Cauliflower Tomato Shorva

Ingredients:
Oil
2 cardamom (opt)
1 clove (opt)
1 small onion chopped
1 tbsp ginger garlic paste
2 green chilies
1 tbsp coriander powder
1 tsp chili pwd (adjust to taste)
salt to taste
turmeric powder
1 small head of cauliflower washed cut into small florets
2 medium sized tomatoes (i use vine ripe tomatoes)
2 - 4 tbsp yogurt (depends on how much gravy you want)
cilantro to garnish

Method:
-- Heat oil in a pan and add cardamom & cloves if using. Then add onion and saute until translucent.
-- Add green chilies and ginger garlic paste and saute for a minute until raw ginger smell is gone.
-- Add coriander pwd, chili pwd, salt, turmeric and mix well.
-- Add cauliflower, mix well so that spices coat the florets.
-- On medium heat, cover and cook for 3-4 minutes. Cauliflower should well roasted in spices..
-- Add tomato & yogurt and mix well. Make sure yogurt doesn't curdle. Cover the pan and continue to cook on medium heat until tomatoes are soft and mushy.
-- Add water, about 3/4 - 1 cup, cover and bring to a boil.
-- Let it boil for few minutes. Make sure cauliflower is cooked, it should be by this time. Turn off the heat.. sprinkle cilantro.
-- Serve with rice or roti.

Tips:
if the consistency of the gravy is too think, add little yogurt and cook for few more minutes.. OR add some coriander pwd OR coconut powder... Actually coconut pwd vestee baaguntundhi.. I normally don;t use cocnut that much in my cooking, kaani deentlo vestee, koncham flavor vastundhi
