Tomato Pachadi

Pedda tomatoes 4 teskunna
Oka 5 spoons oil lo tomato mukkalu vesi Sim to medium lo pettali , antha daggara padi oil separate avuthu untundhi , meanwhile aavalu menthulu vidi ga dry roast chesi powder chesi pettukovali , Salt , chilli powder , oka two spoons aavapindi vesthe one spoon menthi pindi ( atu itu ga adjust chesko) , ippudu inko pan lo oil lo aavalu and inguva vesi indulo popu petteyali , anthe awesome tasty Pachadi ready

Mirchi Bajji

Nenu anni andaaz ga vestha . So will tell you approx measurements

For the batter :
Senaga pindi 1 cup
Biyyam pindi 1/4 cup ( optional)
Baking soda 2 pinch
Ajwain seeds 1/2 spoon
dhaniya powder 1/2 spoon( optional)
Chilli powder - less than 1/4 spoon ( optional)
salt as needed
Water as needed . Batter shud not be runny and not too thick too . Meeku idea unde untadi kada .

For the stuffing :
1/4-1/2 tbsp ajwain seeds
One lemon size tamarind soaked
1/2 spoon senagapindi ( optional)
First make a powder of ajwain seeds and grind it along with the soaked tamarind and the flour & salt
Slit the chillies and take of the seeds unless you like them very spicyyy tongue emoticon
Now stuff the mixture and dip them in the batter and deep fry smile emoticon anthe vedi vedi mirchi bajji ready 😋😋😋

Btw paina optional ani mention chesinavi naaku personal ga ala taste nachuthundhi kabatti vestha .bMeeru kavalante skip cheseyochu and plz adjust the measurements as u like coz naaku measure chesi vese alavaatu ledu .

Bread Rolls

3 cups maida
1 1/4 tsp yeast (used fast raising yeast)
2 tsp sugar
1 tsp salt
1 1/2 tbsp oil (I used sunflower, can use butter as well)
1 1/2 cups warm water

Warm water loo sugar, salt and yeast mix chesi 10 mins yeast foam ayyevaruku wait chesi dough loo mix chesi baagaa smooth ayyevaruku knead cheyyalee... Oil koodaa vesi knead cheyyalee mallee... Extra kneading doesn't hurt smile emoticon 1 hour dough double ayyevaruku wet paper towel thoo cover chesi warm place loo unchaalee... Then dough puff ayyakaa punch chesi air teeseyyalee... Now shape them as needed and leave on the baking tray covered with wet paper towel... 20 mins ayyesariki they will raise again appudu paina milk wash(to get the shine) chesi 400 F loo 20 mins bake chesesthee done... Bayataki teesi butter apply chesi cooling rack meeda pedithee they will turn soft in 5 or 10 mins

Same dough ni loaf pan loo pedithee we will get a white bread loaf, shape cheseppudu emanna filling pettukunte u will get different types of filled buns... Alternatively if u mix any flavors like Italian seasoning / chopped pickled jalapeños / crushed red pepper flakes then it will become savory bread

Maida 1 cup
Rice flour 1/2 cup
Sooji/upma ravva 1/4 cup
Onion 1 (finely diced into small cubes)
Yogurt 2 cups
Chillies 2 to 3 (cut into thin circles)
Salt as required
Baking soda pinch
Oil 2 to 3 cups

Procedure:

• Take a deep bowl and mix maida,rice flour and sooji ravva,onion
• Add chillies and salt according to your taste also add pinch of baking soda.
• Add the yogurt to the above mixture until you get a thick batter.Mix it well to avoid lumps.
• Keep it aside for one hour so that the mixture will absorb the yogurt well.
• Take batter and keep dropping the small quantities of it into hot oil gently.
• Let them fry until golden brown
• Serve hot with finely cut corainder.

Tomato Bath

nenu measurements cheppalenu...nenu anni edho ala vestha ...but process idhigo.....mixed vegetables kod add cheyyachu...kaani K ki ishtam ledhu..so nenu veyyaledhu
1. Dry roast sooji rava
2 Keep a thick bottomed pan on the stove and add little oil. When it gets hot, add mustard seeds, cumin seeds urad dal and channa dal, curry leaves and cashew nuts for tempering.
3. After they get fried add chopped onions and green chilies.
4. Saute the onion and green chillies for about 3-4 minutes.
5. Add chopped tomoatoes and cook for another 3-4 min.
6. Add hot water and let it boil and add salt
7. Add roasted sooji and keep stirring continuously till it gets cooked.
8. Then switch off the stove and add freshly chopped coriander leaves and some ghee/butter to the tomato bhath. Enjoy!

I baked these few days ago it was a nice snack to munch on. 1/2 all purpose flour and 1/2 gram flour tho. And it is baked. Nenu konchem spicy chesa, spicy ante manchiga spicy ga ne vundi.. Use 1/2 tsp. chili powder or even less if you are giving it to Krish. pindi loo water poyaka mundu konchem taste chesi adjust chili pwd accordingly. Here is the recipe.
You need not grease it. Nenu aluminum foil tho baking sheet line chesa. Cleanup is easy and it also did not stick to the pan.

Baked Ragi Jonna Pindi Muruku

Raagi 1 cup, Jonna pindi 1 cup; 2 tbsp; 2 tbsp senaga pindi; nuvvulu vamu salt. ivanni mix chesi 1 tbsp ghee add chesanu. then i added yogurt and water to make it a dough. baga knead chesi.. Muruku parchment paper meeda vesukuni bake chesanu. baked it @ 350F for 30 mins. madyalo turn chesanu. but i think 20- 25 mins should be enough.

recipe:potols two sides motikalu cut chesi then madyalo cut chesi seeds teeseyali nd put it a side,stuffing mix: besan,karam,salt,vv tiny chopped onions spoon oil vesi anni mix chesi danni stuff cheyali. now pressure cook cheyali. tine mundu popu lo fry cheyali lik roast.yummy stuffed potols ready. njoy with rice

Microwave Spicy Tofu Salad

These are approximate measures.. type chestu approximate quantity rasanu.. I might have added more spice too, as it was very spicy and did not need to add any dressing to the salad

1 pack extra firm tofu (cut into 32 cubes)
1 tsp. chili powder
1 tsp. ginger garlic paste
1/2 tsp. garam masala
1/2 tsp. tandoori powder or tikka masala forgot what i used, i think used tandoori masala 
little bit of lime juice
salt
1 - 2 tbsp. oil

Mix all the ingredients and marinate for 30 - 60 minutes. Taste the tofu and adjust seasoning according to your taste
Arrange tofu in a micorwave safe plate and microwave for 2 minutes. Flip the tofu and microwave for another 2 minutes. Either flip or toss the tofu and bake for another 3 - 4 minutes tossing them every 1 1/2 minutes. Total microwave time is 6 - 8 minutes.

For salad, some lettuce, carrots, cucumbers, red onions or veggies of your choice. Mix all teh veggies, ad the tofu and drizzle some extra virgin olive oil. My tofu was quite spicy so I did not use any dressing or vinaigrette for the salad. 

I once tried this tofu with cubes of firm tofu, that is precut tofu cubes. Those cubes were quite small and microwaved for 3 - 4 minutes turning the pieces every 1 1/2 minutes.

Dumpala Karam

Potatoes ---cut them into equal pieces (not too small) and par boil them for 7-8 mins with salt ...drain and let cool , add g-g paste, finely chopped green chillies, finely chopped curryleaves, finely chopped cilantro (around a tsp), finely chopped onion, karam, garammasala , dhaniya pwd , salt (little),pasupu, rice flour konchem, besan konchem, pinch of chaat masala mix them well with just enough water ( a couple of drops just so the mixture sticks to the aloo but doesnot cover it completely) and heat oil and deep fry till golden brown and meanwhile heat 1 tsp oil and fry chillies, curryleaves and add the fried potatoes and toss ...serve as is or with ketchup or with rice, rasam or sambar ...mast untadi
