad. Here is the recipe link
I like kakarkaya.. That vegetable is bitter and no matter what you do, it has a little bit of bitter taste to teh curry and I love it the way it is. Meeku chedu anipistee, add more sugar/bellam
Another Recipe:
Vidya cheppinattu kakarkaya pieces deep fry chestee kuda chedu potundhi. My MIL use to cook it that way.
She use to cut kakarkaya into four pieces, lenght wise and then cut each piece into 1 1/2 " pieces. OR she use to cut them into thick circles, atee slices but very thick, about 1/2 - 1" thickness.
She use to deep fry the pieces in oil and keep aside.
In a sperate pan, koncham oil heat chesi, finely chopped onion or onion paste saute cheyali.
Ginger garlic paste saute cheyali.
Coriander powder, chili powder, turmeric, salt veyali.
Tomato paste or finely chopped tomatoes fry cheyeali.
Then peanut powder veyali She use to add sesame seeds powder also, once in a while.
Masala anta baaga cook ayyaka, fried karela vesi koncham sepu cook cheyali.
Serve it with rice.
Deeniki oil baaga nee padutadhi but tastes good.
Sometimes she use to grind all the ingredients except kakarkaya and then saute it in oil. onion, tomato, peanuts, sesame seeds if using, coriander powder, salt, chili powder ani grind chesi, oil loo sautee cheyali. Onion smell poyaka, fried kakarkaya pieces veyali.
