Veg Quesadillas

Tortillas ..I use whole wheat ones
Mozzarella cheese
Capsicum , onion and tomato chala chinna chinna cubes cut cheyali...like manam raita Loki onions sannaga cut chestamu kada antha size lo...konchem oil lo onions capsicum oke sari cheyali and add crushed red pepper cook for 5 min on medium ...total cook avadu raw ne undali 50% and off the burner then add the tomatoes....tomatoes ekkuva cook avaddu cause filling dry ga unte better juicy ayi the quesadilla sariga raadu....meanwhile preparing the filling ....tortillas one side kalchi pettukovali....
Next kalchani side pan paina vesi e filling spread cheyali leaving the edges....then add the grated cheese more towards edges as it helps sticking...then inkoka tortilla paina pettali with raw side on the outer .....vedi ki cheese melt ayi two tortillas stick avthayi ..konchem press cheste ok chethi tho ....two sides kalcheste aa tarvatha pizza cutter tho cut cheste done ....

Things to buy...
Frozen cheese ravioli
Ragu or Prego or any pizza sauce
Boil frozen ravioli in water with little salt...first salt water boil chesi apudu ravioli vesi 10 min ala boil cheyali....then theesi water strainer lo petti....next little bit oil lo pizza sauce depending on taste , salt garlic powder , red crushed pepper vesi 5 min cook chesi ravioli vesi inkoka 5-10 min co ok cheyali med paina...anthe
And oil vesi sauce vese mundu choice of vegetables add cheyachu....palak bavuntundi

Aratikaya Masala Fry

First banana peel chesi,wash chesi,each banana ni 3 half’s ga cut cheyali tharavatha vadini long slices ga cut cheyali( I’ll post pic how it will look). avi cut chesukuni kunchem water 1/4 cup water posi oka whistle cooker peetali(you can also do it on stove) without cooker. tharavatha oka bowl lo kunchem tamarine juice(chinthapandu pulusu),salt and karam vesi mix cheyali ..tharavatha e pieces ki patinchali..kunchem marinate ayyaka oka pan meeda oil vesi e banana pieces vesi veyinchala (not deep fry) ala two sides fry cheyali.

For non veg girls e dish achu fish fry laga untudhi try it…Poornima I am not sure mee husband dheeni kosam chustunnaro ledho. But nenu ela chestha. If you still have doubts PM me. Nenu call chesi cheptha..I am very poor in explaining:(

Charu with homemade Charu Powder

already andaru cheppinattu unnaru kada rasam recipe nenu naa version postuta which I learnt from my mom. Amma charu/rasam ki chala mandi fans unnaru.

1st I make charu podi and store. It's made of 1cup turdal, 1cup dhaniyalu, 50 gms of jeera and black pepper, approx 20-25 red chillies. I use little more black pepper as I like the flavour. Dry them and powder little coarse.
Now take a lemon size tamarind and soak it in water and extract pulp. Add some more water to this. Water quantity varies according to the sourness of tamarind. Allow it to boil while u add diced tomatoes, salt, small piece of jaggery(optional), 2tsps of the powder, curry leaves and coriander. I usually don't add dal to my charu. If I add I'll add about 1cup of Tur dal boiled and the procedure is same but it'll be called pappu charu in our house. After it is boiled give it tempering with fenugreek seeds, jeera, mustard seeds and red chilly. If you like u can add hing orelse garlic and mix it to the charu. It's very tasty and is more like a clear soup😛
If you want to avoid tamarind u can do it completely with tomatoes or u can add dry/ fresh mango or just boil it without tamarind pulp and after u off the stove, add lime juice. All are equally tasty.

For sambar powder I also add fenugreek seeds about 3/4th cup and a fistful of channa dal and powder it. Then procedure is same like pappu charu except that we boil veggies and dal qty is more.

Radish Curry

Then in a pressure cooker add oil and add tempering. Then add slit chillies and sauté for some time. Then add chopped radish and soaked chana dal. Add required amount salt mix and then add quarter glass of water and pressure cook for 2 whistles. That is it u can eat it with roti or rice

Sakinalu

This is a lengthy procedure so make sure you are prepared for it
Soak 1 cup rice over night and drain the following morning and keep it aside for about 15 to 20 mins till the water drains off completely
Take small portions of rice and make them into fine powder
Sieve the milled flour and put the coarse bits back in jar again and try to make into fine powder
Put sesame seeds, butter (1 tsp), salt (as per your taste) and mix it with water. It should be soft than chapathi dough so that you can form strings/thick noodles kind of with your fingers (hope i am explaining it right)
lay a cotton cloth or towel (2 layers) and start making noddles and let it go around on the towel to make in form of sakinalu using three fingers. This is a lil tricky so please use very small portion to start with. This cant go into any machine to make muruku later.
If you want make a spicy version then add red chilli paste or peri peri sauce will also do the justice (I used pandu mirapakaya paste this time but last year amma was here and she tried peri peri and it tasted the same).
after you made all the round spirals on the cotton cloth. leave them to dry for about an hour and then start deep frying them.

No Sugar No Butter Bana Chocolate Chip Cake

Here is the recipe of no nsugar no butter banana chocolate chip recipe...these r quite moist muffins but very tasty n healthy. I had lot of ripe bananas so used most of them.

5 ripe bananas
1/3 cup butter or 1/3 cup vegetable oil
3/4cup sugar or no sugar
1 egg
1 tsp vanilla
1 tsp baking soda
Pinch of salt
1 1/2 cups of all purpose flour
1/2 semisweet chocolate chips
1 tsp ground cinnamon

In a large bowl mash the bananas. Add vanilla and ground cinnamon.
In another bowl mix the dry ingredients. Flour,salt,baking soda.
In one more small bowl whisk the egg with oil or butter. Add sugar if u want to. Add to the mashed bananas bowl.
Now combine the wet ingredients with the dry ingredients. Don't over mix it. Preheat the oven to 350...bake for 20 min. Let them cool completely before eating. Njoy.

Vegetable Soup

Vegetable Soup - this is a very easy soup and you can throw in any vegetable you like. I don't like store bought stocks so I use bouillon cubes. Maggi vi chinna cubes vastunai, each box has 20 cubes and those cubes are just perfect for when making a small pot of soup. I have seen only chicken and beef flavors. Vegetable flavor loo vastundo ledo teliyadu. But you can use any other brand or just use stock. There is the recipe...

Ingredients:
1 – 2 tsp. Oil
1 – 1 ½ tsp. Ginger Garlic Paste
4-5 Button mushrooms diced
1 small – medium Carrot sliced
4-6 Green Beans cut into 1 – 1 ½” pieces
1 tender Celery sliced
Handful of Moong Beans Sprouts or canned White Beans (opt)
1 small Tomato chopped or 1 – 2 tbsp. tomato Sauce (opt. I did not use it yesterday)
3-5 small Cauliflower Florets cut into small pieces (I did not use it yesterday)
Handful of Kale or Spinach chopped (I used kale yesterday)
1/8 tsp. Pepper Powder (adjust to taste)
¼ tsp Salt (adjust to taste)
1 mini cube Bouillon
2 cups Water
Cilantro chopped

In a pan heat oil and sauté ginger garlic paste for few seconds.
Add all the vegetables except sprouts, kale/spinach & cilantro. Sauté the vegetables for 2-3 minutes until veggies are lightly roasted. Add tomato sauce, salt & pepper and saute for few seconds. If using tomato, cook for a minute until tomato is soft and mushy.
Add water, bouillon and bring the water to a boil. Let it boil for a minute or 2 until the vegetables are cooked, especially cauliflower if using.
Add sprouts and kale/spinach. If using kale cook for 2-3 minutes until kale is cooked. If using spinach cook for 1 – 1 ½ minutes. Add cilantro turn of the heat and serve.

Again, you can use stock instead of water+bouillon.
Tomato is optional usually do not added it as I usually add tomato to almost all the curries I make. So I leave it out in the soup. If there is any left over canned tomato sauce, I add a little.
Also you can add vegetables to your preference. I usually add lots of vegetables as it is filling.
Sometimes I also add some diced onions along with other vegetables

nenu appudappudu ila chesthanu...chicken marinate chesi pettukovali with salt,kaaram,pasupu..Pressure cooker lo oil vesi tarvatha masala dinusulu (aku,lavangam,puvvu,chekka etc) veyali...avi manchi smell vachaka add onions ..onions konchem fry chesaka ginger+garlic paste vesi pachi vasana poye varuku fry cheyali...then add tomatoes ...very less quantity or u can skip if u dont like also...avi mushy ayye varuku fry cheyali..before adding tomatoes i add mint+corinader leaves to onions sometimes....next add chicken...high lo pettali 2 mins...water vachaka tagginchi avi half cook ayyaka add some curd...di kuda optional appudappudu vestha....then add rice+water and pressure cook for 2 whistles..if its basmati then chicken almost cook ayyaka vesi 2whistles vachaka pressure tesesthanu..

next time also add pwd gasagasalu and kobbari I also add curry leaves.. and instead of curd i add 1/2 cup of kobbari palu

Hotel Sambar

hotel sambhar for idli/dosa or for rice? Idli/dosa ki i do a different sambhar...mukkalu veykunda chesta and sambhar powder apatiki appudu fry chesi grind chesta.

For rice ayithey this is how I do...long but the only way my husband likes it.
Pappu boil cheskunta. I blend this pappu with tomatoes. Cooker lo again ee pappu tomato paste, onions, veggies, sambhar powder( i use ambica or mtr), coriander powder, tamarind juice, papusu, green chillies and a lil bellam. Exact oka whistle raanista.
Poppu lo avalu, jeera, curry leaves, red chilly, crushed pepper, grated coconut, a spoon of sambhar powder, mentulu podi and kothimeer...i also add ghee in the tadka. Ee poppu esi oka uduku raaninchi I turn off the flame. Add some more kothimeer.
Hotel sambhar atleast TN vepu coconut vuntadi...my mom told me to pulse sambhar powder n coconut n add but nenu ila vesesta...
