Apple Cake

FRESH APPLE CAKE

1c. cooking oil
2 c. sugar
3 c. flour
2 eggs
1 c. chopped nuts
1 tsp. soda
2 tsp. vanilla flavoring
1/2 tsp. salt
3 c. chopped fresh apples, peeled


Combine cooking oil and sugar. Add well beaten eggs and vanilla. Measure and sift together flour, salt and soda. Add dry ingredients to first mixture. Stir in chopped fresh apples and nuts and combine thoroughly with above ingredients.
Pour into tube or oblong 13"x9" pan and bake in 325 degree oven until done, approximately 65 minutes

I've made an eggless version of the apple cake/bread...here's the recipe
Super moist eggless apple bread

All purpose flour- 3 cups
Light brown sugar- 1 cup
Baking soda- 2 tsp
Baking powder-1 tsp
Cinnamon powder- 1 1/2 tsp
Salt-1/4 tsp
Apple, 1- chopped (lightly floured, so they don't sink to the bottom)
Apple, 2 - Grind to paste
Water-1/4 cup
Vegetable oil-3/4 cup
Vanilla essence- 2 tsp
Vinegar-2 tbsp
Raisins, 1/4 cup, lightly floured

1. Preheat oven to 330F
2. Mix all dry ingredients together.
3. Mix all wet ingredients along with apple and pear paste
4. Add to dry mixture and combine.
5. Add raisins and chopped apples
6. Pour into 2 loaf pans or a cake mould.
7. Sprinkle 1tsp of sugar on top (optional)
7. Bake for 1hr. Check in between, as it depends on the oven
8. Let it cool before you cut.

Bringing mango juice or pulp from India

Contributor: Gayathri Sadhu this my Aunt does this for my SIL... this is what she told me they make thick juice and they freeze it till the day of travel in a ziplock bag and then bring it here, once they come here they again freeze it for a day and then start using it... HTH!!! ya they brought it like that almost 2-3 times and its been good all the time and she was telling my mom to do it when she came... ensure that mangoes are ripe and the juice is thick!!! 2. Couscous Kichidi ~ Upma

I tried this recipe yesterday and every one liked it anduke posting for you all : couscous kichidi or upma (nenu names petadam lo chala bad chala options anipisthunayyi) or u can even call biryani Take a pan ,add oil and popu/talimpu and then add onions,chilis,tomatos,carrot,peas,potato and fry until they are golden brown ,add lsalt according to your taste and then couscous (1 cup) and roast it for a few mins and then add water (1.5 cup) and keep the lid and let it cook for 10mins on medium flame. The couscous will pluff up (almost looks like cracked wheat when cooked) and then mix well and add little cilantro and you can even add lemon juice if u like. This almost tastes like upma(cracked wheat upma or goduma ravva upma) ..enjoy! You can also cook couscous separately in rice cooker or pot on stove with 1:1.5 ratio of couscous and water. Beerakaya Kobbari Pachadi

Ingredients

Beerakaya – 1 Large

Kobbari – half

Green chilies – 6-10 (depending on spice level)

Tamarind – Small lemon ball size

All tempering ingredients( Minapappu, Senaga pappu, avalu, jeera & curry leaves)

Procedure

1st beerakaya chekku teeyali

Then stove on chesi koncham oil vesi oil heat ayyaka beerakaya pieces_green chilies vesi fry cheyali

E lopu kobbari chippa pka half tesukuni china pieces kinda cut cheuskuni unchukovali

Blender lo 1st kobbari pieces grind cheyali mettaga

Then fry chesi pettukunna beerakaya+green chili pieces+tamarind+jeera+salt anni vesi grind cheyali

Last lo talimpu vesukuni pachadi baaga mix cheyali

(Fresh kobbari tho ne e chutney baguntundi )

Vadiyala Pulusu

pulusu vadiyalu deep fry chesi pettukovali
put talimpu in a pan then fry onions and green chillies karvepaku
then add little tamarind pulusu koncham chikaga
then add water salt turmeric and chilli pwd
add jaggery bring it to a boil and add vadiyalu fried
meeku nachina concisistency vachinaka u can turn it off
vadiyalu baga pulusu pichi pedhavi avuthayi adhi right time
to turn gas off
nenu ela chestha

Cashew Gravy

Cashew gravy i do like this....

Cashew full - 15 .... deep fry in oil and make paste..
Onions - 2..... deep fry and make paste using some oil....

i use paneer for this gravy......

talimpu lo masala items vesi fry ayina taravatha i add ginger garlic and add this mixture( In little water i add fine coriander powder, red chilli powder and salt).. once this mixture is fried i add onion paste and after few minutes i add cashew paste and wait until the gravy oozes out oil.. then add some water and paneer.....

this is how i do......

Quinoa Burger

Quinoa 1 cup ki 2cups water use chesi rice cooker lo cook cheyandi...hot ga vunappude add salt+grated ginger(or ginger garlic paste nenu only ginger add chesanu)+carrots(boiled)+peas(boiled)+cilantro+garam masala powder+tandoori masala(idhi optional but nenu add chesanu) ..anni bind chesi roundga vadalaga chesi dosa pan pina PAM olive oil spray chesi kalchandi until they turn golden brown and cripsy..

peas nenu frozen chesukoni microwave chesanu for 2mins..carrot strips laga grate chesi add chesanu...They tasted yummy and healthy and evetone liked them..hope you will like them too ..enjoy!

Khatta Dhokla

Jonnalu Chanegalu

Memu jonnalu & chanagalu kalipi gudalu/guggilu/sundal type loo chestaamu. Nenu ekuva cheyanu but my mom, cousins & aunts chestaaru. Baaguntai.

Soak jonnalu & brown or kala chana (you can substitute chana with red chori)over night. 1 cup jonnalu ki 1/4 - 1/2 cup chana use cheyali.. Deentlo jonnalu ekkuva use cheyali.
Pressure cook jonnalu. AT least10 whistles anna pettalu. Konacham ekkuva time kuda pattachu. Boil kala chana separately.

Take some oil in a pan and temper it with mustard, jeera, green chilies/dry chilies, onion and crushed garlic & turmeric.
Add cooked jonnalu & chanagalu and fry it for 5 minutes until it is cooked or water is evaporated. Don't forget salt. If you like garlic, sprinkle some garlic 2-3 minutes before turning off the heat. Garnish with cilantro and serve hot.

Koncham karam food istam aithey, you can sprinkle some karam/chili powder on time and serve it.
