Dondakaya Pachadi
Ingredients
Donkaya - 1/4th lb
Peanuts - half cup
Green chilies – 6-10 (depending on spice level)
Tamarind – Small lemon ball size
All tempering ingredients( Minapappu, Senaga pappu, avalu, jeera & curry leaves)
Procedure
1st pan lo palli fry chesukovali
Taruavta dondakaya pieces ga cut chesukuni pan lo koncham oil vesukuni fry chesukovali along with green chillies
Blender lo 1st palli grind chesukuni taruavat dondakaya pieces+ green chili pieces+tamarind+jeera+salt anni vesi grind cheyali
Last lo talimpu vesukuni pachadi baaga mix cheyali

rice- 1 cup soak in 1 cup curd- 4 hrs soak cheyali
- grind all together into smooth paste with jeera powder,ginger+green chilly
- allow it sit outside for 4-6 hrs..then add salt..
- make dosa with this batter..

- oka pan lo oil vesi talimpu vesi onions fry cheyali. then grated mango vesi fry cheyali.
- inko pan lo water+salt+green chillys slit chesi andulo aratikaya pieces vesi boil cheyali..
-cook ayina aratikaya pieces matrame above mango+onions tho kalipi koncham turmeric koncham red karam vesi fry cheyali.
- goes well with rice, roti..

easy version, frozen corn techhuko....vatini as per directions microwave chesi, koncham salt, pepper, little oil, chat masala add chesi mix cheseye anthey....

Baked Asparagus ~ Roasted Asparagus

Preheat the oven to 400 degrees F.
Break off the tough ends of the asparagus and, if they're thick, peel them. Place the asparagus on a sheet pan, drizzle with olive oil, then toss to coat the asparagus completely. Spread the asparagus in a single layer and sprinkle liberally with salt and pepper. Roast the asparagus for 15 to 20 minutes, until tender, but still crisp.

I do the same thing as above on stove top generally asparagus ki ekkuva sepu cooking avasaram ledhu so, microwave lo boil chesi frying pan lo nuvvu cheppinate chesta...above koncham different unnayi kadha felt like trying them once..
hey one more thing if u get Zaatar spice u can use that for granish it goes well with it..

Asparagus Chutney

I make chutney with asparagus... it tastes similar to beerakai pachadi...
1. take little oil in a pan, fry channa dhal, redchillies, 1 pearl onion, dhaniya seeds, cumin till the dhal is golden brown
2. Cut the asparagus till u reach the hard part...and discard the hard part(U will know it as u cut it coz it will be difficult for u to cut it)
3.Fry the cut asparagus in little oil in the pan till it turns brown
4.Grind evrything with little bit of tamarind, salt
5. Put some oil in pan, put some mustard seeds let it splutter, add curry leaves and pour it on chutney..
Goes well with Idli, dosa, Chapathi, rice....

This is how mom prepares the curry
Soak required amount of channa dal an hour prior to the preparation.
Chop cabbage and tomatoes and keep them separately
in a pan or pressure cooker (your preference) add do seasoning and add cabbage, channa dal, ginger garlic paste and let this cook till cabbage is done or if its pressure cooker leave it until one whistle.
then add chopped tomatoes, red chilli powder, salt, a little bit of salt. mix it well and let the chilli and salt taste get incorporate with the rest.
you can also add dessicated coconut at the end.

India lo unnappudu pinni rose petals and rose water tho chesedi...I use rose syrup here adi Indian store lo dorukutundi...
I make 2 versions of rose milk
Pinni's recipe :
1 cup milk(boiled and chilled)
10-12 blanched almonds (she doesnot use almonds but okasari Satish chepparu it'll be better with almonds ani)
1/2 cup rose petals
1 tbsp rose water
honey or sugar
ice
grind almonds,rose petals, rose water, honey or sugar, milk and blend till smooth. Add 2 cubes of ice and blend till ice gets coarse.
Serve chilled.

blend 1 scoop of vanilla icecream with a milk ,rose syrup, sugar or honey and serve chilled.
